FRENCH TOAST "JUBLIEE"

1 cup drained jarred high-quality maraschino cherries, such as Luxardo
2 strips lemon peel (using a peeler) plus 2 tablespoons lemon juice
1 cup rum
2 tablespoons unsalted butter
2 tablespoons maple syrup
1 cup heavy cream
2 tablespoons honey
1/2 teaspoon almond extract
1/2 teaspoon ground cardamom
3 large eggs plus 2 large egg yolks
Two 1 1/2-inch-thick challah bread slices
2 tablespoons unsalted butter
2 lemons, zested
Confectioners' sugar, for dusting

Steps:

  • For the jubilee sauce: Combine the cherries and lemon strips and juice in a small saucepan over low heat. Cook until the mixture has thickened, about 10 minutes. Remove the pan from the heat, add the rum and return it to the heat to burn off the alcohol, about 5 minutes. Just before serving, swirl in the butter and maple syrup.
  • For the French toast: Add the cream, honey, almond extract, cardamom and eggs and yolks to a blender and blend until combined. Transfer to a shallow container and soak the bread in the custard mixture.
  • Heat the butter in a large saute pan over medium heat until frothing. Drain off the excess custard from the bread, add the slices to the pan and cook on both sides until golden brown, 5 to 8 minutes a side.
  • Serve by placing the French toast on a platter along with the cherry jubilee sauce. Finish with the lemon zest and a dusting of confectioners' sugar.

This is an old school classic, making use of the woefully underutilized art of flambe. Flambeing caramelizes sugars and deepens flavors; with ripe summer cherries, that's really all you need.

1 pint vanilla ice cream
1 pound fresh, ripe sweet cherries, such as Bing
1/2 cup sugar
1 lemon
1/3 cup golden rum

Steps:

  • Evenly scoop the ice cream into 4 dishes or decorative glasses and put in the freezer until ready to serve (this can be done up to 4 hours ahead).
  • Wash and pit the cherries. Put the cherries and sugar in a large skillet. Peel 2 strips of zest from the lemon in wide strips with a peeler and add to the cherries. Squeeze the juice of half the lemon over the top. Stir to combine evenly. Cover and cook the cherries over medium-low heat until the sugar dissolves, about 4 minutes. Uncover and cook over medium-high until cherries get juicy, about 5 minutes more.
  • To flambe the rum: If cooking over a gas flame, pull the pan off the heat and add the rum. Ignite the alcohol with a long match or one held with tongs. Swirl the pan slightly until the flames subside, about 30 seconds.
  • If cooking over an electric stove, put the rum in a small saucepan. Warm it over medium-low heat and carefully light it with a long match or one held with tongs. Pour the lit rum over the cherries, and swirl the pan lightly until the flames subside, about 30 seconds.
  • Ladle the cherries and their juices over prepared ice cream scoops. Serve immediately.

This is a great, refreshing dessert, especially after a hearty meal. This does have to be prepared immediately before serving, but does not take a lot of time. Your guests will enjoy the blue flames when the brandy is ignited!

½ cup white sugar
2 tablespoons cornstarch
¼ cup cold water
¼ cup orange juice
1 pound Bing or other dark, sweet cherries, rinsed and pitted (or use frozen pitted cherries)
½ teaspoon finely grated orange zest
¼ teaspoon cherry extract
¼ cup brandy
3 cups vanilla bean ice cream

Steps:

  • Whisk together the sugar and cornstarch in a wide saucepan. Stir in the water and orange juice; bring to a boil over medium-high heat, whisking until thickened. Stir in the cherries and orange zest, return to a boil, then reduce heat, and simmer for 10 minutes. While the cherries are cooking, spoon the ice cream into serving bowls.
  • Remove the cherries from the heat, and stir in the cherry extract. Pour in the brandy, and ignite with a long lighter. Gently shake the pan until the blue flame has extinguished itself. Spoon the cherries over the bowls of ice cream.

1 teaspoon cornstarch
2 tablespoons brown sugar
2 tablespoons kirsch (optional) or 2 tablespoons brandy (optional)
2 cups non-fat vanilla frozen yogurt

Steps:

  • Drain the juice of the cherries into a saucepan.
  • Whisk in the cornstarch and brown sugar.
  • Bring mixture to a boil over high heat.
  • Add cherries and stir to coat. Remove from heat and add carefully the brandy or kirsch. Return to heat and cook 1 minute.
  • Scoop frozen yogurt into 4 bowls and spoon warm mixture on top.

  • To make the Cherry Syrup: Sprinkle the sugar over bottom of a large saucepan over medium heat. Heat until the sugar begins to melt (1-2 minutes). Add the thawed cherries, lemon juice and cornstarch and cook, stirring occasionally, until clear and syrupy about 5-8 minutes. Remove from heat, remove half the cherries with a slotted spoon and coarsely chop. Set aside chopped cherries for use in the bread. Refrigerate the remaining whole cherries in syrup in an airtight container until required.
  • To make the Cherry Bread: Warm milk in a small saucepan over low heat until lukewarm. Combine yeast and half the milk in a large bowl or the bowl of a stand mixer fitted with a dough hook. Stir to dissolve and stand in a warm place until foamy (8-10 minutes). Whisk remaining milk with yolks in a bowl and set aside.
  • Add the flour, sugar, cinnamon and a pinch of salt to the bowl/mixer with the yeast and milk mixture. Add the yolk mixture and knead on medium speed until a smooth dough forms, about 4-5 minutes. While mixing, gradually add the butter and beat until dough is elastic and pulls away from sides of bowl, about 8-10 minutes (you may need to add a bit more flour). Transfer the dough to a lightly buttered bowl, cover and stand until doubled in size, about 1 1/2 to 2 hours.
  • Remove dough to a lightly floured surface. Roll out to a 15cm x 23cm (6-inch x 9-inch) rectangle and scatter the reserved chopped cherries over the dough. Roll to form a long cylinder, place in a greased 11cm x 24cm (4 x 8-inch) loaf tin. Cover and let stand until doubled in size, about 30-60 minutes.
