CHEESY CAULIFLOWER PATTIES
These cheesy cauliflower patties are easy and simple to make and everyone loves these.

Steps:
- 1. Cut cauliflower into florets and cook in boiling water until tender about 10 minutes. Drain. Mash the cauliflower while still warm. Stir cheese, eggs, panco, cayenne and salt to taste.
- 2. Coat the bottom of a griddle or skillet with olive oil over medium high heat. Form the cauliflower mixture into patties about 3 inches across.
- 3. Cook until golden brown and set about 3 minutes per side. Keep each batch warm in the oven while you cook the rest.

Steps:
- Cook cauliflower till very tender and separate and chop into tiny pieces.
- Beat the eggs. Add bisquick, cheese, garlic powder and cauliflower until blended.
- Heat oil to coat and large frying pan.
- Drop spoonfuls of cauliflower mixture into the pan allowing room for patties to spread.
- Cook till brown on both sides and drain on plate covered with paper towels.
- Sprinkle with additional parmesan cheese if desired.
- Serve these as an appetizer or a side dish with Zucchini sticks, stuffed mushrooms, etc.

This is one of my Mother's recipes and it is delicious. If cauliflower is your favorite vegetable then you'll like this. I'm pretty sure of it because cauliflower is not one of my favorite veggies and I like this one a lot.

- Cook cauliflower in water until soft.
- Mash cauliflower.
- Let it cool enough to handle.
- Add egg and breadcrumbs or flour and mix well.
- Shape into patties.
- Heat oil in frying pan.

- Fry three or four minutes on each side or until brown.

- Place cauliflower florets in a food processor and pulse until it resembles small crumbs. Then, transfer to a bowl. Microwave for 3 minutes or until slightly softened. Let cool to room temperature.
- When cooled, squeeze out the excess liquid using a kitchen towel. Then, transfer cauliflower rice to a large bowl and add 2 eggs, white cheddar cheese, panko bread crumbs, onion powder, garlic powder, cayenne pepper, salt, and pepper. Mix until completely combined. If the mixture doesn't stick together, you can add one more egg to the cauliflower mixture.
