MANDAZI RECIPE BY TASTY
Here's what you need: all-purpose flour, sugar, baking powder, ground cardamom, kosher salt, egg, coconut milk, oil

Steps:
- In a large bowl, whisk together the flour, sugar, baking powder, cardamom, and salt. Make a well in the center, then use a rubber spatula to mix in the egg and coconut milk until the dough comes together.
- Turn the dough out onto a floured surface and knead until smooth. Dive the dough into 4 portions. Roll out 1 portion of dough into a circle about ¼-inch (6 ml) thick. Cut into 8 triangles. Repeat with the remaining dough portions.
- Heat the oil in a large pot until it reaches 350˚F (180˚C).
- Working in batches, fry the mandazi for 2-3 minutes per side, until golden brown. Drain on paper towels. Serve as breakfast or a snack with 5. Kenyan coffee or chai.

MOMBASA CHICKEN
This is a very easy recipe that is FULL of flavor. Since each piece of chicken is cooked in it's own aluminum foil pouch the spices can be increased or decreased to suit your individual taste, which is great for the little ones. This is great over rice or noodles.

Steps:
- Preheat oven to 425.
- Place each thigh on a piece of aluminum foil (large enough to fold up & over the chicken so it won't leak).
- Dust each piece with about 1/8 teaspoon of the salt, pepper & garlic powder. Add a pinch of curry & cyan pepper. Top each piece of chicken with 1 teaspoon molases & 1 1/2 teaspoon soy sauce.
- Fold up the aluminum foil & place in a foil lined pan (just in case one leaks).
- Bake for 1 hour.

Steps:
- Dry chicken pieces with paper towels.
- Combine curry powder & salt & rub well into chicken until evenly coated.
- Beat egg & cream together. Combine flour & sesame seeds.
- Dip chicken pieces in egg mixture and then into flour mixture.
- Place in a baking dish lined with foil. Brush chicken lightly with melted butter & bake at 180.C for about 45 mins brushing again with butter halfway through cooking time.

- In a deep skillet over medium heat, add the olive oil until it heats up. Add the onions, and cook, stirring frequently until soft and starting to caramelize, 8-10 minutes.
- Add the shredded chicken, the toasted nuts, and all the spices. Stir to combine, then remove from the heat. Let mixture cool slightly 5 minutes or so.
- Fill each sambosa wrapper with a tbsp of mixture on the bottom corner, then fold the corner of the sambosa up and over the filling to the other side, to make a triangle. Keep folding this triangle over all the way up the top (check the video at the bottom of this recipe card to see how). Mix together the flour and water to form a thick paste, and seal the ends of the sambosa to prevent them from opening up while frying.
- Place vegetable oil in a skillet, about 2 inches deep and heat on medium high heat. Once hot enough, add the sambosa and fry for around 2 minutes a side until golden brown. Remove to a paper towel lined plate to absorb some of the excess oil, then enjoy warm, optionally with yogurt to dip in.
