CHICKEN WITH CHERRY SAUCE

1 pound fresh or frozen pitted sweet cherries
1/2 cup orange juice
1/2 cup soy sauce
1/4 cup packed brown sugar
1/4 cup honey
2 tablespoons lemon juice
1 garlic clove, minced
2 teaspoons minced fresh gingerroot
1 broiler/fryer chicken (3 to 4 pounds), cut up
3 tablespoons butter

Steps:

  • Set aside 3/4 cup cherries. In a blender, combine orange juice and remaining cherries; cover and process until smooth. Add the soy sauce, brown sugar, honey, lemon juice, garlic and ginger; set aside., In a large skillet over medium heat, brown chicken on all sides in butter. Place chicken skin side down in an ungreased 13-in. x 9-in. baking dish. Top with cherry sauce. , Bake, uncovered, at 350° for 20 minutes; turn chicken. Top with reserved cherries. Bake, uncovered, 25-30 minutes longer or until chicken juices run clear.

A delicious citrus chicken recipe with flavors reminiscent of the orange chicken from a popular restaurant in the mall.

1 ½ cups water
2 tablespoons orange juice
¼ cup lemon juice
⅓ cup rice vinegar
2 ½ tablespoons soy sauce
1 tablespoon grated orange zest
1 cup packed brown sugar
½ teaspoon minced fresh ginger root
½ teaspoon minced garlic
2 tablespoons chopped green onion
¼ teaspoon red pepper flakes
3 tablespoons cornstarch
2 tablespoons water
2 boneless, skinless chicken breasts, cut into 1/2 inch pieces
1 cup all-purpose flour
¼ teaspoon salt
¼ teaspoon pepper
3 tablespoons olive oil

Steps:

  • Pour 1 1/2 cups water, orange juice, lemon juice, rice vinegar, and soy sauce into a saucepan and set over medium-high heat. Stir in the orange zest, brown sugar, ginger, garlic, chopped onion, and red pepper flakes. Bring to a boil. Remove from heat, and cool 10 to 15 minutes.
  • Place the chicken pieces into a resealable plastic bag. When contents of saucepan have cooled, pour 1 cup of sauce into bag. Reserve the remaining sauce. Seal the bag, and refrigerate at least 2 hours.
  • In another resealable plastic bag, mix the flour, salt, and pepper. Add the marinated chicken pieces, seal the bag, and shake to coat.
  • Heat the olive oil in a large skillet over medium heat. Place chicken into the skillet, and brown on both sides. Drain on a plate lined with paper towels, and cover with aluminum foil.
  • Wipe out the skillet, and add the sauce. Bring to a boil over medium-high heat. Mix together the cornstarch and 2 tablespoons water; stir into the sauce. Reduce heat to medium low, add the chicken pieces, and simmer, about 5 minutes, stirring occasionally.

I was skeptical at first about this recipe but was delighted with its flavour. Also, I use chicken breasts instead of the whole chicken. The crew licked the platter clean with this one.

3 tablespoons vegetable oil
1 (4 lb) roasting chickens, cut into 8 pieces
salt, to taste
pepper, to taste
1/2 cup all-purpose flour, for dusting
1 (15 ounce) can pitted dark cherries, packed in water
1/2 cup white sugar
1 tablespoon cornstarch
1 orange, with peel, quartered and thinly sliced
1/2 cup slivered almonds, toasted

Steps:

  • Heat the oil in a large skillet over medium-high heat.
  • Season the chicken with salt and pepper, then coat with flour.
  • Fry in the hot oil until browned, turning as needed.
  • Reduce heat to medium, cover and cook for about 25 minutes or until meat is tender and juices run clear.
  • Remove the chicken from the pan, and pour off all but 1/4 cup of the drippings.
  • Return to medium heat and stir in the cherries, reserving some of the cherry liquid for later.
  • Stir in sugar and bring to a boil.
  • Dissolve the cornstarch in the reserved cherry liquid, then stir into the pan. Cook, stirring gently, until thickened.
  • Add orange slices and almonds to the skillet, then return the chicken pieces to the skillet.
  • Spoon sauce over the chicken to coat, and simmer over low heat for 5 to 10 minutes before serving.

Another TERRIFIC chicken recipe from Rodale's "Terrific Chicken: 100 Great Meals in Minutes". I haven't tried this one yet but because it's different from the couple of Cherry-Glazed Chicken recipes already posted here, I've decided to share it before making it. It's on my to-be-made-soon list. In the notes included with the recipe, is a recommendation to buy tart or sour pie cherries in a can because regular cherries will be too sweet. An alternative suggestion is to use 2 cups of frozen, unsweetened pitted tart cherries and 1/2 a cup of cherry juice in place of the can of cherries.

6 chicken breast halves
1/2 cup milk
1/2 cup all-purpose flour
1 teaspoon dried thyme
salt & freshly ground black pepper, to taste
2 tablespoons vegetable oil
1 (16 ounce) can pitted tart cherries, drained, 1/2 cup juice reserved
1/4 cup brown sugar
1/4 cup granulated sugar
1 teaspoon yellow mustard

Steps:

  • Preheat the oven to 350ºF.
  • Rinse the chicken with cold running water and pat dry with paper towels.
  • Pour the milk into a shallow dish.
  • Mix the flour, thyme, salt and pepper together on a sheet of waxed paper or a shallow tray.
  • Dip each piece of chicken into the milk, then coat with the seasoned flour, shaking off the excess.
  • Heat the oil in a large non-stick pan over a medium-high heat and cook the chicken pieces for 5 minutes on each side or until golden-brown.
  • As they brown, transfer the chicken pieces to a 13x9-inch baking dish.
  • When all the chicken has been transferred to the baking dish, cover it with foil and bake for 30 minutes.
  • THE CHERRY SAUCE: Combine the reserved cherry juice and both sugars in a small saucepan and bring to the boil over a medium heat. Stir in the mustard and cook for a further 5 minutes, or until the sauce thickens slightly. Stir in the cherries. (The sauce will continue to thicken once it bakes.).
  • After the chicken has baked for 30 minutes, uncover it, and spoon the hot cherry sauce over it.
  • Bake, uncovered for a further 15 minutes, or until the chicken is tender and the juices run clear.
  • Serve over rice or noodles with steamed green vegetables.

2 tablespoons minced fresh dill
2 teaspoons grated orange peel
1 teaspoon minced garlic
3/4 teaspoon salt
1 cup cherry tomatoes, halved
1 tablespoon olive oil
4 skinless boneless chicken breast halves, thinly sliced crosswise
4 cups firmly packed torn fresh spinach leaves (about 8 ounces)

Steps:

  • Preheat oven to 450°F. Place large baking sheet in oven to heat.
  • Meanwhile, mix dill, orange peel, garlic and salt in medium bowl. Season with pepper. Combine tomatoes, oil and 1 teaspoon dill mixture in small bowl. Add chicken to remaining dill mixture in medium bowl and toss to coat.
  • Cut 4 sheets of foil, each about 20 inches long. Place 1 foil sheet on work surface. Arrange 1 cup spinach on 1 half of foil. Place 1/4 of sliced chicken mixture atop spinach. Spoon 1/4 of tomato mixture atop chicken. Fold foil over, enclosing contents completely and crimping edges tightly to seal. Repeat with remaining 3 foil sheets, spinach, chicken mixture and tomato mixture, forming 4 packets total.
  • Arrange foil packets in single layer on heated baking sheet. Reduce oven temperature to 400°F. Bake until chicken is just cooked through, about 10 minutes. Transfer to plates; let stand 5 minutes.
