1-1/2 pounds bulk pork sausage
9 large eggs, lightly beaten
3 cups whole milk
9 slices bread, cubed
1-1/2 cups shredded cheddar cheese
1/2 pound sliced bacon, cooked and crumbled
1-1/2 teaspoons ground mustard

Steps:

  • In a large skillet, cook sausage over medium heat until no longer pink; drain. Add the eggs, milk, bread, cheese, bacon and mustard. Transfer to a greased shallow 3-qt. baking dish. Cover and refrigerate overnight. , Remove from the refrigerator 30 minutes before baking. Cover and bake at 350° for 60-65 minutes or until a knife inserted in the center comes out clean. Let stand for 5 minutes before serving.

I got this recipe from a home economics instructor when I was teaching in Oklahoma. I think it represents the Southwest because of its spicy flavor. It can be used as an appetizer before a Mexican meal or served as a snack.

4 cups shredded cheddar cheese
1 cup butter, softened
2 cups all-purpose flour
1/2 teaspoon salt
1/2 teaspoon black or cayenne pepper
8 ounces pork sausage, cooked and drained

Steps:

  • In large bowl, beat the cheese, butter, flour, salt and pepper on medium-low speed. Stir in cooked sausage. Form dough into 1-in. balls; place on ungreased baking sheet. , Bake at 400° for 15-20 minutes or until light golden brown. Serve warm or cold. Store in refrigerator or freezer.

4 tubes (6 ounces each) small refrigerated flaky biscuits (5 count each)
1/4 cup stone-ground mustard
ASSEMBLY:
1/2 cup butter, softened
1/4 cup chopped green onions
1/2 cup stone-ground mustard
1/4 cup mayonnaise
1/4 cup honey
10 thick slices deli ham, quartered
10 slices Swiss cheese, quartered
2-1/2 cups shredded romaine
20 pitted ripe olives, drained and patted dry
20 pimiento-stuffed olives, drained and patted dry
40 frilled toothpicks

Steps:

  • Preheat oven to 400°. Cut biscuits in half to make half-circles; place 2 in. apart on ungreased baking sheets. Spread mustard over tops. Bake until golden brown, 8-10 minutes. Cool completely on wire racks., Mix butter and green onions. In another bowl, mix mustard, mayonnaise and honey. Split each biscuit into 2 layers., Spread biscuit bottoms with butter mixture; top with ham, cheese, romaine and biscuit tops. Spoon mustard mixture over tops. Thread 1 olive onto each toothpick; insert into stacks. Serve immediately.

1 OSCAR MAYER Smokies Smoked Sausage
1 tsp. oil
1/4 green pepper
1 bakery-style hamburger bun, split, toasted
1 tsp. GREY POUPON Harvest Coarse Ground Mustard
1 egg
1 KRAFT Singles

Steps:

  • Cut Smokie lengthwise in half, being careful to not cut through to opposite side.
  • Heat oil in nonstick skillet on medium heat. Add pepper and Smokie, cut sides down; cook 2 to 3 min. on each side or until Smokie is heated through and pepper is lightly browned, occasionally pressing pepper with back of spatula to flatten.
  • Spread cut sides of bun with mustard. Place Smokie and pepper on bottom half of bun.
  • Add egg to same skillet; cook 2 min. or until white is set and yolk is cooked to desired doneness. Add to sandwich; cover with Singles and top of bun.

Steps:

  • Preheat an oven to 400 degrees Fahrenheit and position the oven rack to the center.
  • Carefully cut the Italian sausage links lengthwise, making sure to only cut about halfway down into the sausage.
  • Insert a piece of string cheese into each sausage and then pinch the top of the raw sausage closed over the top of the cheese. Place the stuffed sausages into the bottom of a 9x9 baking dish.
  • Drizzle the cup of marinara sauce over the top of the sausages.
