PEANUTTY SOMEN NOODLES WITH SHRIMP



Peanutty Somen Noodles with Shrimp image

Yield 4 servings (with leftover sauce for additional meals)

Number Of Ingredients 14

8 ounces uncooked somen noodles
3 cups reduced-sodium chicken broth
2 tablespoons reduced-sodium soy sauce
2 tablespoons creamy peanut butter
2 teaspoons sesame oil
1 teaspoon hot sauce
2 teaspoons peanut oil
1 tablespoon minced fresh ginger
3 cloves garlic, minced
1 green bell pepper, seeded and diced
1 pound medium shrimp, peeled and deveined
1/4 cup dry roasted peanuts, coarsely chopped
1/4 cup chopped scallions
Chopped cilantro leaves, for garnish, optional

Steps:

  • Cook noodles according to package directions.
  • Meanwhile, in a medium saucepan, combine chicken broth, soy sauce, peanut butter, sesame oil, and hot sauce. Whisk until blended and set pan over medium heat. Bring to a simmer. Simmer 10 minutes.
  • Heat peanut oil in a large skillet over medium heat. Add ginger and garlic and saute 2 minutes. Add bell pepper and saute 2 minutes. Add shrimp and saute 2 minutes. Add 1 cup of the peanut sauce sauce and simmer 2 minutes, until shrimp are bright pink and cooked through. Drain noodles and add to shrimp mixture. Toss to combine.
  • Transfer noodle mixture to 4 individual plates and top each serving with peanuts, scallions and cilantro, if desired.
  • Reserve remaining peanut sauce for additional meals such as Robin's Steak Salad with Peanut-lime Dressing, or Chicken Satay with Peanut Dipping Sauce.

SPICY VEGETARIAN PEANUT NOODLE SALAD



Spicy Vegetarian Peanut Noodle Salad image

2/3 cup creamy peanut butter
1 tablespoon sesame oil
1/3 cup rice or red wine vinegar
1 tablespoon red chile flakes
1 tablespoon sugar
1 tablespoon Dijon mustard
1 tablespoon coarse ground coriander
2 tablespoons naturally brewed soy sauce
1/2 cup canola oil
1 pound spaghetti, cooked and refreshed
1 English cucumber, halved and 1/8-inch slices
1 red bell pepper, julienned
1 bunch scallions, sliced
1/2 cup chopped roasted (salted) peanuts for garnish

Steps:

  • In a bowl, whisk together the peanut butter, sesame oil, vinegar, chile, sugar, Dijon, coriander and soy until smooth. Whisk in the canola oil and check for seasoning. In a large bowl, toss dressing with the pasta, cucumbers, bell pepper and scallions. Check for seasoning.
  • PLATING: Serve in large serving bowl. Garnish with peanuts.
  • BEVERAGE: Sparkling water with fresh lime and lemon.

VEGETABLE PEANUT NOODLES



Vegetable Peanut Noodles image

Yield 2 servings as a main dish

Number Of Ingredients 12

1 cup peanut butter, preferably unsweetened
1/2 to 1 cup boiling water
Juice of a lime
1 teaspoon cayenne pepper
1 tablespoon rice wine vinegar
Salt
8 ounces thin linguine
2 carrots, peeled and sliced
1 head broccoli, cut into bite size florets
1/2 cup chopped roasted peanuts
2 scallions, white and green parts thinly sliced
1/2 cup chopped cilantro

Steps:

  • In a medium bowl, whisk together the peanut butter and boiling water. Whisk in the lime juice, cayenne pepper and vinegar.
  • In large pot bring water to a boil and season with salt. Stir in linguine and cook for 5 minutes. Add carrots to boiling water and cook for 2 minutes. Stir in broccoli and cook for 4 more minutes. Drain linguine and vegetables and transfer to a large bowl. Pour peanut sauce over linguine and vegetables and toss to coat. Toss in peanuts and scallion and garnish with cilantro.

CRUNCHY NOODLE SALAD WITH CABBAGE AND PEANUT SAUCE



Crunchy Noodle Salad with Cabbage and Peanut Sauce image

1 head romaine lettuce, thinly shredded
1 head white cabbage, thinly shredded
2 carrots, thinly shredded
1 package of wonton skins, sliced thin and fried, reserve some for garnish
2 green onions, thinly sliced
1/2 cup smooth natural peanut butter
1/4 cup rice wine vinegar
1 tablespoon water
Pinch red pepper flakes
2 teaspoons toasted sesame oil
2 teaspoons soy sauce
1 teaspoon sugar
1/4 cup chopped cilantro leaves

Steps:

  • Combine lettuce, cabbage, carrots, crunchy noodles and green onions in a large bowl. Whisk together peanut butter, vinegar, water, pepper flakes, sesame oil, soy sauce, and sugar in a bowl. If the dressing is still too thick you may add more water. Toss the cabbage mixture with the peanut sauce and place on a large platter. Top with extra crunchy noodles and chopped cilantro.
