Yield 6 half-pints.

Number Of Ingredients 4

1 quart unfiltered apple cider or juice
2/3 cup red hots candy
1 package (1-3/4 ounces) powdered fruit pectin
5 cups sugar

Steps:

  • In a Dutch oven, combine cider and red hots. Stir in pectin. Bring to a full rolling boil over high heat, stirring constantly. Stir in sugar; return to a full rolling boil. Boil and stir 1 minute. , Remove from heat; skim off foam. Ladle hot mixture into six hot half-pint jars, leaving 1/4-in. headspace. Wipe rims. Center lids on jars; screw on bands until fingertip tight., Place jars into canner with simmering water, ensuring that they are completely covered with water. Bring to a boil; process for 10 minutes. Remove jars and cool.

Number Of Ingredients 3

4 cups cherry cider, bottled
7 cups sugar
6 ounces liquid pectin, 2 3ounce pouches

Steps:

  • Strain cider, a coffee filter and sieve work well.
  • In a large pan heat cider till warm using medium heat.
  • Add sugar and heat, stir constantly until sugar is dissolved.
  • Turn up to medium high heat,bring to a full rolling boil, stir constantly.
  • Stir in pectin.
  • Bring back to a full rolling boil,stir constantly for one minute.
  • Remove from heat.
  • Quickly skim off any foam and ladle hot jelly into hot jars, leave 1/4 inch headspace.
  • Wipe jar rims and threads with clean damp cloth.
  • Cover with hot lids and apply screw rings.
  • Process 1/2 pint jars in water bath for 10 minutes.

It's not too sweet as less sugar is needed. I use the dark cider (or use your homemade cider) for more robust cider taste.

6 cups apple cider
4 cups sugar
1/2 teaspoon cinnamon
1 (1 3/4 ounce) box sure-jell dry sugar-free pectin

Steps:

  • In a small bowl, mix together 1/4 cup of the sugar and the powdered pectin. Set aside.
  • Pour the apple cider into a cooking pot.
  • Add the pectin/sugar mixture to juice in the cooking pot; Stir vigorously and well.
  • Bring mixture to full rolling boil stirring constantly.
  • Stir in remaining sugar and the cinnamon. Return to full rolling boil and boil for one-minute, stirring constantly.
  • Remove from heat. Skim off any foam.
  • Ladle into sterilized jars to within 1/8 inch of tops.
  • Seal and process five-minutes in boiling water bath.

Sweet or sour cherries can be used. I used sour because that is what grows on our tree. Got this off the internet and altered it somewhat. No need to pit all those cherries. This one is easy! Time to make does not include time for water to boil in water bath canner.

3 1/2 cups cherry juice
1 cup water
1 (1 3/4 ounce) package dry pectin
4 1/2 cups sugar

Steps:

  • TO MAKE JUICE:
  • Select fully ripe cherries.
  • Softly wash. Remove stems. Do not pit!
  • In large pot, crush cherries (I use a potato masher.).
  • Add 1 cup water to crushed cherries.
  • Bring to a boil over high heat.
  • Reduce heat and simmer for 10 minutes.
  • Strain juice through a jelly bag or cheesecloth. (I use a fine mesh "sifter" lined with a coffee filter.).
  • Toss pits, pulp, and peels.
  • TO MAKE JELLY:
  • Measure 3 1/2 cups juice into large pot.
  • Add pectin and stir.
  • Place on high heat and stir constantly.
  • Bring to a full rolling boil (that can't be stirred down).
  • Add sugar, continue stirring and bring to a full rolling boil once more.
  • Boil hard for 1 minute.
  • Remove from heat.
  • Skim off foam.
  • Ladle into hot jelly jars leaving 1/4 inch headspace. Apply lids and rings.
  • Process in hot water bath for 5 minutes.
  • Note: I used 1 gallon of cherries and had a little more than 3 1/2 cups juice. Of course, it also depends on the quality of the fruit.

This nicely spiced, simmered beverage is so warming. For a special holiday accent, garnish the mugs using maraschino cherries and a sliced orange.

Number Of Ingredients 9

4 cups apple cider or juice
3/4 cup orange juice
1/4 cup maraschino cherry juice
3 whole cloves
3 whole allspice
1 cinnamon stick
1 orange peel strip (1 to 3 inches)
6 maraschino cherries
6 orange slices

Steps:

  • In a large saucepan, combine the cider and juices. Place the cloves, allspice, cinnamon stick and orange peel on a double thickness of cheesecloth; bring up corners of cloth and tie with kitchen string to form a bag. Add to the pan., Bring to a simmer over medium heat (do not boil). Simmer, uncovered, for 15 minutes. Discard spice bag. Serve cider warm in mugs; garnish with cherries and orange slices.
