1 package (8 ounces) cream cheese, softened
1 1/2 cups shredded Swiss cheese (6 ounces)
1/2 cup Thousand Island dressing
4 ounces deli sliced corned beef, chopped
1/2 cup well-drained sauerkraut
Pretzel crackers, if desired
Cocktail rye bread slices, if desired
Chopped fresh chives, if desired
Sliced radishes, if desired

Steps:

  • Heat oven to 400°F.
  • Mix cream cheese, 1 cup of the Swiss cheese, the dressing and corned beef. Spread in pie plate, 9x1 1/4 inches, or quiche dish, 9x1 1/2 inches. Top with sauerkraut and remaining 1/2 cup Swiss cheese. (Cover and refrigerate up to 24 hours if desired.)
  • Bake about 15 minutes or until bubbly around edge. Serve hot with pretzel crackers or cocktail bread. Garnish with chives and radishes.

1 1/2 pounds lean ground beef
1 jar (26 ounces) tomato pasta sauce (any variety)
1 package (8 ounces) cream cheese, softened
1/3 cup sour cream
2 cups shredded Parmesan cheese
3/4 teaspoon Italian seasoning
2 cups Original Bisquick™ mix
1 1/2 cups milk

Steps:

  • Heat oven to 375°F. Spray rectangular baking dish, 13x9x2 inches, with cooking spray. Cook beef in 10-inch skillet over medium-high heat 5 to 7 minutes, stirring occasionally, until brown; drain. Stir in pasta sauce.
  • Mix cream cheese, sour cream, 1/2 cup of the Parmesan cheese and 1/4 teaspoon of the Italian seasoning in small bowl until smooth and creamy.
  • Spoon half of the beef mixture (about 2 cups) into baking dish. Drop spoonfuls of cream cheese mixture evenly onto beef mixture. Spoon remaining beef mixture over cream cheese mixture.
  • Stir 1 cup of the Parmesan cheese, the Bisquick mix and milk in medium bowl until blended. Pour over beef mixture.
  • Bake uncovered 30 to 35 minutes or until light golden brown. Sprinkle with remaining 1/2 cup Parmesan cheese and 1/2 teaspoon Italian seasoning. Bake 5 minutes longer. Let stand at least 10 minutes before cutting.

4 boneless, skinless chicken breast halves (1 1/4 pounds)
2 cups cheese-flavored crackers, crushed (1 cup)
1/2 cup finely shredded Cheddar cheese (2 ounces)
1 egg
Barbecue sauce, ketchup or ranch dressing, if desired

Steps:

  • Heat oven to 400°. Spray jelly roll pan, 15 1/2x10 1/2x1 inch, with cooking spray.
  • Cut chicken lengthwise into 1/2-inch strips. Mix crushed crackers and cheese in large resealable plastic bag. Beat egg in large bowl; add chicken strips to egg and toss to coat. Remove chicken from egg, allowing excess to drip off; place chicken in bag of cracker mixture. Seal bag and shake to coat evenly with cracker mixture. Place chicken strips in single layer in pan.
  • Bake uncovered 10 to 12 minutes or until no longer pink in center. Serve with barbecue sauce.

1/2 cup finely chopped sweet onion (such as Walla Walla or Maui)
1/2 cup shredded Swiss cheese (2 oz)
1/2 cup diced yellow bell pepper
1/2 cup mayonnaise or salad dressing
16 slices firm white bread

Steps:

  • Heat oven to 375°F. In small bowl, stir together all ingredients except bread.
  • Spray cookie sheet with cooking spray. Cut star shape from each bread slice with 3- or 4-inch star-shaped cookie cutter. Spread about 1 tablespoon cheese mixture on each bread star; place on cookie sheet.
  • Bake 12 to 15 minutes or until cheese is melted and bottoms of bread stars are golden brown.

As it bubbles in the oven the flavor permeates the air. It is easy to make an a welcome addition to a buffet, game day party or any time you need something to serve friends.
