CARAMEL SNICKERDOODLE BARS
What did I do when I couldn't decide between two of my favorite desserts? I combined them! This snickerdoodle-blondie hybrid proved even better with caramel, always a favorite ingredient. -Niki Plourde, Gardner, Massachusetts

- Preheat oven to 350°. Line a 13x9-in. baking pan with parchment, letting ends extend over sides by 1 in., In a large bowl, cream butter and brown sugar until light and fluffy, 5-7 minutes. Beat in eggs and vanilla. In another bowl, whisk flour, baking powder and salt; gradually beat into creamed mixture. Spread onto bottom of prepared pan., In a small bowl, mix sugar and cinnamon; sprinkle 2 tablespoons mixture over batter. Bake until edges are light brown, 25-30 minutes. Cool completely in pan on a wire rack., Spread dulce de leche over crust. In a small saucepan, combine white baking chocolate, cream and corn syrup; cook and stir over low heat until smooth. Cool slightly. Spread over dulce de leche. Sprinkle with remaining cinnamon sugar. Refrigerate, covered, at least 1 hour., Lifting with parchment, remove from pan. Cut into bars. Refrigerate leftovers.

CHARMIE'S SNICKERDOODLES
I can't believe in all the Snickerdoodle recipes listed here this one isn't among them. This is the best. Every time I take these somewhere, people declare these are the best snickerdoodles they have ever had! I think the trick is to not over bake...bake until just starting to crack on top!

Steps:
- Preheat oven to 375°.
- Stir together flour, soda, cream of tartar and salt.
- Beat butter for 30 seconds.
- Add the 2 cups sugar and beat until fluffy.
- Add eggs, milk and vanilla; beat well.
- Add dry ingredients to beaten mixture, beating until well blended.
- Form dough into 1-inch (or larger) balls - dough will be sticky.
- Roll in mixture of cinnamon and sugar.
- Place 2-inches apart on greased cooked sheet.
- Flatten slightly with bottom of a glass.
- Bake at 375° for 8-10 minutes until light golden and just beginning to crack on top.

- Heat the oven to 200C/180C fan/gas 6, and line a baking tray with baking parchment. Beat the butter and both sugars in a large bowl using an electric whisk for 2 mins until smooth and fluffy.
- Add the vanilla and beat until combined, scraping down the sides once. Add the flour, cream of tartar, bicarbonate of soda and ¼ tsp salt, and mix until just combined. Stir in the milk to loosen the mixture.
- For the topping, combine the sugar and cinnamon in a shallow bowl. Roll 40g of the dough into a ball. Roll the dough ball in the cinnamon-sugar mixture, then place it on the prepared tray and press it down lightly. Repeat with the remaining dough and topping, spacing the balls about 5cm apart.
- Bake for 10-12 mins until golden and puffed up. Leave to cool on the tray for 5 mins, then transfer to a wire rack and leave to cool completely. Will keep in an airtight tin for up to four days.

- Preheat oven to 400 degrees F (200 degrees C).
- Cream together butter, shortening, 1 1/2 cups sugar, eggs, and vanilla. Blend in flour, cream of tartar, soda, and salt. Shape dough by rounded spoonfuls into balls.
- Mix 2 tablespoons sugar and cinnamon together. Roll balls of dough in mixture. Place 2 inches apart on ungreased baking sheets.
- Bake 8 to 10 minutes, or until set but not too hard. Remove immediately from baking sheets.

CHARMIE'S SOFT SUGAR COOKIES
I know there are a ton of sugar cookie recipes here, but I couldn't find this one, and it's my favorite! It makes a nice thick and soft sugar cookie, that's perfect for all the holidays. Frost these with your favorite vanilla frosting (I often just used the store-bought stuff...shhhhh!). Cooking time includes chilling time. I'm guessing on the amount, but I'll adjust when I make these soon!

- Cream margarine or butter with sugar.
- Add eggs and vanilla and blend well.
- Sift together dry ingredients and add to butter/sugar mixture.
- Chill at least 1-1/2 hours.
- Roll on floured board to 1/2 inch think.
- Cut with desired cookie cutters.
- Bake at 400º 8-10 minutes on a greased cookie sheet.
- Cool and frost with your favorite frosting!
