Loaded Black Bean Sweet Potato Boats image

Loaded sweet potato boats with black beans, manchego cheese, salsa, onion, and simple avocado crema.

5 small sweet potatoes
1 15-ounce can black beans ((drained and rinsed))
~1/4 cup grated Manchego or other Mexican cheese ((such as Cotija or Pepperjack))
Avocado crema ((as original recipe is written, 1/4 cup light sour cream, 1/2 ripe avocado, & lime juice))
Fresh salsa, cilantro, and green onion ((for topping and dipping))

Steps:

  • Bake sweet potatoes in a 400-degree F (204 C) oven directly on the baking rack for 40-45 minutes or until tender to the touch.
  • In the meantime, make avocado crema by mixing 1/2 a ripe avocado, 1/4 cup light sour cream and a bit of lime juice until creamy and smooth (amounts as original recipe is written // adjust if altering batch size). Refrigerate until potato boats are ready to serve.
  • Remove from oven to cool to the touch, but leave oven on.
  • Carefully cut sweet potatoes in half and scoop out insides to make "boats." Leave ~ 1/4 - 1/2 inch of flesh so they don't become too fragile and difficult to handle.
  • Reserve leftover sweet potato for sweet potato almond butter muffins, or another recipe of your choice.
  • Place sweet potato boats face up on a baking sheet and fill with black beans and top evenly with grated cheese.
  • Pop back in oven to warm through and remove when cheese is melted and bubbly.
  • Remove from oven and arrange on a serving platter. Top with salsa, avocado crema, chopped green onion and fresh cilantro. Additional toppings might include guacamole, hot sauce and lettuce.
  • Will reheat well the next day or two in the microwave or oven.

2 medium sweet potatoes (8 to 10 ounces each), scrubbed and dried
1 tablespoon olive oil
Kosher salt
1 cup cooked black beans (if canned, rinsed and drained)
1 cup shredded sharp Cheddar
Black pepper

Steps:

  • Heat the oven to 425 degrees and line a sheet pan with parchment paper. Halve sweet potatoes lengthwise, then brush all over with olive oil and sprinkle both sides with salt.
  • Place cut side down on prepared sheet and roast for 30 to 40 minutes, or until completely cooked through. Take sweet potatoes out of the oven, turn them over and let cool slightly. Use a fork to rough up the flesh and slightly flatten the potatoes. Season with salt and pepper.
  • Divide half the cheese among the potato halves. Spoon the black beans over them, then cover with the remaining cheese. Return the pan to the oven and bake for another 5 minutes, until the cheese has melted and the beans have warmed through. Season with salt and pepper. Serve warm.

Healthy Air Fryer Twice Baked Sweet Potato with Black Beans image

Using an air fryer to cook this healthy Southwest twist on a twice-baked potato ensures delicious crispy skin and creamy filling. These sweet potatoes are also great to make ahead of time; refrigerate after scooping and filling, and then when you are ready to serve just add a couple minutes onto the second cook in the air fryer.

4 medium sweet potatoes (10 to 12 ounces each), scrubbed
1 tablespoon olive oil
Kosher salt and freshly ground black pepper
1/4 cup plain Greek yogurt
1 tablespoon unsalted butter, at room temperature
2 teaspoons fresh lime juice
1/2 teaspoon chili powder
1/2 teaspoon garlic powder
1/4 teaspoon cumin
One 15-ounce can black beans, rinsed and drained
1/2 cup plus 3 tablespoons shredded pepper jack cheese or sharp Cheddar
1 avocado, diced
2 scallions, greens thinly sliced
Hot sauce, for serving, optional
Honey, for serving, optional

Steps:

  • Toss the sweet potatoes with the olive oil, 1 teaspoon salt and a few grinds of pepper in a large bowl until evenly coated. Add the potatoes to a 6-quart air fryer and cook at 380 degrees F, flipping halfway through, until crispy on the outside and tender on the inside, about 40 minutes (see Cook's Note). Let cool slightly.
  • Use a paring knife to trim the top off the potatoes lengthwise, then carefully scoop out the flesh, leaving a 1/2-inch border. Your potatoes should look like little boats. Place the scooped flesh and any flesh trimmed off the top in a medium bowl and mash it with the yogurt, butter, lime juice, chili powder, garlic powder, cumin, 1 teaspoon salt and a couple grinds of pepper until smooth. Fold in the black beans and 1/2 cup of the shredded cheese. Spoon the filling into the sweet potato shells, creating a heaping mound in each, and top with the remaining 3 tablespoons cheese. Cook in the air fryer at 380 degrees F until the cheese is melted, 6 to 8 minutes.
  • Top the sweet potatoes with the diced avocado and sliced scallion greens and drizzle with some hot sauce and/or honey if using.

1/4 cup raw pepitas or 1/4 cup sunflower seeds
3 1/3 tablespoons olive oil, divided
1 1/4 teaspoons kosher salt, divided
fresh ground black pepper
4 medium sweet potatoes, halved lengthwise (about 2 3/4lb.)
1 (15 1/2 ounce) can black beans or 1 (15 1/2 ounce) can pinto beans, drained and rinsed
6 ounces monterey jack cheese (about 1 1/2 cups) or 6 ounces cheddar cheese, grated (about 1 1/2 cups)
1 ripe avocado, chopped
cilantro (optional)
sliced fresh chili pepper (optional)
1 lime (optional)

Steps:

  • Preheat oven to 425°F.
  • Toss pepitas with 1 teaspoon of the oil, ¼ teaspoon of the salt, and several grinds pepper on a rimmed baking sheet.
  • Rub potatoes with remaining 3 tablespoons oil and place cut side down on a second rimmed baking sheet.
  • Add a few grinds of pepper.
  • Transfer both baking sheets to oven.
  • Bake pepitas until golden, 5 to 6 minutes.
  • Remove from oven.
  • Continue baking potatoes until very tender, 22 to 28 minutes more.
  • Let cool slightly, about 5 minutes, then scoop potato flesh into a large bowl.
  • Return potato skins to baking sheet. Broiling the potato skins before filling them with the sweet potato mixture crisps them up so they can serve as a sturdy base.
  • Increase oven temperature to broil and position top rack 6 inches from heat. Broil potato skins until crispy, 1 to 2 minutes.
  • Add black beans, a few grinds pepper, 1 cup of the cheese, and remaining 1 teaspoon salt to sweet potato flesh and stir to combine.
  • Divide mixture among skins and top with remaining ½ cup cheese.
  • Return to oven and broil until cheese is melted, 2 to 3 minutes.
  • Top with avocado and pepitas.
  • Top with avocado, chile peppers, and/or cilantro, as desired.
  • Serve with lime wedges.

4 Idaho baking potatoes, scrubbed
4 tablespoons unsalted butter
1 garlic clove, minced
1 shallot, minced
1/2 cup sour cream
2 tablespoons minced chives
2 cups grated white Cheddar
Kosher salt and freshly cracked black pepper

Steps:

  • Preheat the oven to 425 degrees F.
  • Stab the potatoes with a fork or paring knife a few times on all sides. Place on a baking sheet and bake until fork-tender, 60 to 80 minutes. Let cool slightly (but keep the oven on).
  • Meanwhile, melt the butter in a small skillet over medium heat. Add the garlic and shallot and cook until softened but not browned. Set aside.
  • Once the fully cooked potatoes are cool enough to handle, cut them in half lengthwise. Using a spoon or melon baller, scoop out the flesh of the potatoes, leaving a 1/4-inch rim to preserve the shape of the shells.
  • In a large bowl, mash the potato insides until mostly smooth. Add the butter mixture, sour cream, chives and 1 cup of Cheddar and mix together. Season with salt and pepper to taste.
  • Spoon the mixture evenly into the 8 shells. Top with the remaining 1 cup cheese. Bake until the cheese is golden brown and bubbly, 25 to 30 minutes. Serve warm.

2 teaspoons olive oil
2 teaspoons salt

1 pinch paprika, or to taste

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).

4 ounces American cheese, sliced into strips
1 tablespoon butter
¾ cup sour cream

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bake potatoes for 1 hour or until soft.

1 tablespoon olive oil
2 shallots, finely chopped
1/4 cup grated asiago cheese
