CHEESY BAKED MASHED POTATOES
These potatoes are incredibly indulgent and a great make ahead side dish!

Steps:
- Preheat oven to 350°F. Grease a 9×13 baking dish with 2 tablespoons of butter, set aside.
- Place the potatoes in a large pot and fill with water until just covered.
- Bring the potatoes to a boil. Reduce heat to a low boil and cook for 20 minutes, until the potatoes are tender.
- Drain the potatoes and place them into a large bowl. Mash the potatoes using a hand masher.
- Add in the remaining 1/2 cup butter, cream cheese, sour cream, 1 1/2 cups grated cheddar cheese, salt, pepper, garlic powder, and egg.
- Using a hand mixer, beat the potatoes until all the ingredients are combined, and potatoes are creamy.
- Spread the potatoes into the prepared pan.
- Cover with foil and bake for 40-45 minutes, or until heated through.
- Garnish with chives and/or bacon if desired.

- 1. Mix together potatoes, 1/4 cup of each cheese, salt pepper, egg, and bread crumbs.
- 2. Melt a pat of butter in a glass pie dish. This will keep potatoes from sticking and add flavor.
- 3. Place potato mixture in the dish and spread evenly.
- 4. Top with remaining pinches of cheeses.
- 5. Bake for 30 minutes at 400 F.

- Peel and boil the potatoes in a pan of slightly salted water for 30 minutes or until soft.
- Drain the potatoes then mash with as much butter and milk as desired.
- Mash in the grated cheese and mix in a pinch of the mixed herbs, salt and pepper.
- Spoon mash mixture into an oven proof dish so the mashed potato reaches the sides.
- Top with the remaining cheese, paprika for colour and some more herbs if desired.
- Grill/broil under a high heat until golden and bubbling.

Make this complete casserole up to a day in advance cover tightly and refrigerate, when ready to bake just pop in the oven and bake for a little longer time than stated. Add in some green onions and cooked crumbled bacon id desired. Use only russet potatoes for this! Prep time includes cooking potatoes. This makes a wonderful side dish and all amounts can be adjusted to taste.

- Cook the potatoes in boiling salted water until tender (about 20 minutes) drain and transfer to a large bowl.

This is a favorite mashed potato casserole recipe handed down through the family. These cheesy mashed potatoes are the best you'll ever taste! Everyone is sure to love it. - Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, 15 to 20 minutes.
- While the potatoes are cooking, preheat the oven to 350 degrees F (175 degrees C).
- Drain potatoes and return to the pot. Mash while hot. Add sour cream, butter, Parmesan cheese, cream cheese, Cheddar cheese, green onions, salt, and pepper; beat until well blended. Transfer to a 3-quart casserole.
