Easy Cottage Pie made with a mixture of ground beef, ground sausage, and mixed vegetables in a delicious gravy and baked under a layer of fluffy mashed potatoes.

1 lb lean ground beef
1 lb ground sausage ((I use Jimmy Dean pork sausage))
1 teaspoon salt
1/2 teaspoon black pepper
1 small yellow onion (, chopped)
2 ribs celery (, chopped)
1-2 carrots (, chopped (about 1 cup))
3 cloves garlic (, minced)
1/4 cup white flour
2 1/2 cups beef broth
2 tablespoons tomato paste
1 cube beef bouillon
2 tablespoons Worcestershire sauce
1 teaspoon fresh thyme (, chopped (or ¼ teaspoon dried thyme))
1 teaspoon fresh rosemary (, chopped (or ¼ teaspoon dried rosemary))
2 bay leaves
½ cup frozen corn
½ cup frozen peas
2 1/2 pounds potatoes (, Yukon gold or russet potatoes)
¼ cup sour cream
½ cup milk
4 tablespoons butter
Salt and pepper (, to taste)
½ cup freshly shredded parmesan cheese
½ cup shredded cheddar cheese (, for topping)

Steps:

  • Preheat the oven to 375 degrees F.
  • Make mashed potatoes: Add potatoes to a saucepan with 3 inches of water. Cover and bring to a boil. Cook until fork tender, about 12-15 minutes.
  • Drain the water and leave the potatoes in the pot. Cover with the lid and allow to steam for a few minutes.
  • Mash the potatoes lightly with a potato masher (avoid over-mixing the potatoes). Add butter, sour cream, milk, parmesan cheese and salt and pepper and stir just until smooth. Set aside.
  • Make the meat filling: In a large, oven-safe* 12 inch skillet with sides, add the ground beef and ground sausage (or ground lamb, to make shepherd's pie). Season with salt and pepper.
  • Cook over medium heat until browned, breaking the meat into small pieces with a wooden spoon as it cooks. Drain some of the grease (reserving some in the pan) and remove meat to a plate.
  • Add the onion, celery and carrots to the pan and saute for about 5-8 minutes, until tender. Add garlic and flour and toss to combine. Cook for 1 minute.
  • Add the beef broth, tomato paste, Worcestershire sauce, herbs and bay leaves and stir to combine.
  • Bring to a simmer and cook for 5 minutes. Taste and add extra seasonings, if needed. Remove bay leaves and stir in frozen peas, corn and cooked meat.
  • Assemble the pie: Spoon the mashed potatoes over the meat mixture to completely cover the top. Sprinkle with shredded cheddar cheese.
  • Bake for about 30 minutes, until golden and bubbling. Allow to cool for 15 minutes before serving, to allow the gravy sauce in the meat mixture to cool and thicken.

Cottage pie is classic British comfort meal comprising a flavoured beef mince and vegetable filling that is topped with mashed potatoes and baked.

30ml (2 tbsp) olive oil
1kg (2.2lbs) beef mince
3 medium onions, peeled and grated
3 garlic cloves, peeled and crushed
2 large carrots, peeled and grated
3 thyme sprigs, washed
2 rosemary sprigs, washed
800g (2 tins) chopped tomatoes
30ml (2 tbsp) tomato puree
375ml (1½ cup) red wine
80ml (⅓ cup) Worcestershire sauce
250ml (1 cup) beef stock
200g (2 cups) baby button mushrooms, cleaned and halved
130g (1 cup) peas
1kg (2.2lbs) floury potatoes, peeled and sliced
120g (½ cup) butter
11g (2 tbsp) Parmesan cheese, grated
1 egg yolk

Steps:

  • Heat half of the oil in a large frying pan or cast iron casserole dish.
  • Brown the meat, which would take approximately 5 minutes, then remove from the pan. Place the meat in a sieve to remove excess fat.
  • Using the same pan, add the remaining oil, then fry the onion, garlic, carrots, thyme and rosemary over a medium heat for 5-10 minutes or until the excess moisture has evaporated.
  • Add the browned mince back into the pan along with the tomatoes and tomato puree. Cook for 5 minutes, stirring constantly.
  • Add red wine and Worcestershire sauce and simmer until the liquid has been reduced by half.
  • Pour in stock and bring it to a slow simmer. Continue to cook for 20-25 minutes. If the meat sauce doesn't seem thick enough, continue cooking for another 5-10 minutes.
  • Stir in mushrooms and peas, then season to taste. Remove from heat and set aside.
  • Preheat the oven to 180˚C/fan 160˚C/356˚F/gas 4.
  • Meanwhile, add the potatoes to a pan of salted water and bring to a boil. Cook until tender, which will take about 10-15 minutes. Drain then return to the pan and leave to steam dry.
  • Pass the potatoes through a potato ricer then return the mash to the pan.
  • Stir in the butter, cheese and egg yolk, then season to taste.
  • Spoon the mince into a large ovenproof casserole dish and even out the layer.
  • Top the mince with mash and level out with a fork. Run the fork along the mash to leave a ripple effect that will help the topping become crispy.
  • Sprinkle over extra cheese, if you prefer, then place in the oven for 30 minutes.
  • Serve immediately. It goes well with cauliflower cheese and braised red cabbage. Enjoy!

A rich gravy with ground beef and vegetables topped with ultra creamy mashed potatoes. The ultimate comfort food: Shepherd's Pie!

2 tablespoons olive oil, (separated)
2 garlic cloves, (minced)
2 cups mirepoix (mix of carrots, onion, & celery),
1.2 pounds ground chuck round
1/4 cup white flour
1/2 cup frozen sweet peas or corn
1 can (14.5 ounces) fire-roasted diced tomatoes, (undrained)
2 tablespoons tomato paste
1 and 3/4 cups beef stock (low sodium) ((can use low sodium beef broth))
1/2 cup 100% grape juice
1 beef bouillon cube
2 tablespoons Worcestershire sauce
1 teaspoon dried thyme
3 bay leaves, (separated)
2 and 1/2 pounds potatoes (I use an equal mix of Yukon Gold and Russet; if just using one use Yukon Gold)
1/2 cup heavy cream
1/2 cup sour cream (can use fat free)
6 tablespoons unsalted butter
Fine sea salt and freshly cracked pepper
Optional: fresh parsley or fresh thyme, for topping

Steps:

  • Pour 1 and 1/2 tablespoons olive oil in a large (oven-safe to save a dish!) skillet over medium high heat. Add garlic cloves and finely chopped onion and cook, stirring frequently for about 1 minute. Add the finely chopped carrots and celery and cook for another 2-3 minutes or until veggies are softened.
  • Increase heat to high and add in the beef. Cook, breaking up the beef, until browned through. If there is excessive grease, drain off that additional fat. Add in the flour and cook an additional minute to cook off the flour taste. Reduce heat to medium-high and add in the frozen peas or corn, can of diced tomatoes, tomato paste, beef stock, grape juice, beef bouillon cube, Worcestershire sauce, dried thyme, and 2 bay leaves.
  • Bring this mixture to a simmer then reduce heat to medium and bring the mixture to a rapid simmer. Cook for 25-35 minutes at medium heat, stirring every 5 or so minutes, until you have a good thickened gravy. Remove from heat, cover, and refrigerate until ready to bake. (I like making in the morning and assembling before dinner). If making immediately, place in the fridge until potatoes are done (you want the mixture to chill for as long as possible so the layers stay separate when baking, 15-20 minutes at a minimum) :) If you didn't prepare in an oven-safe skillet, transfer to a 2 quart oven-safe dish.
  • Preheat the oven to 350 degrees F. Peel and then cube the potatoes into golf-ball sized pieces. Place in a strainer and rinse under cold water until the water rinsing through comes out clear. Place in a large pot and cover with cold water. Add 1 tablespoon fine sea salt and 1 bay leaf, stir, and bring to a boil. Reduce to a simmer until the potatoes are fork-tender; about 15-20 minutes. When a potato can easily be pierced, drain the potatoes in a strainer and make sure you get rid of ALL the extra moisture. Let them dry for about 3 minutes. Discard the bay leaf.
  • While the potatoes are drying in the strainer, add the heavy cream, sour cream, and butter to the pot. Melt on low heat and stir to combine. While potatoes are still hot, put them through a ricer and add right on top of the butter/sour cream mixture. Stir with a wooden spoon until smooth. Season to taste with salt and pepper (I use about 1/2 teaspoon salt and 1/4 teaspoon pepper). Cover and place in the fridge until ready to assemble pie! OR add these mashed potatoes to top the pie in an even layer.
  • Use a fork to add marks into the surface of the potatoes. Drizzle with remaining 1/2 tablespoon olive oil.
  • Bake in preheated oven for 25-30 minutes or until the potatoes are golden brown and the edges are bubbling. Broil for 1-2 minutes on high to get the very tops of the potatoes crispy! Remove from heat and garnish with fresh thyme or fresh parsley as desired. Serve hot :)

3 tbsp olive oil
1 ¼kg beef mince
2 onions, finely chopped
3 carrots, chopped
3 celery sticks, chopped
2 garlic cloves, finely chopped
3 tbsp plain flour
1 tbsp tomato purée
large glass red wine (optional)
850ml beef stock
4 tbsp Worcestershire sauce
few thyme sprigs
2 bay leaves
1.8kg potatoes, chopped
225ml milk
25g butter
200g strong cheddar, grated
freshly grated nutmeg

Steps:

  • Heat 1 tbsp olive oil in a large saucepan and fry 1¼ kg beef mince until browned - you may need to do this in batches. Set aside as it browns.
  • Put the other 2 tbsp olive oil into the pan, add 2 finely chopped onions, 3 chopped carrots and 3 chopped celery sticks and cook on a gentle heat until soft, about 20 mins.
  • Add 2 finely chopped garlic cloves, 3 tbsp plain flour and 1 tbsp tomato purée, increase the heat and cook for a few mins, then return the beef to the pan.
  • Pour over a large glass of red wine, if using, and boil to reduce it slightly before adding the 850ml beef stock, 4 tbsp Worcestershire sauce, a few thyme sprigs and 2 bay leaves.
  • Bring to a simmer and cook, uncovered, for 45 mins. By this time the gravy should be thick and coating the meat. Check after about 30 mins - if a lot of liquid remains, increase the heat slightly to reduce the gravy a little. Season well, then discard the bay leaves and thyme stalks.
  • Meanwhile, make the mash. In a large saucepan, cover the 1.8kg potatoes which you've peeled and chopped, in salted cold water, bring to the boil and simmer until tender.
  • Drain well, then allow to steam-dry for a few mins. Mash well with the 225ml milk, 25g butter, and three-quarters of the 200g strong cheddar cheese, then season with freshly grated nutmeg and some salt and pepper.
  • Spoon the meat into 2 ovenproof dishes. Pipe or spoon on the mash to cover. Sprinkle on the remaining cheese.
  • If eating straight away, heat oven to 220C/200C fan/gas 7 and cook for 25-30 mins, or until the topping is golden.
  • If you want to use a slow cooker, brown your mince in batches then tip into your slow cooker and stir in the vegetables, flour, purée, wine, stock, Worcestershire sauce and herbs with some seasoning. Cover and cook on High for 4-5 hours. Make the mash following the previous steps, and then oven cook in the same way to finish.

2 cups frozen mixed vegetables
1 onion
2 (400 g) cans tomatoes
2 tablespoons flour
1 teaspoon dried rosemary
1 teaspoon dried oregano
5 large potatoes
1 tablespoon butter

Steps:

  • Boil potatoes till tender and then mash as usual, seasoning with salt and pepper. Add butter and sufficient milk to make it fluffy and nice.
  • Preheat oven to 200degrees celsius.
  • Brown meat in a pan and drain it of excess juices. Transfer browned meat to a bowl.
  • Heat some oil in the pan and fry onions till tranluscent. Add in frozen mixed vegetables and cook till everything has warmed up. Add in salt, pepper, oregano, rosemary, canned tomatoes and mix. Add flour in and mix well.
  • Return lamb or beef to the mix. Simmer, uncovered, for around 25 minutes till the liquid has reduced by half.
  • Spoon meat filling into casserole dish. Top off with mashed potatoes and use a fork to score patterns on top.
  • Bake in oven for 20 minutes till potatoes brown nicely. You might want to switch to top grill in the last 7 to 8 minutes.

1 medium red onion, diced

1 can (14-1/2 ounces) diced tomatoes

1 envelope chili seasoning mix
1 package (24 ounces) refrigerated mashed potatoes
1 cup shredded cheddar-Monterey Jack cheese
4 green onions, thinly sliced
Grated Parmesan cheese

Steps:

  • Preheat oven to 350°. In a large skillet, cook and crumble beef, salt and pepper until beef is no longer pink. Drain beef; remove from skillet., In same skillet, heat oil over medium heat.
