Steps:
- Place cloves and peppercorns in a large bowl; with the end of a wooden spoon handle, crush spices until aromas are released., Add the tea bags, sugar, ginger, cinnamon stick and boiling water. Cover and steep for 6 minutes. Meanwhile, in a small saucepan, heat the milk., Strain tea, discarding spices and tea bags. Stir in hot milk. Pour into mugs.

- In a large bowl, combine the first 12 ingredients. In a blender, cover and process tea mixture in batches until powdery. Store in an airtight container in a cool, dry place for up to 6 months., To prepare chai tea: Place 1/4 cup mix in a mug. Add hot milk; stir until combined.

INSTANT CHAI TEA MIX
Spice this up even further by adding 1 teaspoon each nutmeg and allspice, and 1/4 teaspoon white pepper. You may choose to omit the French vanilla creamer, and use 2 teaspoons vanilla extract instead. To do so, mix the vanilla into the sugar, let it dry, then break the sugar into small lumps. - In a large bowl, combine milk powder, non-dairy creamer, vanilla flavored creamer, sugar and instant tea. Stir in ginger, cinnamon, cloves and cardamom. In a blender or food processor, blend 1 cup at a time, until mixture is the consistency of fine powder.
- To serve: Stir 2 heaping tablespoons Chai tea mixture into a mug of hot water.
- Store dry mixture in an airtight container.

This is from one of the Christmas Gooseberry Patch books. I make this every year for my daughter, she absolutely loves this mix. NOTE: a local coffee house told us how to make a great chai tea. She said to add just a little hot water to the mix just to dissolve it, then add the milk whether hot or cold this mix is yummy!

- 1/3 cup of mix to a mug of hot milk or water. (I prefer milk, it makes if more creamy).
- Can use less mix if prefered.

CHAI TEA MIX GIFT IN A JAR
Watch out Starbucks, you'll be out of business in no time. The nutmeg and allspice is an added spice hit, use as desired. Also, I've been playing around with the amount of sugar, I like the sweetness with just 1/2 cup sugar, some suggest no sugar at all. If you don't care for the residue in the bottom of your cup, you can strain the mix with a fine sieve. Food for thought. Note 12-21-12 (I want to thank the gal that just reviewed The Chai Tea.... she used it in her K coffee machine by just running hot water into the cup, perfect temperature for the tea mix)
