Categories     Easy

Time 45m

Number Of Ingredients 18

1 Tbsp olive oil
1 medium onion (chopped)
3 garlic cloves (minced)
1 jalapeno pepper (seeded and diced)
1 tsp ground cumin
1 tsp chilli powder
1 lb chicken breasts ((2 medium))
20 oz crushed tomatoes
32 oz chicken broth
14 oz black beans (drained and rinsed)
14 oz corn (drained and rinsed)
1/2 cup cilantro (chopped, divided (reserve 1/4 of it for garnish))
1 lime (juiced)
1 tsp salt (or to taste)
1/4 cup olive oil
8 corn tortillas ((6" tortillas))
1 large avocado (diced)
1 lime (cut into wedges, to serve)

Steps:

  • Preheat a pan with 1/4 cup oil over medium-high heat. Cut tortillas into thin strips and fry them in batches in the hot oil until crisp. Remove from the pan and allow them to drain on a paper towel. Repeat with remaining tortilla strips, adding more oil as needed then set aside.
  • Preheat a pot with oil over medium-high heat. Add chopped onion, garlic and chopped jalapeño and sauté until veggies soften.
  • Add whole chicken, corn, beans, chilli powder, cumin, crushed tomatoes, salt, ¼ cup of cilantro and chicken broth. Bring to a boil and let simmer for at least 25 minutes.
  • Remove chicken from the pot and shred it using 2 forks. Add shredded chicken back to the soup and simmer another 5 minutes then add lime juice.
  • Serve the soup with some tortilla strips, pieces of avocado, fresh cilantro and lime wedges.

CHEF PACHUCO'S CHICKEN TORTILLA SOUP

Chef Pachuco's Chicken Tortilla Soup image

The other day, I had a hard time trying to get out of my wife what she may like for dinner. I had gone to the store to get ingredients to make a boring yet delicious butternut squash soup, but decided that I didn't want to make it. As I sat in my car in the parking lot of our local grocery store, I had remembered weeks earlier about my wife saying something about a tortilla soup that she had tried a while ago. I myself have tried the soup, but having already left the house, I had no way of looking up another recipe. After a few more minutes of thinking, I went into the store, bought a bunch of ingredients, came home and started cooking. What follows is the result. I hope you enjoy it as we did, just two nights ago.

Provided by Chef Pachuco

Categories     Chicken

Time 1h

Yield 6-8 bowls, 6-8 serving(s)

Number Of Ingredients 16

1 bunch cilantro
2 (8 ounce) cans tomato sauce
2 (48 ounce) cartons chicken broth
1/4 teaspoon ground cumin
3 tomatoes
1/4 teaspoon cayenne pepper
2 poblano peppers
1/4 teaspoon coriander
3 boneless skinless chicken breasts
1/4 teaspoon smoked paprika
2 garlic cloves
1/4 teaspoon salt
1 (10 ounce) package corn tortillas
1/4 teaspoon black pepper
1 red onion
1 teaspoon tomato paste

Steps:

  • Preheat oven to 200°.
  • Place tortillas on baking sheet. When oven is preheated, place tortillas in oven for 15-20 minutes, flipping once, to dry out (you do not want moist tortillas in this case).
  • When tortillas are dried out, cut into ¼ inch wide by 2 inch strips.
  • Boil chicken breasts in the chicken broth until they turn white in color and float.
  • Chop onion, tomatoes, and garlic. Set aside in bowl.
  • Chop cilantro. Set aside in another bowl.
  • Place poblano peppers under broiler or over the flame from a gas stove burner until the skin turns black in color.
  • Place poblanos in a plastic bag (you can use one like those you get at the grocery store) for 10-15 minutes.
  • When peppers are ready, take out of bag, run under cold water, and with hands (you may wish to use gloves), remove skin, seeds, and veins.
  • Chop the poblanos, and add to bowl with onion, tomatoes, and garlic.
  • In a skillet, heat enough oil to cover generously, the bottom of the skillet. Fry tortilla strips in the oil until golden brown (fry a little bit at a time; it is both easier to control, and gives more even browning).
  • Drain tortilla strips on some paper toweling to remove excess grease.
  • In the same oil, sauté onion, tomatoes, garlic, and poblanos until onion turns translucent.
  • Chop or shred chicken (is a matter of preference), then add to skillet with vegetables. Simmer for 5-10 minutes stirring occasionally.
  • Add tomato sauce and tomato paste, as well as all spices to the chicken broth. Bring to a boil.
  • Add vegetables from skillet and about one handful of cilantro (set remaining cilantro aside to use as a garnish if you choose) to the broth.
  • Reduce heat to a simmer and cook until cilantro turns black in color. Crush up approximately ¾ of the tortilla strips in a Ziploc bag until they are like bread crumbs, then add to pot.
  • Simmer until tortilla strips dissolve, stirring occasionally. When tortilla strips are dissolved, you are finished and ready to plate.
  • Serving suggestions are to shred some Monterey Jack cheese, and chop up some avocado, more onion and cilantro. Place these items along with some of the remaining tortilla strips on top of a piping hot bowl of soup.

Time 2h45m

Yield 8 servings

Number Of Ingredients 9

One 4-pound chicken
5 cloves garlic, smashed
1 onion, quartered
2 habanero chiles
1 jalapeno (with seeds), halved lengthwise
1/2 bunch cilantro
3 tablespoons fresh lime juice, plus more if needed
Kosher salt and freshly ground black pepper
Serving suggestions: chopped fresh cilantro, halved cherry tomatoes, avocado wedges, queso fresco, tortillas and grilled corn

Steps:

  • Bring the chicken, garlic, onions, habaneros, jalapenos and 1 gallon water to a boil in a large pot. Skim the foam from the surface. Reduce the heat to medium and simmer, skimming the surface frequently, until the chicken is cooked through, about 1 hour.
  • Remove the chicken from the broth. Strain the broth into another large pot. Return the chiles to broth and discard remaining solids. Shred chicken meat and discard the skin and bones. Set the chicken aside for future use.
  • Meanwhile, set the pot with the strained broth over medium heat and add the cilantro. Bring the broth to a simmer and cook until it reduces to 8 cups, about 1 hour. Discard the cilantro. Stir in the lime juice. Season with salt and pepper, and add more lime juice if desired. Return the chicken to the broth. Top with cilantro, tomatoes, avocado, queso fresco, tortillas and roasted corn, if using.

MEXICAN CHICKEN TORTILLA SOUP

Mexican chicken tortilla soup image

A hearty Central American soup with complex flavours and textures. If you can make it the day before serving, the flavours will intensify

Provided by Cassie Best

Categories     Main course, Soup, Supper

Time 2h

Number Of Ingredients 19

1.2kg whole chicken
5 fat red chillies , 4 left whole but pierced a few times with a sharp knife, 1 sliced, to serve
2 dried ancho chillies
1 garlic bulb , cut in half through the centre horizontally
bunch coriander , stalks and leaves separated
1 cinnamon stick
3 tbsp vegetable oil
2 large onions , chopped
1 tbsp ground cumin
1 tbsp ground coriander
1 tbsp smoked paprika
2 x 400g cans tomatoes
1 tsp sugar
320g can sweetcorn , drained
400g can black beans , drained
zest and juice 2 limes
4 corn tortilla , quartered and cut into strips
2 avocados
200g feta or queso fresco, crumbled, to serve

Steps:

  • Put the chicken in a large pan with the whole and dried chillies, garlic, coriander stalks and cinnamon, cover with cold water, then set over a medium heat. When the liquid comes to the boil, reduce to a gentle simmer and cover with a lid. Cook for 30 mins, then turn off the heat and leave the chicken in the stock to cool for 20 mins.
  • Remove the chicken, strain the liquid into a large jug (you should have about 800ml) and discard the aromatics. Return the liquid to the pan and simmer until it has reduced to about 600ml, then pour back into the jug.
  • Heat 1 tbsp oil in the pan, add the onion and cook for 8-10 mins until soft and translucent, then stir in the spices, tomatoes and sugar. Add the chicken stock to the pan, season well and simmer with the lid ajar for 30 mins.
  • While the soup cooks, remove the skin from the chicken and finely shred the meat. Add to the soup along with the sweetcorn, beans, lime zest and juice to taste (save a little to toss through the avocado), and cook for 5 mins more.
  • Heat the remaining oil in a frying pan and add the tortilla pieces. Fry until golden and crispy, then drain on kitchen paper. Halve and peel the avocado, cut into small chunks and toss through the remaining lime juice. Serve the soup in bowls topped with the crispy tortillas, coriander leaves, sliced chilli, avocado and feta.

  • In a large pot, heat the oil and butter over medium heat. Add the onions, garlic, and green pepper and cook, stirring occasionally, until tender and just starting to brown, about 15 minutes. (Turn the heat to medium-low if the mixture is browning too quickly.)
  • Add the flour and cook, stirring constantly, for 1 minute. Add the chicken broth, cut tortillas, cumin, chili powder, salt, and cayenne and bring to a boil. Turn the heat down to low and simmer, uncovered, for 15 minutes.
  • Remove the pot from the heat, then use a handheld immersion blender to purée the soup until completely smooth. (Alternatively, let the soup cool slightly and use a blender to purée in batches. Be sure to remove the center knob on the blender top and cover with a dish towel to avoid splatters.) Taste and adjust seasoning, if necessary. Stir in the chicken, if using, then ladle the soup into bowls and serve with optional additions.
  • Note: I usually use leftover or rotisserie chicken for this soup, but if you want to cook the chicken from scratch, you’ll need two bone‑in chicken breasts. Preheat the oven to 425°F and set an oven rack in the middle position. Place the chicken breasts on an aluminum foil–lined baking sheet, season with salt and pepper, and cook for 35 to 40 minutes, or until the chicken is cooked through. Let cool, then pull the meat off the bone and cut into bite-sized pieces.
