HOBO STEAK
The late Dave Chasen, founder of the famous Beverly Hills restaurant that bears his name, developed this unusual treatment for New York steak which produces a rich, tender and memorable main dish

Steps:
- 1. Season steak with pepper. Wrap fat around sides of steak, covering them completely but leaving top and bottom exposed. Tie fat to steak with string near top and also near bottom. Fat must be securely anchored to steak. Mix salt and water to make a paste. Mound about 3/4 of mixture over top of steak,covering meat completely. Put steak under broiler and broil 8 to 10 minutes depending on size of steak.
- 2. Carefully remove salt crust, keeping it in one piece. Turn steak over and place salt crust on other side. If needed, patch crust with remaining salt mixture. Broil steak another 8 to 10 minutes.Remove steak from boiler and discard crust and fat. Slice met, cutting slightly n the diagonal. Heat butter in chafing dish or large skillet til foaming and lightly browned. Put a few slices of meat at a time in butter and cook to desired degree of doneness. Allow about 1 minute on each side for rare. meat. Put each slice of meat on a slice of toast and spoon some of the hot butter over. Makes 2 servings.
CHASEN'S CHILI
This recipe was printed in the "Arizona Republic" newspaper when Chasen's closed its doors. Chasens was a Hollywood hangout. Elizabeth Taylor liked this chili so much that when she was on a movie set out of the country, she would have them ship it to her on location.

Steps:
- Pour the beans in a saucepan and cook until tender, adding water if necessary Heat the oil in the skillet, add the peppers and onions and cook until the onions are translucent.
- Add the garlic and parsley.
- Heat oil and butter in a pot large enough for all the ingredients.
- Add the beef and cook about 25 minutes, stirring to break up the lumps.
- Add the chili powder and cumin about halfway through the cooking process.
- Add the peppers and onions to the meat.
- Add the tomatoes, salt, and pepper.
- Simmer for 60 minutes, stirring often.
- Add the beans and water and continue cooking for an additional 30 minutes.
- Skim off fat.
- Serve with sour cream, chopped onions, shredded cheddar cheese and crackers.

- cover with 1/4 can of soup.

CHASEN'S CHILI (HOLLYWOOD NOSTALGIA RECIPE)
This delicious, long-kept-a-secret, recipe represents a bit of old Hollywood history. Dave Chasen started his restaurant in 1937 as a BBQ shack that featured ribs and chili. His business evolved into one of Hollywood's most famous resturants. It featured American cuisine. By 1940, his famous chili was dropped off the menu but was available if one asked for it; however Dave kept his recipe a dark secret. Eleanor Roosevelt asked for the recipe and was told "no", however Dave sent her a complimentary order. Liz Taylor had an order of his chili flown to her in Rome when she was there making Cleopatra. Before the restaurant closed in 1995, the secret recipe and other memorabilia was given to the Los Angeles Public Library. The recipe is available in the archives of the main library, located in downtown Los Angeles. After the restaurant closed, the building was sold. The building is now occupied by a grocery store, which has a cafe in the store. Some of the old booths are still there along with photos and memoribilia on the walls. They serve Chasens chili; and the store caters to a celebrity clientel.

Steps:
- Cook dry beans according to package directions.
- Stir the tomatoes with juice into the cooked beans, and simmer 5 minutes over medium-high heat, stirring occasionally.
- Heat the oil in a large skillet and saute the bell pepper for 5 minutes.
- Add the onion, reduce the heat to low, and cook about 15 minutes until tender, stirring frequently.
- Stir in the garlic and parsley; add this mixture to the beans.
- Using the same skillet, melt the butter and saute the beef and pork, in two batches, if necessary, until browned. Drain.
- Add meat to the bean mixture along with the chili powder, salt, pepper to taste and cumin.
- Simmer mixture, covered, for about an hour.
- Uncover and cook to the desired consistency, about 5 minutes.
- The chili should not be too thick.
- Skim off excess fat and serve.

CHASEN'S CHOPPED SALAD
Chasen's Restaurant is well known as a part of Hollywood history, however, it's fame was broader than that. Every American president since 1945 (until the restaurant closed in 1995) ate a Chasen's meal. Even though Franklin D. Roosevelt did not dine there, Eleanor did. It was the restaurant where Ronald Reagan courted Nancy Davis for two and a half years; and the place where he proposed. After Reagan became governor of California, and went on to became president, a special back door was installed at Chasen's just for them. Their favorite booth, where he proposed, is now in the Reagan presidential Library in Simi Valley, California. This chopped salad was a popular item during this era, and yet it seems very modern.

- Start with the dressing, in a jar dissiove the sugar, salt, pepper and English mustard in vinegar.
- Add oils, lemon juce, Worcestershire, garlic, Tobasco and white pepper.
- Cover and shake vigorously, chill until needed.
- For the Salad.
- Toss together the lettuces, hearts of palm, cucumber, artichokes and garbanzo beans in a large bowl,.
- Add tomatoes and some dressing, to taste, and toss gently to combine.
- Spoon salad onto four individual salad plates.
- Garnish each serving with chopped hard-cooked egg and a sprinkle of chive.
