Flaky puff pastries hold a tasty topping of caramelized onions, sun-dried tomatoes and Camembert cheese.

1 sheet frozen puff pastry (from 17.3-ounce package), thawed
2 tablespoons butter or margarine
1 sweet onion, cut lengthwise into fourths and thinly sliced (2 1/2 cups)
2 teaspoons packed brown sugar
1/4 cup sun-dried tomatoes in oil and herbs, drained and finely chopped
1 round (4 ounces) Camembert cheese, cut into 3/4x3/4x 1/4-inch pieces

Steps:

  • Heat oven to 400°. Spray 2 cookie sheets with cooking spray. Unfold pastry on lightly floured surface. Roll into 12-inch square, trimming edges to make even. Cut into 6 rows by 6 rows to make 36 (2-inch) squares. Place on cookie sheets. Bake 12 to 15 minutes, rearranging cookie sheets after 6 minutes, until puffed and golden brown. Remove from cookie sheets to wire rack. Cool until slightly warm.
  • Meanwhile, melt butter in 8-inch skillet over medium heat. Cook onion in butter 15 to 20 minutes, stirring occasionally, until tender. Stir in brown sugar. Cook and stir until onions are coated. Stir in tomatoes. Remove from heat; keep warm.
  • Place cooled pastry squares on same cookie sheets. Press cheese piece into center of each pastry square. Fill with about 1 teaspoon onion mixture. Bake about 1 minute or until cheese is melted.

1 recipe Savory Pie Crust, recipe follows
1 egg
2 pounds ripe tomatoes, peeled
Salt and freshly ground black pepper
1/3 cup plain bread crumbs
4 tablespoons mayonnaise
3/4 cup thinly sliced Vidalia onions
1/4 teaspoon fresh thyme leaves
2 tablespoons chiffonade fresh basil
1/2 cup grated fontina cheese
1/2 cup grated mozzarella cheese
2 tablespoons extra-virgin olive oil
2 tablespoons grated Parmesan
1 1/4 cups all-purpose flour
2 teaspoons Essence, recipe follows
1/2 teaspoon salt
4 ounces (1 stick) cold unsalted butter, cut into pieces
3 to 4 tablespoons ice water
1 tablespoon dried thyme
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
2 1/2 tablespoons paprika

Steps:

  • Preheat oven to 375 degrees F.
  • Roll out the pie crust on a lightly floured surface to fit a deep 9 or 10-inch pie pan. Place the pastry in the pie pan and crimp edges decoratively. Refrigerate at least 30 minutes, then line with aluminum foil. Fill with pie weights and bake for 12 to 15 minutes, or until lightly golden around the edges. Remove foil and pie weights, and return to the oven for 3 to 5 minutes. Remove from the oven and transfer to a cooling rack to cool. Crack the egg in a small bowl, reserving yolk for the filling, separately. Lightly beat the egg white with a fork, then brush the surface of pie crust with a light coating of egg white and allow to cool.
  • Slice the tomatoes, discarding the stem and root ends, into 1/4-inch slices and lightly season with the salt and pepper.
  • Sprinkle about 1/3 of the bread crumbs in the bottom of the pie crust. In a small bowl combine the mayonnaise with the reserved egg yolk and stir until smooth. Place a layer of tomatoes in the bottom of the piecrust over the breadcrumbs, using about half of the tomatoes, then top with half of the sliced onions. Drizzle with half of the mayonnaise mixture, half of the thyme and basil, half of the fontina and half of the mozzarella cheeses. Top with half of the remaining breadcrumbs then top with the remaining tomato slices, remaining onions, remaining fontina and mozzarella, remaining mayonnaise mixture, and remaining thyme and basil. Top with the remaining bread crumbs and drizzle with the olive oil. cover with the Parmesan cheese, place in the oven and bake until bubbly hot and golden brown, about 1 hour and 15 minutes. Remove from the oven and allow to cool for at least 30 minutes before slicing and serving. Serve warm or at room temperature.
  • 2 teaspoons Essence, recipe follows
  • In the bowl of a food processor combine flour, Essence, salt, and butter and process until mixture resembles coarse crumbs. While the motor is running, add water in increments until dough comes together to form a ball. Transfer dough to a lightly floured surface and shape into a flat disc. Refrigerate overnight or at least one hour.
  • Remove from refrigerator and roll out on a lightly floured surface to desired shape and thickness.
  • Combine all ingredients thoroughly.

* TIP: For a little extra zest, substitute shredded cheddar cheese with shredded hot pepper cheese.

Steps:

  • 1. Preheat oven to 425°F. Coat two large baking sheets with nonstick cooking spray.
  • 2. In a medium saucepan over medium heat, combine butter, milk and sour cream, and cook for 2 to 3 minutes, or until a full boil is reached. Add the flour all at once and stir vigorously with a wooden spoon, until dough mixture pulls away from the sides of saucepan and forms a ball. Continue to cook for another minute or until excess moisture is gone, stirring constantly. Transfer to a large bowl and cool for 5 minutes.
  • 3. Beat in eggs one at a time by hand or with an electric mixer on low speed, making sure each egg is fully incorporated into the dough before adding the next egg. Beat the dough until it is shiny and smooth. Stir in cheese, Potatoes and salt, and mix well. Drop a tablespoon of dough at a time onto baking sheets, about 1-½ inch apart.
  • 4. Bake uncovered for 28 to 32 minutes, or until golden brown and firm to the touch. Serve warm or at room temperature.

  • You might be tempted to use pre-made pie crust that you can purchase at the grocery store for this amazing galette. However, you really should go the extra step and make this simple crust. Part of the reason is that the food processor does most of the work. The other reason is that the crust is delicately flavored and amazingly flaky.For starters, I added the flour and salt to my food processor, fitted with a steel blade, and pulsed it 5 or 6 times to combine everything. Then I added the cold butter which I had cut into small pieces and pulsed the food processor 7 or 8 times until the mixture resembled coarse meal.
  • Finally, I added the cold water to the food processor and pulsed it 7 or 8 times, until the dough came together in my hand.
  • I turned the dough out onto a floured surface and formed it into a 6-inch disk that was about 1/2-inch thick. Then, I tightly wrapped the dough in plastic wrap and refrigerated it for about 30 minutes.
  • Using my mandoline, I sliced the tomato and onion into very thin slices. For my mandoline, this meant 3.5 mm slices. I could have used a sharp knife, but I wanted the tomato and onion slices to be the same thickness so that they would cook evenly.A major key to ensuring the galette was not soggy was removing excess moisture from both the tomato and onion slices. To do this, I placed the tomato and onion slices in a single layer on a doubled piece of paper towels. Then, I sprinkled both with some salt to help draw out the moisture.
