Steps:
- Preheat oven to 350°. In a bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in eggs and vanilla. Stir in applesauce. Combine flour, baking soda and spices; stir into creamed mixture. If desired, fold in nuts. , Fill greased or paper-lined muffin cups three-fourths full. Bake until a toothpick comes out clean, 20-25 minutes. Cool 5 minutes before removing from pans to wire racks. If desired, sprinkle with cinnamon-sugar.

Steps:
- Preheat oven to 375 degrees F (190 degrees C). Grease 12 muffin cups or line with paper liners.
- Mix bran cereal and buttermilk together in a bowl; let sit for 10 minutes.
- Beat brown sugar, applesauce, egg, and vanilla extract together in a bowl until smooth; stir into bran cereal mixture. Stir flour into bran cereal mixture until batter is well mixed; fold in walnuts and dried cranberries. Spoon batter into the prepared muffin cups.
- Bake in the preheated oven until a toothpick inserted in a muffin comes out clean, 15 to 20 minutes. Transfer muffins to a wire rack to cool.

- Preheat oven to 350 degrees F. Line 6 muffin cups with paper liners.
- Crush the cereal in a bowl. Add the flour, baking soda, salt and cinnamon and mix very well. Stir in the sugar.
- Mix the applesauce, vanilla, oil and egg whites in a separate bowl. Pour the applesauce mixture into the cereal mixture and stir until mixed.
- Divide the batter evenly between muffin cups and sprinkle walnuts over top. Bake on center rack for 22 minutes.

- In a mixing bowl, beat egg and whisk together with oil, milk and honey.
- In a large bowl combine the dry ingredients; mixed well.
- Pour the wet ingredients into the dry and stir just until flour is moist (batter should be lumpy).
- Fill muffin cups 2/3 full with the batter, and bake for 20-25 minutes (until golden brown and a toothpick comes out clean when inserted).
