Swiss Vegetable Medley image

Frozen vegetables make this side dish casserole recipe super simple to assemble. Choose from several combinations of vegetables.

Number Of Ingredients 6

2 16 ounce package loose-pack frozen broccoli, cauliflower, and carrots, thawed
2 10.75 ounce can condensed cream of mushroom soup
2 cup (8 oz.) shredded Swiss cheese
0.667 cup dairy sour cream
0.5 teaspoon black pepper
2 2.8 ounce can French-fried onions

Steps:

  • In a large bowl combine the thawed vegetables, soup, half of the Swiss cheese, the sour cream, and pepper. Stir in half of the French-fried onions. Spoon vegetable mixture into a 3-quart rectangular baking dish.
  • Bake, covered, in a 350 degree F oven for 30 minutes. Uncover and sprinkle with the remaining cheese and remaining French-fried onions. Bake about 5 minutes more or until heated through. Makes 12 servings.

If your looking for a change from the original green bean casserole for Holidays and Sunday dinner this is it. My Mom used to make this when we were having company for dinner and I made it when my boys were small. Cheese is always a good way to get your kids to eat their veggies.

16 oz california frozen vegetables, thawed and drained
1 can(s) cream of mushroom soup
4 oz swiss cheese, shredded
1/3 c sour cream
1/4 tsp pepper
1 jar(s) pimento, chopped and drained (optional)
2 oz french fried onions

Steps:

  • 1. Combine vegetables and soup, 1/2 cup cheese, sour cream, pepper, pimento and 1/2 can of onions.
  • 2. Pour into 1 quart casserole.
  • 3. Bake covered at 350 degrees for 30 minutes.
  • 4. Top with rest of cheese and onions and bake uncovered for 5 minutes.

1 package (16 ounces) frozen broccoli, carrots, and cauliflower medley, thawed and drained
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1/2 cup sour cream
1/4 teaspoon pepper
1 jar (4 ounces) chopped pimientos, drained
1 cup shredded Swiss cheese, divided
1 can (2.8 ounces) french-fried onions, divided

Steps:

  • In a bowl, combine vegetables, soup, sour cream, pepper, pimientos and 1/2 cup cheese. Stir in half of the onions; mix well. Pour into an ungreased 1-qt. casserole. Cover and bake at 350° for 30-35 minutes or until bubbly. Uncover; sprinkle with remaining cheese and onions. Return to the oven until cheese is melted, about 5 minutes.

1 can (10 1/2 oz.) Campbell's® Condensed Cream of Mushroom Soup
1/3 cup sour cream
1/8 tsp ground black pepper
1 (16 ounce) bag frozen vegetable combination, thawed
1 1/3 cups Original Crispy Fried Onions
1 cup Shredded Swiss cheese

Steps:

  • HEAT oven to 350°F. Combine soup, sour cream and pepper in 2-quart baking dish; mix well. Stir in vegetables, 2/3 cup Crispy Fried Onions and 1/2 cup cheese.
  • BAKE 30 minutes or until hot; stir. Top with remaining cheese and onions. Bake 5 minutes until onions are golden.

I think I may have gotten this recipe off the back of a bag of vegetables many years ago. I tried it and have kept it in my recipe collection ever since. It's so easy to put together and so flavorful. I hope you enjoy it.

1 can(s) condensed cream of chicken soup
1 c shredded swiss cheese
1/3 c sour cream (regular or low fat)
1/4 tsp black pepper
1 can(s) durkee dried french fried onions

Steps:

  • 1. Combine vegetables, soup, ½ cup cheese, the sour cream, pepper and ½ can of dried french fried onions. Pour into a 1 qt. casserole dish. Bake, covered, at 350 degrees for 30 minutes. Top with remaining cheese and onions; bake, uncovered about 5 minutes longer. (This recipe can be easily doubled or tripled if having a very large gathering)

Another really good recipe from Mom. This one is delicious and easy to double. Remember to double baking time also though. I also like to add a little garlic powder and seasoned salt to mine. I also never add the pimiento, so leaving them out doesn't take away from the dish. Also a good one for those people that don't usually like veggies.

  • Preheat oven to 350 degrees F (175 degrees C). Set aside 1/4 cup of cheese, and 1/4 cup of onions.
  • In a medium-size mixing bowl, combine thawed vegetables, mushroom soup, 3/4 cup Swiss cheese, sour cream, remaining fried onions, and pepper. Pour ingredients into a 2 quart casserole dish.
