OLD-FASHIONED APPLE DUMPLINGS
These are the ones my grandmother used to make: warm, flaky, apple-y sweet and drizzled with a sauce that bakes right with them. These are not difficult to make, just a little time-consuming. Serve warm with whipped cream or ice cream.

Steps:
- Preheat oven to 400 degrees F (200 degrees C). Butter a 9x13 inch pan.
- On a lightly floured surface, roll pastry into a large rectangle, about 24 by 16 inches. Cut into 6 square pieces. Place an apple on each pastry square with the cored opening facing upward. Cut butter into 8 pieces. Place 1 piece of butter in the opening of each apple; reserve remaining butter for sauce. Divide brown sugar between apples, poking some inside each cored opening and the rest around the base of each apple. Sprinkle cinnamon and nutmeg over the apples.
- With slightly wet fingertips, bring one corner of pastry square up to the top of the apple, then bring the opposite corner to the top and press together. Bring up the two remaining corners, and seal. Slightly pinch the dough at the sides to completely seal in the apple. Repeat with the remaining apples. Place in prepared baking dish.
- In a saucepan, combine water, white sugar, vanilla extract and reserved butter. Place over medium heat, and bring to a boil in a large saucepan. Boil for 5 minutes, or until sugar is dissolved. Carefully pour over dumplings.
- Bake in preheated oven for 50 to 60 minutes. Place each apple dumpling in a dessert bowl, and spoon some sauce over the top.

- For syrup, in a small saucepan, bring the water, sugar, cinnamon and nutmeg to a boil, stirring occasionally. Remove from the heat; add butter and food coloring if desired. Stir until butter is melted; set aside. , For dumplings, in a small bowl, combine the flour, baking powder and salt; cut in shortening until crumbly. Gradually add milk, tossing with a fork until dough forms a ball. , On a lightly floured surface, roll dough into an 18x12-in. rectangle. Cut into six squares. Place an apple in the center of each square. , Combine 2 teaspoons sugar, cinnamon and nutmeg; sprinkle over apples. Dot with butter. Bring up corners of pastry to center; pinch edges to seal. , Place in a greased 11x7-in. baking dish. Pour syrup over dumplings; sprinkle with remaining sugar. , Bake at 375° for 35 minutes or until pastry is golden brown and apples are tender. Serve warm with cream.

MAKEOVER MOM'S APPLE DUMPLINGS

Best of all, it's got half the calories of the original. It also has 60% less fat, saturated fat and cholesterol of Gina's Mom's recipe. And, inadvertently, as a bonus, Makeover Mom's Apple Dumplings are also much lower in sodium.

MAMA ROSE'S APPLE DUMPLINGS
Flaky biscuit dough is wrapped around crisp apples and topped with a rich butter sauce to create delicious cinnamon-spiced apple dumplings. My grandmother learned this recipe from her grandmother when canned biscuit dough was first invented. And our family has never stopped making it!

- Preheat the oven to 350 degrees F (175 degrees C). Spray a square baking pan with nonstick spray.
- Pour melted butter into a bowl; add sugar, flour, and cinnamon for dumplings and whisk until fully combined with the butter. Toss apples in mixture to coat; add 2 tablespoons warm water and mix to combine.
- Gently stretch out the biscuits one at a time until they're large enough to fit 1 tablespoon apple mixture. Be careful not to stretch them too thin, you don't want the dough to break.
- Add 1 heaping tablespoon apple mixture to the center of each stretched-out biscuit. Gently tuck the dough around the mixture to seal each dumpling into a ball shape.
- Line up the dumplings with the seal facing down. Use a sharp knife to slice a tiny slit into the top of each dumpling to allow them to vent while cooking.
- Bake in the preheated oven until nearly golden brown, 15 to 25 minutes.
- While dumplings are baking, melt butter for sauce in a medium saucepan over medium-low. Slowly sprinkle flour into the butter, whisking the entire time. Add water and stir to combine. Remove from heat. Whisk in sugar and vanilla extract.
- Remove dumplings from the oven and pour sauce on top. Continue to bake until the edges of the corner dumplings start to brown and pull away from the sides of the pan, 5 to 6 minutes more.

- Peel and core the apples. Place in a bowl and add the 1/2 cup of sugar and 1 1/2 teaspoons of cinnamon. Shake and coat well.
- I use 1/2 apple per dumpling. Place 1/2 apple in the center of each pie crust square. Dot with butter. (Please note, in the photos, I forgot to add the butter inside so I dotted the butter over the tops before going in the oven! ). Pull the corners of the crust up over the apples and seal at the top. I really smash it down and mold the crust around the apple. Place the dumplings into a deep baking dish.
- Boil together for 3 minutes all the syrup ingredients then immediately pour over and around the dumplings. Bake at 425 (F) for 40-45 minutes, until the apples are cooked through. I baste the dumplings with the syrup mixture a couple of times during the last half of the baking time, this creates a crispy, shiny texture of the pie dough.
