SOUR CREAM 'N' DILL CHICKEN

Sour Cream 'n' Dill Chicken image

With six children and two boarders, it seems I'm always cooking for a crowd. So, almost every recipe I use is doubled or tripled. This one is an updated version of the Sunday dinner my mother would have prepared. You can easily get it ready Sunday morning and let it cook while you're away at church. -Rebekah Brown, Three Hills, Alberta

SECRET RECIPE CHICKEN FRICASSEE

Secret Recipe Chicken Fricassee image

This was my Grandma's secret family recipe from her French ancestors. I have never seen a recipe like this on any site. It's a rich creamy sauce over chicken...great with mashed potatoes. A great dish for Easter or Christmas.

Time 30m

Yield 4

Number Of Ingredients 9

¼ cup all-purpose flour
¼ cup margarine
2 cups heavy whipping cream
2 cups chicken broth
1 tablespoon dried parsley
4 egg yolks
¼ cup lemon juice
1 teaspoon cornstarch, or as needed
4 cooked chicken breasts, broken into chunks

Steps:

  • Mix flour and margarine together in a saucepan over medium heat, stirring until the flour and margarine form a paste.
  • Whisk cream into flour mixture about 1/2 cup at a time until smoothly combined; whisk in chicken broth and parsley. Bring sauce to a simmer, whisking constantly until thickened.
  • Whisk egg yolks and lemon juice together in a bowl.
  • Whisk egg yolk mixture slowly into cream mixture, about 1 tablespoon at a time, until the sauce barely comes to a simmer and coats the back of a spoon. Do not boil.
  • If thicker sauce is desired, whisk cornstarch and 1/4 cup of sauce in a small bowl; stir cornstarch mixture back into sauce until thickened, about 2 minutes.
  • Stir chicken breast pieces into sauce until chicken is heated through.

CHICKEN FRICASSéE WITH CREAMY SWEET-AND-SOUR DILL SAUCE

Chicken Fricassée With Creamy Sweet-And-Sour Dill Sauce image

Posted for ZWT6 Scandinavia leg of tour. Traditional Scandinavian fare, this rich stew is comfort food at its best - think chicken potpie without the crust. Boiled potatoes are the perfect starch to balance the sweet carrots and parsnips.

Time 5h20m

Yield 4 serving(s)

Number Of Ingredients 17

2 quarts water
6 large chicken thighs (with skin and bones, about 2 3/4 lb total)
4 sprigs fresh thyme
1 bay leaf
1/2 teaspoon whole white peppercorns
1 1/2 teaspoons salt (to taste)
1 lb carrot, peeled and halved, sliced into thirds
1 lb parsnip, peeled and halved, sliced into thirds
1 onion, halved
1 celery rib, cut crosswise into 3 pieces
3 garlic cloves
1/4 cup all-purpose flour
1 cup whole milk
1/2 cup heavy cream
1 tablespoon white wine vinegar
1/2 teaspoon sugar
2/3 cup chopped fresh dill

Steps:

  • Place thighs in water and bring to a boil in a 6-qt heavy pot. Skim froth frequently.
  • Add thyme, bay leaf, peppercorns and 1 teaspoon salt. Reduce heat and simmer for 10 minutes.
  • Add carrots, parsnips, onion, celery and garlic.
  • Simmer until carrots and parsnips are tender.
  • Using a slotted spoon, move carrots and parsnips to a bowl.
  • Continue to cook chicken until tender, 10-15 additional minutes. Using tongs, carefully transfer chicken to a bowl.
  • Strain broth through a fine sieve into another large bowl.
  • Chill the broth until the fat solidifies and rises to the top. This will take between 3 or 4 hours.
  • Cool chicken until cool enough to handle. Remove skin, bones and other solids and as much fatty parts of chicken as you can. Chill the chicken, carrots and parsnips until fat from the broth has solidified.
  • Reserve 1/4 cup of solidified fat from broth. Melt fat in a wide 4-quart dutch oven over low heat. Add flour and cook, whisking constantly, for 2 minutes. Make sure not to brown the roux. Whisk in the chicken broth until smooth.
  • Bring to a boil, then reduce heat and simmer, uncovered, stirring occasionally, until reduced to about 2 1/2 cups. This should take 30 to 45 minutes or longer.
  • Add milk and cream, simmer until reduced to about 3 1/2 cups, 10 to 15 minutes. Stir in chicken, add potatoes and parsnips. Add remaining salt (to taste), vinegar and sugar. Stir gently being careful to not break up vegetables, until heated through. Stir in the dill and serve.

Provided by Dan Hofstadter

Categories     Chicken     Dairy     Garlic     Herb     Onion     Vegetable     Summer     Gourmet

Yield Makes 6 servings

Number Of Ingredients 19

2 qt water
6 large chicken thighs (with skin and bones; about 2 3/4 lb total)
4 sprigs fresh thyme
1 Turkish or 1/2 California bay leaf
1/2 teaspoon whole white peppercorns
1 1/2 teaspoons salt, or to taste
1 lb carrots (about 6 medium)
1 lb parsnips (about 3 large)
1 onion, peeled and halved
1 celery rib, cut crosswise into 3 pieces
3 garlic cloves, peeled
1 to 3 tablespoons unsalted butter
1/4 cup all-purpose flour
1 cup whole milk
1/2 cup heavy cream
1 tablespoon white-wine vinegar, or to taste
1/2 teaspoon sugar, or to taste
2/3 cup chopped fresh dill, or to taste
Accompaniment: boiled potatoes

Steps:

  • Bring water with chicken to a boil in a wide 6-quart heavy pot, skimming froth. Add thyme sprigs, bay leaf, peppercorns, and 1 teaspoon salt, then reduce heat and simmer, uncovered, 10 minutes.
  • While chicken simmers, peel carrots and parsnips, then cut each carrot and parsnip crosswise into 3 equal lengths. Halve or quarter thicker pieces lengthwise so pieces are roughly the same size. Add to chicken along with onion, celery, and garlic and simmer, uncovered, until parsnips are tender, 10 to 15 minutes more. Transfer carrots and parsnips with a slotted spoon to a large bowl, then continue to simmer chicken until tender, 5 to 10 minutes. Transfer chicken with tongs to a bowl, then pour broth through a sieve into another large bowl. Let chicken and broth cool, uncovered, 15 minutes.
  • Chill broth, uncovered, until fat rises to top and solidifies, about 4 hours.
  • Meanwhile, tear chicken into bite-size pieces, discarding skin, bones, and remaining solids in sieve. Chill chicken with carrots and parsnips, covered, about 4 hours.
  • Remove and reserve 1/4 cup solidified fat from stock. (If you have less than 1/4 cup fat, add butter.) Melt fat in a wide 4-quart heavy saucepan over moderately low heat, then add flour and cook roux, stirring constantly, 3 minutes (do not brown). Stir in chicken broth. Bring to a boil, stirring constantly, then reduce heat slightly and simmer briskly, uncovered, stirring occasionally, until reduced to about 2 1/2 cups, 30 to 50 minutes. Add milk and cream, then simmer until reduced to about 3 1/2 cups, 10 to 15 minutes. Stir in chicken with vegetables, remaining 1/2 teaspoon salt (or to taste), and vinegar and sugar to taste and cook, stirring gently (avoid breaking up vegetables), until heated through. Stir in dill.
