Chicken, Chickpea, and Pesto Salad image

Shredded cooked chicken breasts and chickpeas make this pesto salad hearty enough for a main course.

2 shredded cooked chicken breast halves
1/2 large English cucumber, thinly sliced
2 celery stalks, thinly sliced
1 can (15 ounces) chickpeas, rinsed and drained
1/3 cup Basic Basil Pesto
Squeeze of lemon
Coarse salt and ground pepper

Steps:

  • In a bowl, mix together chicken, cucumber, celery, and chickpeas. Add Basic Basil Pesto and a squeeze of lemon. Season with salt and pepper.

This is a salad using raw cauliflower. Please feel free to use different ingredients for mixing in with the cauliflower, such as red/green peppers, edamame, tofu, different types of beans, corn, and red onion. Number Of Ingredients 6

1 head cauliflower
2 tomatoes
4 green onions, chopped
1 (15 ounce) can garbanzo beans, beans, rinsed and drained (chickpea, or you can cook on your own)
1/2-3/4 cup pesto sauce (home-made or store-bought)
black pepper

Steps:

  • Cut cauliflower into florets. Add them to the food processor and process until finely ground.
  • Dice one tomato and slice another tomato for garnishing.
  • In a large bowl, place the processed cauliflower, diced tomato, green onion, and garbanzo beans and mix.
  • Add 1/2 cup pesto and mix. Taste and add more pesto if needed. Season with black pepper.
  • Arrange the salad on a plate with tomato slices. Infuse love and serve!

50g couscous
2 tbsp pesto
2 tbsp fat-free yogurt
2 cooked skinless chicken breasts , shredded, or 200g leftover roast chicken, shredded
½ small bunch of basil , leaves picked and torn, plus a few small leaves to serve
½ cucumber , chopped
2 sundried tomatoes in oil, drained and sliced
2 Little Gem lettuces , leaves separated
2 tsp toasted pine nuts

Steps:

  • Put the couscous in a large heatproof bowl and cover with 100ml boiling water. Stir in 1 tbsp pesto. Cover and leave for 8 mins.
  • Fluff the couscous with a fork, then stir in the rest of the pesto, the yogurt and some seasoning. Toss in the chicken, basil, cucumber and tomatoes.
  • Spoon the couscous mix into the lettuce leaves and eat with your fingers, or serve over the lettuce like a salad. Scatter over the pine nuts and more basil before serving.
