Caesar Salad with Spicy Pancetta and Cornbread Croutons image

This recipe marks the first time I remember making something and feeling the essence of timing in cooking: the buttered dish, the preheated oven and the melted butter cooling slightly while I gathered and blended all the other ingredients. SO satisfying.

1 1/4 cups coarsely ground cornmeal
3/4 cup all-purpose flour
1/4 cup sugar
2 teaspoons baking powder
1 teaspoon kosher salt
1/2 teaspoon baking soda
1 cup buttermilk
1/3 cup whole milk
2 large eggs, lightly beaten
8 tablespoons unsalted butter, melted, plus 1 tablespoon for greasing the pan
1 1/2 tablespoons Dijon mustard
2 large cloves garlic, grated
Kosher salt and coarsely ground black pepper
1/2 cup lemon juice
1 tablespoon caper juice
2/3 cup olive oil
1/3 cup canola oil
3 anchovy fillets, finely chopped, plus 1/2 teaspoon anchovy oil, optional
Parmesan, for grating
3 heads romaine, outer leaves discarded, washed, dried and cut into 1-inch pieces
16 to 20 thin slices pancetta, cooked crispy like bacon
1/2 teaspoon cayenne pepper

Steps:

  • For the cornbread: Preheat the oven to 400 degrees F.
  • Whisk together the cornmeal, flour, sugar, baking powder, salt and baking soda in a large bowl. Whisk in the buttermilk, milk and eggs. Whisk in the melted butter.
  • Coat the sides and bottom of a 9-inch skillet with the remaining butter. Pour the batter into the skillet and bake until the center is firm and a cake tester or toothpick inserted in the center comes out clean, 20 to 25 minutes. Let cool. Cut half of the cornbread into cubes. (Devour the other half with butter and jam.)
  • For the dressing: Combine the mustard, garlic, a pinch salt and about 1 teaspoon coarsely ground pepper in a food processor. Pulse to blend. With the machine running, pour the lemon juice and caper juice into the mix. Slowly pour in the olive oil and then the canola oil. Transfer the dressing to a bowl. Taste for seasoning. Too lemony? Add more oil. Too oily, add more lemon. Stir in the anchovies, anchovy oil and a few tablespoons grated Parmesan. Refrigerate. (See Cook's Note.)
  • For the salad: Preheat the oven to 375 degrees F.
  • Spread the cornbread cubes on a baking sheet and bake until browned and toasty, 10 to 12 minutes.
  • Add about three quarters of the dressing to a large bowl and toss the romaine with the dressing. Grate some Parmesan over the leaves. Use a tea strainer or sifter to sprinkle the pancetta with an even, light layer of the cayenne. Top with salad with the pancetta and warm cornbread croutons and serve immediately.

I'm keeping this recipe here for safe-keeping! It was made with Pillsbury cornbread twists, which are now discontinued.

1/3 cup peanut oil
3 tablespoons cider vinegar
2 tablespoons egg substitute
2 tablespoons honey mustard
1/4 teaspoon pepper
4 ounces country ham, cut into 1/4-inch strips
1 tablespoon peanut oil
1 head romaine lettuce, torn
3/4 cup pecans, toasted and chopped
honeyed cornbread crouton (see ingredients below)

Steps:

  • Combine first 5 ingredients, and mix well with a wire whisk. Cover and chill an hour or more.
  • Cook ham in peanut oil in a skillet over medium high heat, stirring constantly, until browned. Drain on paper towels. Let Cool.
  • Combine lettuce and pecans in a large bowl, add dressing, tossing gently. Put ham strips on top and sprinkle with Honeyed Cornbread Croutons.

Italian Caesar Salad With Polenta Croutons image

Recipe courtesy Giada De Laurentis from Everyday Italian Show and the Episode: Italian Salads. We used this recipe for a Dr's meeting here and it was liked by all! I had printed copies of the recipe ready for those who wanted them. We used walnuts instead of the pignoli's (personal preference). There is a 2 hour cooling time or if wanted you can prepare the croutons and salad dressing the day before. Then it assembles easily and quickly! We used the polenta croutons in a salad of mixed greens and they were awesome! The Cubans make their polenta or harina de maiz with garlic and the chef snuck some in when preparing the croutons, turned out great!

3 garlic cloves
4 anchovy fillets, chopped
1/4 cup fresh lemon juice
1 tablespoon Dijon mustard
1/2 cup olive oil
salt, to taste
fresh ground black pepper, to taste
1 teaspoon olive oil
vegetable oil (for deep frying)
2 cups basic polenta
3 cups water
1 teaspoon salt
1 cup yellow cornmeal
2 tablespoons unsalted butter or 2 tablespoons unsalted margarine
3 small head romaine lettuce, halved lengthwise (or 2 large heads)
1/2 cup drained sun-dried tomato packed in oil, cut into thin strips
1/2 cup pine nuts, toasted (we used walnuts)
1 1/2 ounces shaved parmesan cheese

Steps:

  • MAKE THE POLENTA: (Make First).
  • Bring 3 cups of water to a boil in a heavy large saucepan.
  • Add salt.
  • Gradually whisk in the cornmeal.
  • Reduce the heat to low and cook until the mixture thickens and the cornmeal is tender, stirring often, about 12 to 15 minutes.
  • Turn off the heat.
  • Add the butter, and stir until melted.
  • Lightly oil a half sheet pan.
  • Transfer the hot polenta to the prepared baking dish, spreading evenly to 3/4-inch thick.
  • Refrigerate until cold and firm, about 2 hours.
  • MAKE THE DRESSING:.
  • Finely chop the garlic and anchovies in a food processor.
  • Blend in the lemon juice and mustard.
  • With the machine running, gradually blend in the oil.
  • Season the dressing, to taste, with salt and pepper.
  • TO MAKE CROUTONS:
  • Cut the polenta into 3/4-inch cubes.
  • Pat the polenta cubes dry with paper towels.
  • Add enough vegetable oil to a heavy large frying pan to come 1-inch up the sides of the pan.
  • Heat the oil over high heat.
  • Working in batches of 10, carefully add the polenta cubes to the oil 1 at a time and fry until golden brown, stirring to keep the cubes separate, about 2 minutes.
  • Using a slotted spoon, transfer the polenta croutons to a paper towel-lined plate to drain any excess oil.
  • (The dressing and polenta croutons can be prepared 1 day ahead up to this point.
  • Cover the dressing and polenta croutons separately and refrigerate.
  • Rewarm the polenta croutons on a baking sheet in a 350 degrees F oven before serving.)
  • MAKE THE SALAD:.
  • Prepare the barbecue for high heat or grill pan.
  • Grill the lettuce until lightly charred, about 2 minutes per side.
  • Cut the lettuce into bite-size pieces.
  • On a serving platter, mound the grilled chopped lettuce.
  • Decoratively scatter the sun-dried tomatoes and pine nuts.
  • Drizzle with enough dressing to evenly coat.
  • Sprinkle Parmesan and scatter the warm polenta croutons over and serve immediately.

Creole Caesar Salad With Corn Bread Croutons image

My love for okra began as a child and continues to border on just this side of insanity. I love okra. As a young boy, I would smuggle a brown bag full of fried okra into the movies as my better-than-popcorn snack. On Sunday nights, I was famous for making fried okra and creamed corn sandwiches with fresh slices of tomato and loads of Duke's mayonnaise. Years later, while studying in Italy, I realized that Italians also took leftover vegetables and made sandwiches. All you need are cold vegetables, bread, and mayo. The Caesar salad treatment makes this lighter than a sandwich, although if you want to give it more heft, you can add shrimp, chicken, or duck.

For the salad:
2 cups Fried Okra
2 heads romaine lettuce, leaves separated
1 cup cooked fresh corn kernels, chilled
2½ cups cubed corn bread, toasted
½ cup sliced grape tomatoes
½ cup sliced seedless cucumber
¼ cup sliced red onion
Creole Caesar Dressing (recipe follows)
For the Creole Caesar dressing:
⅔ cup extra-virgin olive oil
3 garlic cloves, peeled
2 tablespoons chopped onion
2 tablespoons red wine vinegar
½ roasted red bell pepper
1 tablespoon finely chopped celery
1 teaspoon light brown sugar
¼ teaspoon cayenne pepper
2 tablespoons mayonnaise
¼ cup grated Parmesan cheese
Salt and pepper

Steps:

  • For the salad:
  • Place half the fried okra in a large bowl and add the romaine, corn, corn bread, tomatoes, cucumber, and onion. Add the dressing and toss until well coated.
  • Divide the salad among six serving plates and top evenly with the remaining okra. Serve immediately.
  • For the Creole Caesar dressing:
  • In a small saucepan, combine the oil, garlic, and onion. Cook over low heat until the garlic and onion are golden and tender, about 15 minutes. Using a slotted spoon, transfer the garlic and onion to a food processor; reserve the oil.
  • Add the vinegar, bell pepper, celery, sugar, cayenne, mayonnaise, Parmesan, and a pinch each of salt and black pepper to the food processor. Pulse until smooth. With the machine running, add the oil in a thin stream and process until emulsified. Taste and season with salt and pepper. Use immediately or store in an airtight container in the refrigerator for up to 1 week.

An excellent way to use up leftover cornbread. These are great on salads and soups and are especially good on Tex-Mex recipes. They can be dressed up with your favorite seasonings if desired.

1 1/2 teaspoons lemon zest
1 teaspoon garlic powder
1/2 teaspoon pepper
1 1/2 teaspoons oregano
3 tablespoons parmesan cheese
1 teaspoon parsley
1 teaspoon season salt
1/2 cup olive oil
1/4 cup fresh lemon juice
2 loaves white bread, crusts removed. cut into 1/4-1/2 inch cubes

Steps:

  • Add lemon zest, garlic powder, pepper,oreagno, parmesan cheese, parsley season salt, olive oil, fresh lemon juice mix with stick blender or whisk together well.
  • In large bowl mix bread cubes with caeser dressing and mix well.
  • Bake on two large cookie sheets 350 for about 15-20 minutes or until toasted. Stirring every 5 minutes. Ovens may vary a bit so watch closely.
  • Cool compelety and store in air tight container.
  • I buy day old bread and put in freezer then when Im ready to make crutons I take the bread out for about an hour then cube it, makes it a little easier, but make sure they are to room temp and soft before adding the ceasar mix.
  • Save the crusts and toast in oven and make bread crumbs.
  • When Im making caesar salad I use this recipe and add 2-3 anchovy fillets. A nice change from creamy dressings.

1/2 head garlic, peeled
1 cup extra virgin olive oil
3/4 lb loaf sourdough bread, cubed
1 cup ghee

Steps:

  • Combine garlic and oil in a small saucepan.
  • Simmer until cloves are a light gold color, about 15 minutes.
  • Pour oil through a fine sieve, squeeze all juice from cloves, and then discard the solids.
  • Set garlic oil aside.
  • Preheat oven to 300 degrees F (150 degrees C).
  • Lightly oil a baking sheet.
  • Arrange bread cubes in a single layer on baking sheet.
  • Bake, turning bread cubes periodically, until lightly browned, about 20 minutes.
  • In a large, non-stick skillet, melt 1/3 cup ghee with 1/3 cup garlic oil over medium heat.
  • Cook toasted bread cubes in batches until light to medium golden brown, turning frequently.
  • Add more ghee and garlic oil as needed.
  • Turn out into basket lined with paper towels, and drain for about 20 minutes.
  • Note: For other uses- garden salad, soup, etcetera- you can add dried herbs of your choice, but if you do, don't use them with a Caesar salad -- too many flavour contrasts.
