Number Of Ingredients 10

1/2 large head cabbage, shredded
2 large carrots, shredded
1/2 cup finely chopped green pepper
2 tablespoons finely chopped onion
DRESSING:
1/4 cup sugar
3 tablespoons cider vinegar
2 tablespoons canola oil
1 teaspoon celery seed
1/2 teaspoon salt

Steps:

  • In a large bowl, combine the cabbage, carrots, green pepper and onion. In a small bowl, whisk the dressing ingredients. Pour over cabbage mixture and toss to coat. Cover and chill for 4 hours before serving.

This light and tangy low-calorie (and low carb!) coleslaw is perfect for 21 Day Fix and Weight Watchers.

6 c coleslaw mix
1/4 c parsley (fresh, chopped - or 1 tbsp dry)
2 tbsp avocado mayo (any mayo will work)
1 tbsp apple cider vinegar
1 tsp whole celery seed
salt and pepper (to taste)

Steps:

  • Add coleslaw mix, parsley, mayo, cider vinegar, amd celery seed to a large glass or nonreactive bowl and stir to combine. Season with salt and pepper to taste.
  • Serve immediately or place in the fridge for a couple hours to chill. The flavors will come together better if you have a chance to let it chill.

I've been trying to create a coleslaw dressing with the lowest possible fat intake. This is as low as I could go without taking away the flavor. It's a family favorite and we use it with all kinds of meals, in wraps, in sandwiches, with burgers, and as a side during BBQs.

2 tablespoons extra-light mayonnaise
¼ cup low-fat milk
1 tablespoon white vinegar
1 tablespoon apple cider vinegar
1 tablespoon fresh lemon juice
1 teaspoon white sugar
1 teaspoon salt
1 head cabbage, finely shredded
1 small onion, minced
1 carrot, shredded and chopped

Steps:

  • Whisk mayonnaise, low-fat milk, white vinegar, apple cider vinegar, lemon juice, sugar, and salt together in a bowl and allow dressing to stand while preparing vegetables, about 20 minutes.
  • Pour dressing over cabbage, onion, and carrot in a large salad bowl and toss to combine. For best flavor, refrigerate slaw at least 2 hours to overnight.

I slightly altered this from a recipe found in Cooking Light Magazine. I substituted splenda for the sugar and dijon for the whole-grain mustard. Any type of mustard however would be outstanding in this simple dish.

1/4 cup apple cider vinegar
2 tablespoons Dijon mustard
4 (1 g) packets Splenda sugar substitute
2 tablespoons low-fat mayonnaise
1/8 teaspoon salt
1/8 teaspoon pepper
2 (10 ounce) packages coleslaw mix
1 cup grated carrot
1 cup thin sliced red onion

Steps:

  • Combine first 6 ingredients in a bowl and stir well with a whisk.
  • Combine coleslaw mix, carrots and onion in a large bowl.
  • Add mustard mixture to cabbage mixture and toss well to coat.
  • Cover and chill for 20 to 30 minutes.
  • Stir before serving.
