NO YEAST CHEESE, GARLIC AND HERB BREAD



No Yeast Cheese, Garlic and Herb Bread image

A bread made without yeast with swirls of herb and pockets of cheese throughout. Slices well and especially great toasted!

Number Of Ingredients 11

4 tbsp fresh herbs (, finely chopped (I used a mix of dill, rosemary, parsley and thyme) (Note 1))
2 tbsp olive oil
5 oz / 150g block cheese ((cheddar or tasty), cut into 2mm / 0.1" thick slices (about 10 to 12 slices) (Note 2))
Butter for greasing
2 1/4 cups plain flour
2 tsp baking powder
1/2 tsp baking soda
1 tsp salt
1 1/4 cups buttermilk ((See Note 3 for substitute))
2 eggs
2 small garlic cloves (, crushed)

Steps:

  • Preheat oven to 180C/350F.
  • Grease a bread tin (21 x 11 cm / 8" x 4") or small cake tin with butter.
  • Mix the herbs and olive oil in a small bowl.
  • Sift the Dry Ingredients into a bowl.
  • Combine the Wet Ingredients into a bowl and whisk to combine.
  • Make a well in the centre of the Dry Ingredients. Pour the Wet Ingredients in and mix until just combined.
  • Pour 1/3 of the batter into the bread tin. Dollop half the herbs across the top then use a knife to "swirl" it into the batter up and down, and also turning the batter over (refer photo below).
  • Use half the cheese slices and push them randomly into the batter. Push some all the way in and leave some poking out of the batter.
  • Pour the remaining batter over the top. Dollop and swirl the remaining herbs, then randomly wedge in the remaining cheese, pushing most of it below the surface of the batter. Even out the surface.
  • Bake for 30 minutes, or until the top is golden. Remove from oven and cover with foil, then bake for a further 15 to 20 minutes (total baking time of 45 to 50 minutes). Check to make sure the centre is cooked by inserting a skewer - it should come out clean.
  • Turn the bread out onto a cooking rack. Allow to cool for at least 10 minutes before cutting.

1/4 cup finely chopped green onions
2 garlic cloves, minced
1/3 cup reduced-fat margarine
1/2 teaspoon ground cumin
1/4 teaspoon dried oregano
1/4 teaspoon dried thyme
1/8 teaspoon salt
1/8 teaspoon crushed red pepper flakes
1 loaf (1 pound) unsliced French bread, halved lengthwise
3/4 cup shredded reduced-fat cheddar cheese

Steps:

  • In a small nonstick skillet, saute onions and garlic in margarine for 1-2 minutes. Stir in the seasonings. Brush over cut sides of French bread; sprinkle with cheese. , Wrap each piece of bread loosely in a large piece of heavy-duty foil; seal edges of foil. Bake at 400° for 20-25 minutes or until heated through and cheese is melted. Cut each piece into six slices. Serve warm.

This aromatic bread can be served with dinner, or the dough can be used for pizza.

2 (.25 ounce) packages active dry yeast
2 cups warm water (110 degrees F/45 degrees C)
2 tablespoons white sugar
¼ cup olive oil
1 tablespoon salt
1 tablespoon dried basil
1 tablespoon dried oregano
1 teaspoon garlic powder
1 teaspoon onion powder
½ cup grated Romano cheese
6 cups bread flour

Steps:

  • Mix yeast, warm water, and white sugar together in a large bowl. Set aside for five minutes, or until mixture becomes foamy.
  • Stir olive oil, salt, herbs, garlic powder, onion powder, cheese, and 3 cups flour into the yeast mixture. Gradually mix in the next three cups of flour. Dough will be stiff.
  • Knead dough for 5 to 10 minutes, or until it is smooth and rubbery. Place in an oiled bowl, and turn to cover the surface of the dough with oil. Cover with a damp linen dish towel. Allow to rise for one hour, or until the dough has doubled in size.
  • Punch dough down to release all the air. Shape into two loaves. Place loaves on a greased cookie sheet, or into two greased 9 x 5 inch loaf pans. Allow to rise until doubled in size, about a 30 minutes.
  • Bake at 350 degrees F (175 degrees C) for 35 minutes. Remove loaves from pan(s), and let cool on wire racks for at least 15 minutes before slicing.

1 (1/4 ounce) package active dry yeast
1 1/4 cups warm water, divided
2 teaspoons sugar, divided
3 1/4-4 cups flour, divided
2 teaspoons salt
1 teaspoon dried rosemary
1/2 teaspoon dried thyme
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1/4 teaspoon dried sage
1/2 teaspoon black pepper
2 tablespoons extra virgin olive oil
1 cup sharp cheddar cheese, shredded, divided
1 egg, beaten with
1 tablespoon water

Steps:

  • Preheat oven to 400 degrees.
  • Sprinkle yeast over 1/4 cup of the warm water (105 degrees) in a glass measuring cup; stir in 1 teaspoon of sugar. Let stand for 10 minutes; mixture will be foamy.
  • In a large bowl, stir together 3 1/4 cup flour, salt, rosemary, thyme, basil, oregano, sage, pepper and remaining 1 teaspoon sugar.
  • Pour yeast mixture into flour mixture. Add remaining 1 cup warm water and the olive oil, stir to form a ball. Mix in 3/4 cup of the shredded cheddar cheese.
  • Turn onto a well-floured surface. Knead for 10 minutes, adding additional flour as needed until dough is smooth and elastic.
  • Grease large bowl with a little additional olive oil. Place dough in bowl and turn to coat. Cover with plastic wrap. Let rise in a warm place for 1 1/2 hours, until doubled in size. Punch dough down.
  • Roll out dough into a 20 x 8-inch rectangle on a lightly floured surface. Roll up from a short side. Fold ends under loaf and place seam side down in a greased 8 1/2 x 4 1/2 x 2 5/8 - inch loaf pan. Loosely cover with plastic wrap and let rise in a warm place for an additional hour.
  • Brush top of loaf with the egg wash. Sprinkle with the remaining 1/4 cup cheese. Bake for 35 minutes or until loaf sounds hollow when tapped. Remove from pan to rack. Cool.

4 tablespoons unsalted butter, room temperature
2 cloves garlic, smashed and chopped
2 tablespoons grated Asiago cheese
2 tablespoons grated Parmesan cheese
2 tablespoons grated Romano cheese
2 tablespoons chopped parsley
1 large baguette, cut into 1 1/2-inch slices on a bias

Steps:

  • Preheat the oven to high broil. Mix the butter, garlic, Asiago, Parmesan, Romano and parsley in a medium bowl until completely combined. Spoon some of the mixture on one side of the bread slices and put on a baking sheet, butter side up.
  • Broil until bread is toasted and cheese mixture is bubbling, 3 to 5 minutes. Serve hot.

1 pinch cayenne pepper
60 g butter
1/2 cup grated fresh parmesan cheese
1/2 cup grated tasty cheese
2 finely sliced spring onions
2 tablespoons chopped parsley
1 egg, lightly beaten
2/3 cup milk
1 tablespoon extra milk
sesame seeds

Steps:

  • Sift flour and cayenne into a bowl, rub in butter.
  • Add cheeses, onion, parsley, stir to combine.
  • Add the combined egg and milk and mix to form a soft dough.
  • Knead on a lightly floured board until smooth. Shape dough into a round and place on a lightly greased cooking sheet.
  • Brush loaf with extra milk and sprinkle with sesame seeds.
  • Cook in a moderate 350f oven for 30 minutes or until bread is browned and sounds hollow when tapped.
  • Allow to cool for 10 minutes before cutting.
