SICILIAN GRILLED SWORDFISH



Sicilian Grilled Swordfish image

2 tablespoons freshly squeezed lemon juice
1/4 cup good olive oil
2 teaspoons minced fresh oregano leaves or 1 teaspoon dried oregano
Pinch of crushed red pepper flakes
Kosher salt and freshly ground black pepper
6 (1/2-inch-thick) swordfish steaks (5 to 6 ounces each)
4 ounces baby arugula
Grated zest of 1 lemon

Steps:

  • Light a charcoal grill or preheat a gas or stovetop grill until very hot.
  • For the sauce, whisk together the lemon juice, olive oil, oregano, red pepper flakes, 1 tablespoon salt, and 1 teaspoon black pepper. Set aside.
  • When the grill is ready, sprinkle the fish with salt and pepper and cook over medium-high heat for 2 minutes on one side, then turn and cook for 1 to 2 minutes on the other side until almost cooked through. Remove to a flat dish, prick holes in the fish with the tines of a fork, and pour the lemon sauce over the fish while it¿s still hot. Sprinkle liberally with salt and pepper, cover with aluminum foil, and allow to rest for 5 minutes.
  • When ready to serve, place the swordfish on dinner plates or a serving platter, pile the arugula on top, drizzle with the sauce from the fish, and sprinkle with the grated lemon zest. Serve warm.

Bagels with Miso Cream Cheese and Ikura image

In Japan, bars and restaurants will cure blocks of cream cheese in a mixture of miso and mirin. The result is a firmer version of cream cheese with rich umami and amped up salt content. It's very addictive, especially with a whiskey highball. Christine Lau of New York City, who happens to be a pal of mine, fused this bar snack with the classic bagel pairings of New York all in one little bowl. I talked to Christine about how this would be a perfect large-format spread for an eggless brunch and she told me to "go for it!" So here we are. Number Of Ingredients 7

8 ounces cream cheese, at room temperature
2 tablespoons red miso paste (if you can't find red, any other miso will be fine)
1 tablespoon mirin
1 English cucumber, thinly sliced on a mandoline
3 shallots, thinly sliced on a mandoline
6 ounces ikura or salmon roe (see Cook's Note)
4 everything bagels (or your fave), sliced thin into "chips" and toasted

Steps:

  • Combine the cream cheese, miso and mirin in a stand mixer fitted with a whisk attachment. Beat until super smooth and creamy.
  • Spread the cheese mixture on a platter and garnish with the cucumbers, shallots, salmon roe and bagel chips.

2 pounds cooked medium shrimp, peeled and deveined
1 medium red onion, sliced and separated into rings
2 medium lemons, cut into slices
1 cup pitted ripe olives, drained
1/2 cup olive oil
1/3 cup minced fresh parsley
3 tablespoons lemon juice
3 tablespoons red wine vinegar
1 garlic clove, minced
1 bay leaf
1 tablespoon minced fresh basil or 1 teaspoon dried basil
1 teaspoon salt
1 teaspoon ground mustard
1/4 teaspoon pepper

Steps:

  • In a 3-qt. glass serving bowl, combine shrimp, onion, lemons and olives. In a jar with a tight-fitting lid, combine remaining ingredients; shake well. Pour over shrimp mixture and stir gently to coat. , Cover and refrigerate for 24 hours, stirring occasionally. Discard bay leaf before serving.

  • Remove the uncured salmon roe from the egg sacks (also called the skein). There are many ways to do this and everyone has a preferred method. I like to place the whole skein in a big bowl with lukewarm water.
  • With the whole skein submerged in the water, peel open and off the membrane as much as you can. The roe should now be exposed. Use your fingers to gently push off the roe into a separate bowl of cool water. Do this step while standing at the sink, so that you can drain and refresh the water in both bowls as needed (because it will get dirty).
  • With the salmon roe all remove and in the bowl, rinse and drain under gentle and cool running water several times to clean.
  • Then pour the salmon roe in a large strainer and rinse several more times to get it extra clean. Make sure you get off all the membrane bits clinging to the roe.
