These sophisticated sandwiches are familiar enough for children. The chicken can be marinated tonight and broiled for dinner tomorrow. Pair it with a crunchy salad for a pleasant contrast between hot and cold.

1/4 cup white-wine vinegar
2 tablespoons Dijon mustard
2 garlic cloves, chopped
Coarse salt and ground pepper
4 boneless, skinless chicken breast halves (6 to 8 ounces each), split horizontally
1 baguette (about 20 inches), split horizontally, then cut in half
1/4 cup apricot preserves
4 ounces thinly sliced deli ham
4 ounces white cheddar cheese, grated (1 cup)

Steps:

  • Heat broiler, with rack set 4 inches from heat. Line a rimmed baking sheet with aluminum foil. In a shallow dish or resealable plastic bag, combine vinegar, mustard, garlic, 1 teaspoon salt, and 1/4 teaspoon pepper; add chicken, and turn to coat. Marinate at room temperature for 10 minutes (or cover and refrigerate in marinade up to 24 hours).
  • Lift chicken from marinade, and place on prepared baking sheet; broil (without turning) until opaque throughout. Transfer chicken to a work surface; discard pan juices from baking sheet.
  • Place baguette pieces on baking sheet, cut side up; dividing evenly, spread with apricot preserves, and layer with chicken, ham, and then cheese. Broil until cheese is melted, 4 to 6 minutes.

1/2 cup white wine vinegar
4 teaspoons granulated sugar
Kosher salt
1 red onion, thinly sliced
1 rotisserie chicken
1 cup mayonnaise
1 tablespoon garlic powder
1 tablespoon onion powder
1/2 lemon
Freshly ground black pepper
1 stalk celery, diced
3 ciabatta rolls
1 tablespoon olive oil
1 cup Cheddar cheese, grated

Steps:

  • Add the vinegar, sugar, 2 teaspoons of kosher salt and 1 cup water to a small saucepan and cook over medium-high heat until the liquid simmers and the sugar dissolves, about 5 minutes.
  • Put the thinly sliced red onion in a medium bowl, add the pickling liquid and set aside.
  • Shred the white and dark meat of the rotisserie chicken using two forks.
  • Put the shredded chicken in a food processor and pulse until ground.
  • Combine the mayonnaise, garlic powder and onion powder in a large bowl. Squeeze the juice from the 1/2 lemon into the mixture and season with salt and pepper.
  • Stir in the ground chicken and diced celery. Trust your taste buds and add more spices, salt, pepper or lemon juice, if needed.
  • Preheat the broiler.
  • Halve the ciabatta rolls with a serrated knife and put them on a baking sheet. Brush both sides of the bread with the olive oil and cook until golden brown, 3 to 5 minutes.
  • Remove the ciabatta rolls from the broiler.
  • Evenly divide the chicken salad between the rolls. Top with the grated Cheddar cheese and bake until the cheese melts, 1 to 2 minutes.
  • Top the sandwiches with the pickled onions and serve.
  • Enjoy.

Being a Midwesterner born and bred, I (Heather) have had more than my fair share of meatloaf. As a child, I ordered open-faced meatloaf sandwiches every single time I went to my grandparents' diner. My grandpa said it was going to come out of my ears! :-) This recipe from Food & Wine magazine (Feb 1989, p. 131-132)is by far my favorite. The flavors are well balanced, and the oats redeem this fat-laden dish with a whole grain.

3 tablespoons unsalted butter (I use olive oil, can try half of each)
1 large onion, finely diced
1 medium green bell pepper, finely diced
1 large celery rib, finely diced
1 teaspoon thyme
2 lbs lean ground beef, preferably sirloin
1/2 cup rolled oats
2/3 cup ketchup
2 eggs, beaten
2 teaspoons salt (I omit this)
1 1/2 teaspoons fresh ground pepper
3 slices bacon, halved crosswise

Steps:

  • In a large skillet, melt the butter over moderate heat. Add the onion, green pepper, celery, and thyme. Reduce the heat to low; cook covered, stirring one or twice, until the vegetables are very soft (about 20 minutes). Remove from heat; cool to room temperature.
  • Preheat oven to 350°F In a large bowl, combine cooked vegetables and beef. Add oats, 1/3 cup ketchup, eggs, salt, and pepper; mix well. Spoon the meat mixture into a large shallow baking dish. Form the meat into a flat loaf about 2 inches high and smooth the top with the back of a spoon. Spread the remaining 1/3 cup ketchup over the loaf; arrange the bacon strips on top.
  • Bake the meatloaf for 1 hour or until it is just cooked through and shows no trace of pink. (A thermometer will register 145°F in the center of the loaf). Let the meatloaf stand for about 10 minutes before slicing and serving.
  • NOTES: For my large family, I double the recipe and increase cooking time to approximately 1-1/2 hours. A dash of Worcestershire sauce or Pick-A-Pepa kicks up the flavor nicely. You can also substitute turkey bacon, or omit the bacon and add a dash of liquid smoke. Using tomato paste on top of the meatloaf instead of ketchup adds a tangy flavor.

1 large sweet onion, sliced
1 cup fat-free mayonnaise
1/2 cup crumbled blue cheese

1 pound boneless skinless chicken breasts, grilled and sliced
1 cup shredded part-skim mozzarella cheese

Steps:

  • Cut bread into eight 1-in. slices and toast slices. Meanwhile, in a large nonstick skillet coated with cooking spray, saute mushrooms and onion for 15-20 minutes or until onion is tender and golden brown; set aside., In a small bowl, combine the mayonnaise, blue cheese and pepper. Spread blue cheese mixture over each bread slice. Top with chicken, mushroom mixture and mozzarella cheese., Broil 4-6 in. from the heat for 3-4 minutes or until cheese is melted.

1 cup shredded cheddar cheese, divided
1/2 cup finely chopped onion

10 slices Italian bread (1/2 inch thick)
2 plum tomatoes, sliced

Steps:

4 boneless skinless chicken breast halves, pounded thin
8 slices bacon
1 small red onion, sliced
4 slices pumpernickel bread, toasted
4 teaspoons steak sauce, 4 oz
1 cup shredded cheddar cheese

Steps:

  • Cook bacon in large skillet over medium heat until crisp. Remove bacon; drain on paper towels. Reserve 1 tablespoon drippings in skillet.
  • Add onion; cook and stir 2 to 4 minutes or until tender. Remove onion from skillet.
  • Add chicken to skillet; cook 6 to 8 minutes on each side or until browned and no longer pink.
