6 bacon strips, chopped
2 celery ribs, finely chopped
1/2 cup chopped sweet orange pepper
1 small onion, finely chopped
2 garlic cloves, minced
1/4 cup all-purpose flour
1 can (14-1/2 ounces) chicken broth
2 cups 2% milk
2 medium red potatoes, cubed
1 teaspoon seafood seasoning
1/4 teaspoon salt
1/2 pound uncooked medium shrimp, peeled and deveined
1/2 pound bay scallops
1-1/2 cups shredded cheddar cheese

Steps:

  • In a large saucepan, cook bacon over medium heat until crisp. Remove to paper towels with a slotted spoon; drain, reserving 2 tablespoons drippings., In the drippings, saute the celery, orange pepper and onion until crisp-tender. Add garlic; cook 1 minute longer. Stir in flour until blended; gradually add broth and milk. Bring to a boil; cook and stir for 1 minute or until thickened., Add the potatoes, seafood seasoning and salt; return to a boil. Reduce heat; cover and simmer for 10-15 minutes or until potatoes are tender. , Add shrimp and scallops; cook and stir for 3-4 minutes or until shrimp turn pink and scallops are opaque. Stir in cheese until melted. Garnish each serving with bacon.

2 cups water
2 cups cubed peeled potatoes
1/2 cup sliced carrots
1/2 cup sliced celery
1/4 cup chopped onion
1 teaspoon salt
1/4 teaspoon pepper
1/4 cup butter
1/4 cup all-purpose flour
2 cups 2% milk
2 cups shredded sharp cheddar cheese
1 can (15-3/4 ounces) whole kernel corn, drained
1-1/2 cups cubed fully cooked ham

Steps:

  • In a large saucepan, bring the water, potatoes, carrots, celery, onion, salt and pepper to a boil. Reduce heat; cover and simmer for 8-10 minutes or until vegetables are just tender. Remove from the heat; do not drain. , Meanwhile, in another saucepan, melt the butter. Stir in flour until smooth; gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened. , Add cheese and stir until melted. Stir into the undrained vegetables; return large saucepan to the heat. Add corn and ham; heat through, stirring occasionally.

8 ounces bacon, chopped
1/4 cup good olive oil
6 cups chopped yellow onions (4 large onions)
4 tablespoons (1/2 stick) unsalted butter
1/2 cup flour
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
1/2 teaspoon ground turmeric
12 cups chicken stock
6 cups medium-diced white boiling potatoes, unpeeled (2 pounds)
10 cups corn kernels, fresh (10 ears) or frozen (3 pounds)
2 cups half-and-half
1/2 pound sharp white cheddar cheese, grated

Steps:

  • In a large stockpot over medium-high heat, cook the bacon and olive oil until the bacon is crisp, about 5 minutes. Remove the bacon with a slotted spoon and reserve. Reduce the heat to medium, add the onions and butter to the fat, and cook for 10 minutes, until the onions are translucent.
  • Stir in the flour, salt, pepper, and turmeric and cook for 3 minutes. Add the chicken stock and potatoes, bring to a boil, and simmer uncovered for 15 minutes, until the potatoes are tender. If using fresh corn, cut the kernels off the cob and blanch them for 3 minutes in boiling salted water. Drain. (If using frozen corn you can skip this step.) Add the corn to the soup, then add the half-and-half and cheddar. Cook for 5 more minutes, until the cheese is melted. Season, to taste, with salt and pepper. Serve hot with a garnish of bacon.

1 (15 1/2 ounce) can white corn
2 cups ham, diced
1/2 lb medium cheddar, grated (2 cups)
ground black pepper, to taste
2 green onions, thinly sliced

Steps:

  • Cook bacon in a large heavy saucepan over moderate heat until crisp; remove bacon from pan and set aside.
  • Add chopped onion to bacon fat in pan and cook, stirring until onion is softened. Add flour and stir to blend. Stir in broth and bring to a boil. Add potato and simmer, covered, stirring occasionally, until potatoes are just tender, about 8 to 10 minutes.
  • Stir in cream, corn and ham. Add cheddar, stirring just until cheese melts (do not let boil) and season generously with pepper. Serve bowls of cheddar topped with reserved bacon and chopped green onions.

2 cups potatoes, diced
1/2 cup carrot, chopped
1/2 cup broccoli, chopped
1/4 cup onion, chopped

1 garlic clove, chopped (optional)
1/4 cup butter
1/3 cup flour
2 cups milk
2 cups cheddar cheese, shredded
1 cup ham, Cooked and cubed

Steps:

  • In a large soup pot, add water to potatoes, carrots, broccoli, onion, salt and pepper.
  • Cover and simmer 10 minutes.
  • DO NOT DRAIN!
  • Make a white sauce with flour, butter and milk. Add the cheese and stir well until melted. Add ham.
  • Add all of this to the Potato/Carrot mixture.
  • Heat but dont boil.

3 tablespoons butter
1 onion, chopped
1 large potato, peeled and diced
1 bay leaf
½ teaspoon cumin
¼ teaspoon dried sage
3 tablespoons all-purpose flour
2 cups chicken stock
1 ½ cups milk
1 ½ cups frozen corn kernels
2 tablespoons chopped parsley
2 tablespoons chopped fresh chives
¼ cup dry white wine
2 cups shredded Cheddar cheese
salt and pepper to taste

Steps:

  • In a large saucepan over medium high heat, melt the butter and stir in the onion, potato, bay leaf, cumin, and sage. Saute about 5 minutes, until the onion is tender. Mix in the flour, coating the onion and potato. Pour in the chicken stock and milk. Bring to a boil, whisking constantly until smooth. Reduce heat, and simmer 30 minutes, stirring frequently, until the potato is tender.
  • Mix the corn, parsley, chives, and wine into the saucepan, and cook about 5 minutes, until heated through. Remove the bay leaf, and stir in the Cheddar cheese until melted and blended. Season with salt and pepper.

Steps:

  • Cook bacon in a 3-quart heavy saucepan over moderate heat, stirring, until crisp and transfer with a slotted spoon to paper towels to drain.
  • Add onion and butter to fat in pan and cook, stirring, until onion is softened. Add cumin and cook, stirring, 1 minute. Add flour and cook, stirring, 1 minute. Whisk in broth and bring to a boil, whisking occasionally. Add potato and simmer, covered, stirring occasionally, until just tender, 8 minutes. Stir in cream and corn and return to a simmer. This cheese soup recipe has been a family favorite for many years. It has also been a life-saver for friends when they are sick. It was the only nutrition a friend could keep down when she had morning sickness and today I made it to take to my daughter who has just had her wisdom teeth removed! It is not as heavy as a lot of cheese soups are and the vegetables add nutrition and flavor.

1 cup water
3 tablespoons carrots
3 tablespoons celery
3 tablespoons scallions (I substitute onion on occasion)
2 cups milk
2 cups chicken broth
4 tablespoons butter
1 small onion
6 tablespoons flour
8 ounces sharp cheddar cheese
1 teaspoon dry mustard
salt and pepper
1/4 teaspoon cayenne pepper

Steps:

  • Finely chop carrots, celery and scallions. Put them in the cup of water and simmer for 5 minutes. Reserve the vegetable and liquid for later.
  • Finely chop the small onion.
  • In a large pan, melt the butter and saute the onion until wilted.
  • Blend in flour, cook for a few minutes, then slowly add the chicken broth, whisking mixture constantly. Stir until thickened slightly.
  • Add the milk and vegetable mixture and bring to a boil.
  • Add the salt and pepper, dry mustard and cayenne pepper.
  • Grate the cheddar cheese and add the cheese to the mixture.
  • Stir until the cheese is melted and the soup is well blended.
  • Do not boil the soup after the cheese is added. You risk having the cheese separate.

  • Cook bacon in a Dutch oven over medium-high heat until crisp. Remove bacon from pan; crumble. Set aside.

  • Chop all the vegetables, I used my Nicer Dicer to chop my veggies. Large holes for the potatoes and the small hole for the rest of them. Works great.
  • In a large pan, add the water to potatoes, carrots, celery and onion. Add salt and pepper. Bring to a boil and simmer for 10 minutes. Do Not drain.
  • Make a white sauce by melting in a pan the butter, then add the flour, stirring until combined. Slowly add the milk, stirring constantly until it is all used and keep stirring on a gently heat until the sauce begins to thicken. Once thick, add the cheese, stir until melted and add ham.
  • Add the sauce to the un-drained veggies. Heat but do not boil. This should take around 15 - 20 minutes to heat through and thicken under a gentle heat.
