Perfectly crisp on the outside, tender and spicy on the inside, this easy to make air fryer Chicken 65 is the best gluten-free appetizer or snack!

1.5 lbs boneless chicken thighs (skinless)
1/2 cup thick yogurt
7-8 curry leaves (chopped)
1 tablespoon ginger garlic paste
1 teaspoon cumin powder
2 tablespoons Kashmiri chili powder (mild)
1 teaspoon ground black pepper
1 teaspoon salt
1 tablespoon oil (avocado)
3 tablespoons rice flour
1 teaspoon oil (avocado)
1 tablespoon oil (avocado)
7-8 curry leaves
3-4 Indian or Thai green chilies (Bird's eye) (cut lengthwise)
4 garlic cloves, minced
1/2 teaspoon ground black pepper
1/2 teaspoon chaat masala
3-4 lemon wedges
2 tablespoon finely chopped cilantro / coriander leaves for garnishing

Steps:

  • Chop the chicken into 2-inch pieces.
  • Combine all the ingredients under the marinade section in a mixing bowl.
  • Add the chicken pieces to the marinade and coat them one at a time so that each piece is evenly marinated.
  • Let the chicken sit in the marinade for about 30 minutes.
  • After it has been marinated, add rice flour to the chicken marinade and coat it well.
  • Completely coat the air frying basket with oil before placing it over the trivet. Set the temperature to 400°F (200°C )and preheat the air fryer for 3 minutes.
  • Place the chicken pieces on the air frying basket in a single layer making sure not to overcrowd them - you'll have to do it in two batches.
  • Allow the chicken pieces to cook for 7 minutes.
  • Once the cooking cycle is complete, Flip the chicken pieces and cook for another 7 minutes. Check the internal temperature to make sure it is over 165 degrees F.
  • Transfer the chicken to a plate and repeat the process with the next batch of chicken.

Steps:

  • In a bowl add the chicken pieces, turmeric powder, garam masala powder, pepper powder, coriander powder, kashmiri chili powder, vinegar and mix all the spices well to coat the chicken pieces, add a little salt and mix well. Blend few fresh ginger and garlic pieces and grind to a nice chop, add this to the chicken pieces and mix well. Take in 1 teaspoon of egg white and mix well. Add 1 teaspoon of rice flour, 1 teaspoon of all-purpose flour and mix well, add 1 teaspoon of oil and mix again. Mix and coat the chicken pieces evenly with the spices and rest for about 4-5 hours. Preheat the air fryer at 180 degrees centigrade for 5 minutes, drop all the chicken pieces into the air fryer basket and fry for another 6-8 minutes. After 4 minutes, remove the basket toss the pieces and fry again for about 3 minutes. Pull the basket out and add in some slit green chilies and curry leaves and fry for about 3-4 minutes. Remove and transfer the chicken pieces to a serving plate and serve hot.

1 pound skinless, boneless chicken breasts, cut into 3/4-inch pieces
1 egg, beaten
2 tablespoons cornstarch
1 ½ tablespoons minced garlic, divided
1 tablespoon minced ginger, divided
2 teaspoons salt
½ teaspoon ground black pepper
vegetable oil for frying
2 tablespoons vegetable oil
1 teaspoon cumin seeds
2 serrano peppers, sliced into 1/4-inch pieces
2 tablespoons cumin powder
1 tablespoon chile powder, or less to taste
½ teaspoon ground black pepper
salt to taste
6 fresh curry leaves, or more to taste
1 ½ tablespoons red chile-garlic paste
1 tablespoon ginger paste
5 drops red food coloring, or more as needed
½ cup water
¾ cup chopped fresh cilantro

Steps:

  • Place chicken in a medium bowl. Add egg, cornstarch, 1/2 of the minced garlic, 1/2 of the minced ginger, salt, and 1/2 teaspoon black pepper. Mix until chicken is completely coated.
  • Heat oil in a deep skillet and fry chicken pieces until no longer pink in the center and the juices run clear, 7 to 10 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Set fried chicken aside.
  • Heat 2 tablespoons oil in a second skillet over medium heat. Add cumin seeds and cook until crackling, about 1 minute. Add remaining garlic, remaining ginger, serrano peppers, cumin, chile powder, 1/2 teaspoon black pepper, and salt. Add curry leaves and stir to combine. Add chile-garlic paste, ginger paste, and red food coloring. Stir to create a paste. Add water to thin paste slightly.
  • Add fried chicken to the the skillet and toss to coat thoroughly. Stir in cilantro.
