Rustle up some egg-free choc chip cookies for a treat and add cocoa, if you like, to make chocolate versions. They're ideal if you follow an egg-free diet

125g butter , softened
125g caster sugar
1 tsp vanilla essence or extract
200g self-raising flour , plus extra for dusting
1 tsp baking powder
50g milk or white chocolate chips
2 tbsp cocoa powder (optional)

Steps:

  • Heat the oven to 180C/160C fan/gas 4. Cream the butter and sugar together using a wooden spoon or an electric whisk in a large bowl until light, fluffy and golden.
  • Stir in the vanilla, flour, baking powder and chocolate chips. Add 1 tbsp water to bring the mixture together if needed, and the cocoa powder to make them chocolate cookies, if you like. Bring the dough together into a ball with your hands.
  • Sprinkle some flour over your work surface and the dough. Roll out the dough until 3mm thick and, using cookie cutters, cut them out and lay them out on lined baking sheets, spacing them well apart.
  • Bake for about 12 mins or until golden brown. If baking on two trays, swap the trays over halfway through cooking. Leave on the baking sheets for 5 mins, then transfer to a wire rack to cool. Will keep in an airtight tin for three-four days.

These cookies are one of my daughters faves. Hope you try them. I think they would be great for a Valentines treat. The addition of nuts would be great in these also.

Number Of Ingredients 6

1 c butter , margarine
1 c confectioners' sugar
1 tsp vanilla extract
1 3/4 c flour
1/2 tsp baking soda
1 c cherry chips

Steps:

  • 1. Preheat the oven to 350 degree F. Note: This recipe does not call for any eggs.
  • 2. Combine the margarine, powdered sugar and vanilla in a mixing bowl and beat until light and fluffy. Add the flour and baking soda. Mix until well blended. Add cherry chips and stir until well distributed
  • 3. On an ungreased cookie sheet, drop rounded teaspoons of dough, leaving at least an inch between to allow for spreading. Slightly flatten each cookie with the back of a spoon. Note: A rounded teaspoon makes a fairly small cookie. If a larger cookie is desired, use approximately 50% more dough.
  • 4. Place in the preheated oven and bake for 8 to 9 minutes (11 to 13 minutes for larger cookies). Cookies are done when they start to brown slightly around the edges. Remove from the oven and allow cookies to set on cookie sheet for 1 to 2 minutes to firm up slightly before removing. Remove and place on a wire rack to cool. I have used cinnamon chips in these cookies also.

Cherry Chip Cookies are soft cream cheese sugar cookies made with a sugar cookie mix and loaded with lots of cherry baking chips.

1 package (8 ounces) cream cheese, (room temperature)
1 large egg, (room temperature)
1 package (17.5 ounces) sugar cookie mix
1 cup cherry baking chips

Steps:

  • Preheat the oven to 350°F, and line a large baking sheet with parchment paper.
  • In a large mixing bowl, add cream cheese. Beat with a hand mixer until smooth and creamy. Add the egg and mix on medium until combined, scraping down the sides of the bowl as needed.
  • Slowly add the sugar cookie mix to the bowl, and continue to mix on medium until all ingredients are incorporated.
  • Gently fold in the cherry chips.
  • Using a 2 tablespoon scoop, add the dough to the lined baking sheet, leaving 2 inches on each side to allow for spreading.
  • Bake 8-12 minutes, or until golden brown.
  • Allow the cookies to cool slightly before serving.

1/2 cup sugar
1 egg yolk
1 teaspoon almond extract
2-1/4 cups all-purpose flour
3/4 cup crushed cornflakes
1/8 teaspoon salt
1 cup cherry baking chips
Additional sugar

Steps:

  • In a bowl, cream butter and sugar. Add egg yolk and almond extract; mix well. Combine the flour, cornflakes and salt; gradually add to creamed mixture and mix well. Stir in chips. Shape into 1-in. balls; place 2 in. apart on greased baking sheets. Coat bottom of glass with cooking spray, then dip in sugar. Flatten cookies with prepared glass, redipping in sugar as needed. Bake at 375° for 10-12 minutes or until the cookies are golden brown around the edges. Remove to wire racks to cool.

1/2 cup plus 1 tablespoon butter, softened
1/2 cup sugar
1/4 cup packed dark brown sugar
1 large egg, room temperature
1 teaspoon vanilla extract
1 teaspoon maple flavoring
1-1/2 cups all-purpose flour
5 teaspoons baking cocoa
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup semisweet chocolate chips
1 cup white baking chips
1/2 cup dried cherries or dried cranberries
1/4 cup sweetened shredded coconut

Steps:

  • Preheat oven to 350°. Cream butter, gradually adding sugars, until light and fluffy. Slowly beat in egg, vanilla and maple flavoring., In another bowl, sift together flour, baking cocoa, baking soda and salt. Gradually beat into creamed mixture just until moistened (do not overbeat). Stir in semisweet chocolate and white baking chips, dried cherries and coconut., Drop dough by tablespoonfuls 2 in. apart onto ungreased baking sheets. Flatten slightly. Bake until golden brown, 10-12 minutes. Cool on pans 5 minutes. Remove to wire racks to cool completely.
