4 medium zucchini grated and "sweat" out
1/4 tsp salt or to taste
1/4 cup Parmesan cheese freshly grated
2 green onions chopped
2 large eggs
3 cloves garlic chopped
4 leaves sage chopped
1 pinch nutmeg ground
1 pinch onion powder
1/4 tsp black pepper ground, or to taste
1 tsp olive oil or as needed

Steps:

  • Sweat out the zucchini. Mix Parmesan cheese, nutritional yeast flakes, eggs, green onions, garlic, basil, nutmeg, onion powder, and black pepper in a bowl; add zucchini. Stir to combine. Heat olive oil in a frying pan over medium heat. This is a cheesy zucchini dish in which the zucchini are breaded and fried, spread with sour cream, topped with sharp cheddar cheese and baked.

12 small zucchinis
1 ½ cups all-purpose flour
1 tablespoon garlic powder
salt and pepper to taste
1 cup milk
2 teaspoons garlic powder
salt and pepper to taste
16 ounces sour cream
3 cups shredded sharp Cheddar cheese
⅓ cup vegetable oil

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray one 9x13 inch baking dish with non-stick spray.
  • Bring a pot of water to a boil; blanch zucchini, drain and cool.
  • In a shallow bowl, mix together 1 1/2 cups flour, 1 tablespoon garlic powder and salt and pepper to taste. In a separate bowl, combine the milk, 2 teaspoons garlic, salt and pepper to taste.
  • Cut ends off zucchini and then cut in thirds. Roll zucchini in flour mixture, then in milk and again in flour to cover completely. Set aside on parchment paper until all pieces are covered.
  • Heat large frying pan over medium high heat, add oil and brown zucchini on all sides. Remove and arrange in a 9x13 inch baking dish. Spread sour cream over zucchini and top with cheese.
  • Bake for 20 to 25 minutes or until cheese is beginning to brown. Remove from oven and let sit for 10 minutes and serve.

Steps:

2 medium zucchini (about 3/4 pound)
2 tablespoons grated red onion
2 extra-large eggs, lightly beaten
6 to 8 tablespoons all-purpose flour
1 teaspoon baking powder
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
Unsalted butter and vegetable oil

Steps:

  • Preheat the oven to 300 degrees F.
  • Grate the zucchini into a bowl using the large grating side of a box grater. Immediately stir in the onion and eggs. Stir in 6 tablespoons of the flour, the baking powder, salt, and pepper. (If the batter gets too thin from the liquid in the zucchini, add the remaining 2 tablespoons of flour.)
  • Heat a large (10 to 12-inch) saute pan over medium heat and melt 1/2 tablespoon butter and 1/2 tablespoon oil together in the pan. When the butter is hot but not smoking, lower the heat to medium-low and drop heaping soup spoons of batter into the pan. Cook the pancakes about 2 minutes on each side, until browned. Place the pancakes on a sheet pan and keep warm in the oven. Wipe out the pan with a dry paper towel, add more butter and oil to the pan, and continue to fry the pancakes until all the batter is used. The pancakes can stay warm in the oven for up to 30 minutes. Serve hot.

1 pound russet or Idaho potatoes
1/2 cup coarsely grated Parmigiano Reggiano
1 tablespoon flour
1/2 teaspoon baking powder
1 tablespoon chopped chives
1 whole egg
2 egg whites
Freshly ground pepper to taste
Nonstick pan spray

Steps:

  • Wash, trim and grate the zucchini, using the grating blade of a food processor. Squeeze out the excess liquid with your hands.
  • Peel the potatoes, and cut them into long strips. Process the potatoes, using the julienne blade of a food processor. Squeeze out the excess liquid with your hands.
  • Combine the zucchini, potatoes, cheese, flour, baking powder and chives, and mix well.
  • Beat the whole egg and whites, and stir into the batter, along with the pepper.
  • Heat a nonstick pan until it is very hot; reduce the heat to medium-high, and spray with nonstick spray.
  • Spoon heaping tablespoons of batter into the pan, and flatten slightly. Brown on one side; turn and lightly brown on the second side. Serve with light sour cream.

If I'm baking something else in the oven, I'll just put this in till the meat or whatever is done, then crank up the broiler and top it off in there. And of course, you can use more cheese or anything else you desire.

1 chicken bouillon cube
1 teaspoon salt
1 cup cheddar cheese, shredded

  • Preheat broiler.

  • Add zucchini.
  • Cover and boil for 3 to 5 minutes until just tender-crisp; drain well.
