MAKE-AHEAD CHEESE STRATA
Prepare and refrigerate this cheese Strata several hours ahead of time or overnight. For breakfast, simply add bacon, sausage, or ham to the cheese strata, then pop it in the oven when you wake up, pour some coffee, and sit down to an all-in-one meal. The red pepper (cayenne) gives the strata a "Bite" that gets your heart started! I always add something extra because I do like the "Bite" (Louisiana Hot Sauce)!!

Steps:
- Toss together bread cubes and melted butter. Place half in a lightly greased 12 x 8 x 2 inch baking dish. Sprinkle half of cheese over bread cubes. Repeat procedure with remaining bread cubes and cheese.
- Combine remaining ingredients except celery leaves; beat well. Pour over cheese layers. Cover and refrigerate 3 hours or overnight.
- Uncover and bake at 350 degrees F. for 30 to 40 minutes.
- Garnish with celery leaves; serve warm.

CHEDDAR CHEESE STRATA
This is just yummy; nice and cheesy. And this is a healthier version than most. This would be nice to serve at a brunch. Not sure where I got the recipe. Note that standing time is not included in the preparation time.

Steps:
- Remove crusts from bread. Put 1/2 of bread in a 9 x 13-inch glass baking dish that has been sprayed with Pam. sprinkle with 1-1/4 cups cheese. Top with remaining bread.
- Whisk the eggs and egg whites together. Add the milk, onion, dry mustard and salt; whisk again to combine. Gently pour over contents of baking dish. Top with remaining cheese and a sprinkle of paprika for color. Cover and refrigerate 1 hour or overnight.
- Preheat oven to 350 degrees F. Bake in preheated oven 45 minutes or until golden. Let stand 5 minutes and serve.

- In a small microwave-safe dish, microwave broccoli and onions in water on high for 1 minute; drain and set aside. Place bread in a shallow 3-cup baking dish coated with cooking spray. Add broccoli mixture and cheese. , In a small bowl, combine the eggs, milk, mustard, dill, nutmeg and pepper; pour over cheese. - Preheat oven to 350°F. Melt 1 1/2 tablespoons butter in heavy large skillet over medium-high heat. Add bell pepper to skillet and sauté until just tender, about 4 minutes. Mix in green onions; sauté 1 minute longer. Remove from heat.
- Spread 1 1/2 tablespoons butter thinly on bread. Cut bread into 1/2-inch pieces. Layer half of bread in 8 x 8 x 2-inch glass baking dish. Cover with half of cheese, then half of bell pepper mixture. Repeat layering with bread, cheese and bell pepper mixture. Beat milk, eggs, Dijon mustard, dry mustard, salt and pepper in medium bowl to blend. Pour over strata.
- Bake strata until lightly browned on top and set in center, about 45 minutes. Let stand 10 minutes; cut into squares.

- Brown sausage in a skillet, stirring until crumbly, drain. Whisk eggs, milk, flour, butter, salt and pepper in large bowl. Whisk in your favorite seasonings. Stir in cooked sausage, mushrooms, asparagus, cheddar cheese, Parmesan cheese and bread cubes. Spoon into an ungreased 9 x 13 inch baking dish. Cover with plastic wrap and chill overnight. - In a large bowl, mix together the milk, eggs, salt, and pepper. In a medium-size bowl, toss the cheeses together.
- Place 2 pieces of bread on the bottom of the prepared pan. The bread should cover most of the bottom. If it doesn’t not, add another piece of bread or part of one to fill in the gap. Sprinkle with one third of the cheese. Place the second layer of bread over the cheese and again, fill in any large gaps with extra bread. Carefully pour the milk and egg mixture over the entire casserole. It will seem lie a lot, but the bread will soak it up as it cooks. Top with the remaining cheese. (At this point you can cover and refrigerate the strata for up to 24 hours before baking.)
- Bake for 45 to 50 minutes, or until the casserole is very puffy and the cheese is golden brown on the top. Let sit for about 10 minutes before cutting and serving.
