Ingredients

keebler shortbread pie crust
12 oz cream cheese, softened
1/3 cup powdered sugar
1/2 c lemon juice
1 -8 oz container cool whip
20 ounce can crushed pineapple, drained
11 ounce mandarin orange sections, drained
14 ounce sweetened condensed milk

Steps:

1. Mix together cream cheese, powdered sugar, whipped topping, sweetened condensed milk, and lemon juice until smooth and creamy. Stir in drained fruit. Fill crust and freeze. Remove from freezer approximately ten minutes or so before serving. Garnish as desired.

16 oz light sour cream
1 can(s) pineapple tidbits
1 can(s) mandarin oranges
1 graham cracker crust
1/4 c toasted coconut
1 pkg sugar free instant vanilla pudding mix

Steps:

1. Mix sour cream & pudding mix together. Add pineapple(small can w/ juice)and oranges to this.
2. Spread in graham cracker crust. Top with toasted coconut.
3. Chill at least 30 minutes before serving.

1 package (3 ounces) orange or sparkling mandarin orange gelatin
1/2 cup boiling water
1-1/4 cups cold club soda
1 graham cracker crust (9 inches)
1/2 cup whipped topping
1 can (11 ounces) mandarin oranges, well drained

Steps:

In a bowl, dissolve gelatin in boiling water. Stir in soda. Set aside 1/2 cup at room temperature. Refrigerate remaining gelatin mixture for 20 minutes or until slightly thickened; pour into crust. Refrigerate for 30 minutes or until set., Whisk whipped topping into reserved gelatin mixture. Slowly pour into crust. Arrange orange segments over the top and press down lightly. Refrigerate for at least 3 hours or until firm.

I made this up myself to add fruit to my husband's diet. He is diabetic and this satisfy's his cravings for something sweet. Even non-diabetics enjoy this. It is quick and you can add drained cherries for more flavor or color!

1 can pineapple chunk, in own juice,drained
1 can mandarin orange segments, drained
1 (8 ounce) container Cool Whip Lite, thawed
1 (3 ounce) package instant pudding mix (vanilla and banana cream are the best)

Steps:

Mix pudding mix and cool whip together well, fold in drained fruit.
Chill for 2-3 hours before serving.
Great for diabetics!
