1 lb boneless skinless chicken breasts
4 oz pepper jack cheese shredded (you can use up to 6 oz)
1 c frozen spinach thawed and drained (you can also use fresh cooked spinach)
2 tbsp olive oil
1 tbsp breadcrumbs (Italian style is good)
Sea salt to taste
Freshly ground black pepper to taste
Lots of toothpicks

Steps:

  • Preheat oven to 350 degrees Flatten the chicken to 1/4-inch thickness. In a medium bowl, combine the pepper jack cheese, spinach, salt and pepper. Combine the seasoning and breadcrumbs together in a small bowl. Spoon about 1/4 c of the spinach mixture onto each chicken breast. Roll each chicken breast tightly and fasten the seams with several toothpicks. This part requires a tiny bit of skill and I typically use about 8 toothpicks in each roll to ensure none of the filling seeps out. Be sure to count how many total toothpicks were used! Brush each chicken breast with the olive oil. Sprinkle the seasoning mixture evenly over all. Sprinkle any remaining spinach and cheese on top of chicken (optional). Place the chicken seam-side up onto a tin foil-lined baking sheet (for easy cleanup). Bake for 35 to 40 minutes, or until chicken is cooked through. Remove the toothpicks before serving. Count to make sure you have removed every last toothpick. Serve whole or slice into medallions.

10 ounces frozen spinach, thawed and squeezed dry
One 12-ounce jar roasted red peppers, drained, patted dry and chopped
1/2 cup panko breadcrumbs
1/4 cup grated Parmesan
1/4 teaspoon smoked paprika
Kosher salt and freshly ground black pepper
4 small chicken breasts (about 8 ounces each)
2 tablespoon olive oil
1 shallot, grated or chopped
1/4 cup dry white wine
1 cup chicken broth
1 tablespoon unsalted butter, cold
Chopped fresh parsley, for garnish

Steps:

  • Preheat the oven to 425 degrees F.
  • Mix together the spinach, peppers, breadcrumbs, Parmesan, smoked paprika, 1/4 teaspoon salt and a few grinds of pepper in a small bowl. Set aside.
  • Butterfly the chicken: Holding your knife parallel to the cutting board, slice a breast through the middle, stopping about 1/2-inch short of the other side. Open the breast up like a book and flatten it with your palm. Place between two pieces of plastic wrap and pound with a meat mallet to a little less than 1/2-inch thick. Repeat with the remaining breasts.
  • Divide the spinach mixture into four portions and place a portion in the center of each breast. Roll the breasts tightly around the filling and secure with kitchen twine. Sprinkle all over with salt and pepper.
  • Heat the oil in a large, oven-safe skillet over medium-high heat. Add the roll-ups and cook until golden brown on all sides, about 6 minutes. Transfer the skillet to the oven and cook until an instant-read thermometer inserted into the center of the filling registers 160 degrees F, another 6 to 8 minutes.
  • Transfer the roll-ups to a cutting board and cover loosely with foil. Return the skillet to the stovetop over medium heat (be careful, the handle will be very hot). Add the shallots and cook until softened, stirring, about 1 minute. Add the wine and boil until reduced by half, 1 to 2 minutes. Add the chicken broth; boil until reduced by half, about 3 minutes. Off the heat, whisk in the butter and season with salt and pepper.
  • Cut away the twine and slice the chicken into 1-inch rounds. Serve with the pan sauce and sprinkle with parsley.

1 lb boneless, skinless chicken breasts
4-6 oz pepper jack cheese, shredded
1 c frozen frozen spinach thawed and drained
2 Tbsp olive oil
1 Tbsp bread crumbs
sea salt to taste
cajun seasoning to taste
black pepper to taste
lots of tooth picks (secure breast together after stuffing)

Steps:

  • 1. Preheat oven to (350•)
  • 2. Flatten chicken breast to 1/4 inch thickness
  • 3. In a medium bowl combine pepper jack cheese, spinach, salt and pepper.
  • 4. In a small bowl combine Cajun seasoning and bread crumbs.
  • 5. Place a 1/4 cup spinach mixture onto each chicken breasts. Roll each chicken breast tightly and fasten with several tooth picks. You may need to use 8 tooth picks for each breast to ensure none of the filling seeps out. Be sure to keep track of how many you use. So you take them all out after cooking.
  • 6. Brush each breast with olive oil and sprinkle Cajun seasoning mixture evenly all over. Sprinkle any leftover spinach cheese mixture on top.(optional)
  • 7. Place chicken seam side up onto a tin foil lined baking sheet ( for easy clean up). Bake for 35 to 40 minutes or until chicken is cooked through.
  • 8. Remove the tooth picks before serving. Count to make sure you have removed every last toothpick! Serve whole or slice into medallions

Black Pepper as per your taste.
Toothpicks.

Steps:

  • Preheat the oven at about 350 degrees F.
  • With the help of a Meat Mallet, flatten the chicken up to ¼ inches thickness.
  • Use a medium-sized mixing bowl, add Spinach, Pepper, Pepper Jack Cheese, and Salt. Mix them well.
  • Mix Bread-crumps and Cajun Seasoning in a small bowl.
  • This step can be a little technical, and some way finds it hard, but do not worry, try it out! Spoon small amounts of the mixture (Cheese/Spinach) onto the Chicken Breast. You can start from the smallest end, then tightly roll the Chicken Breast with the help of Toothpicks to keep the Chicken closed.
