Creole Corn and Crab Hand Pies with Endive Slaw and Comeback Sauce image

1/2 head red endive, sliced
1/2 yellow onion, sliced
1 tablespoon chopped fresh chives
1 tablespoon chopped fresh Italian parsley
1/4 cup champagne vinegar
5 tablespoons extra-virgin olive oil
1 1/2 tablespoons honey
Salt and pepper
1 ear fresh corn, shucked
2 tablespoons butter
1 tablespoon oil
1/4 yellow onion, diced
1/4 red bell pepper, diced
2 stalks celery, diced
1/2 bunch green onions, chopped
1/2 pint lump crabmeat
3 tablespoons chopped fresh Italian parsley
1/2 cup plain breadcrumbs
1 teaspoon cayenne pepper
1/2 teaspoon New Orleans-style crab boil seasoning, such as Zatarain's
Juice of 1/2 lemon
Salt and black pepper
1 teaspoon creme fraiche
8 crescent roll triangles
2 eggs, beaten with 2 tablespoons water
1 cup mayonnaise
1/4 cup ketchup
1/4 cup chopped cornichons
1 tablespoon lemon juice
1 tablespoon hot sauce
1 tablespoon Worcestershire sauce
Salt and pepper

Steps:

  • For the endive slaw: In a bowl, mix together the endive, onion, chives, parsley, vinegar, olive oil and honey. Add salt and pepper to taste. Marinate at room temperature for 15 minutes.
  • For the hand pies: Preheat the oven to 400 degrees F. Prepare a grill for medium heat.
  • Oil and grill the corn, turning often, until golden brown. Let cool, then cut the kernels from the cob.
  • Heat the butter and oil in a skillet over medium-high heat. Add the onions, peppers, celery and greens onions and cook until translucent. Let cool.
  • Add the crabmeat, corn kernels, parsley, breadcrumbs, cayenne, crab boil seasoning and lemon juice. Add salt and pepper to taste and fold in the creme fraiche.
  • Lay out the crescent rolls on a work surface. Top each with a couple tablespoons of the filling, then fold into triangles and seal tightly. Brush with egg wash. Bake for 10 to 12 minutes, until golden brown.
  • For the comeback sauce: Combine the mayonnaise, ketchup, cornichons, lemon juice, hot sauce, Worcestershire and salt and pepper taste in a bowl. Mix well. Cover and refrigerate until ready to serve. (Makes 2 cups.)
  • To serve, spoon some comeback sauce onto plates. Slice the hand pies in half and arrange on top of the sauce. Top with slaw.

  • Coarsely grate 1 pound peeled celery root. Toss with 1 tablespoon salt and 2 tablespoons warm water in a colander; let sit 20 minutes. Rinse and drain. Whisk the juice of 1 lemon and 1/4 cup each dijon mustard and sour cream in a bowl, then whisk in 1/4 cup olive oil. Add the celery root, 1 teaspoon salt, and pepper to taste. Chill. Add 1/4 cup chopped parsley before serving.

2 celery stalks, plus leaves for garnish
2 Belgian endives
1 1/2 ounces blue cheese (preferably Maytag), crumbled, plus more for garnish
2 tablespoon sherry vinegar
Coarse salt
Freshly ground pepper, to taste
2 tablespoons extra-virgin olive oil

Steps:

  • Cut celery into 3-inch pieces, then slice each piece lengthwise into 1/8-inch-thick strips. Halve each endive lengthwise, cut out core, and slice each half lengthwise into 1/8-inch-thick strips.
  • Whisk together blue cheese, vinegar, 1/8 teaspoon salt, and pepper in a large bowl. Add oil in a slow, steady stream, whisking until emulsified.
  • Toss celery and endive with dressing; season with salt and pepper. Refrigerate until ready to serve. Garnish with celery leaves and blue cheese.

ENDIVE SLAW

3 tablespoons extra-virgin olive oil
Salt and freshly ground pepper
3/4 pound endive, trimmed
1 red bell pepper, cored and trimmed
20 fresh tarragon leaves
1/3 cup fresh pomegranate seeds (about half a pomegranate)

Steps:

  • In a small bowl, whisk together the vinegar and olive oil until smooth. Add salt and pepper to taste. Set aside.
  • Cut endive lengthwise into 1/8- to 1/4-inch-wide pieces. Transfer to a medium bowl. Cut pepper lengthwise into 1/8-inch-wide pieces. Transfer to bowl with endive. Just before serving, toss endive mixture with reserved vinaigrette. Top with tarragon and pomegranate seeds.

8 medium endives (about 1 3/4 pounds), cut on the bias into 1/2"-thick slices, cores thinly sliced
1 head of celery, leaves removed and reserved, stalks very thinly sliced on the bias
1/2 pound aged sharp cheddar, shaved on the slicing blade of a box grater
3/4 cup coarsely chopped salted, smoked almonds, divided
Flaky sea salt
Freshly ground black pepper
1/2 cup (1") chives

Steps:

  • Combine 1 Tbsp. vinegar and 3 cups cold water in a medium bowl. Add apple slices and let soak.
  • Meanwhile, whisk mustard, kosher salt, and remaining 1/4 cup vinegar in a medium bowl, then whisk in oil in a slow, steady stream.
  • Drain and pat apple slices dry. Combine apple slices, endives, celery stalks, cheese, and half of the almonds in a large bowl.
  • Drizzle dressing over salad. Gently toss until salad is evenly dressed, then season with sea salt and pepper. Top with chives, celery leaves, and remaining almonds.

1 jalapeno, halved lengthwise and thinly sliced

1 teaspoon white vinegar

Steps:

  • Before serving, toss in the cilantro leaves.

This classic version of coleslaw is also the simplest, with a light, creamy, tangy-sweet dressing spiked with celery seeds. For the best result, make the coleslaw a few hours ahead and refrigerate it to allow all the flavors to marry and soak into the cabbage. Celery seeds add strong, aromatic, grassy notes, but simply skip them if they're unavailable. For extra flair, you could add ½ cup of your favorite chopped fresh herb, such as parsley, tarragon or dill. Leftovers make a great topping for tacos, hot dogs, sliders and sandwiches.

1 cup mayonnaise
1 tablespoon apple cider vinegar
1 tablespoon granulated sugar
1/2 teaspoon celery seeds
Kosher salt and black pepper
1 medium head green cabbage (about 2 pounds)
1/2 medium head purple cabbage (about 1 pound)
2 carrots, grated on the large holes of a box grater

Steps:

  • In a very large bowl, combine mayonnaise, vinegar, sugar and celery seeds. Season with salt and pepper, and mix until smooth.
  • Shred the cabbage: Using a sharp knife, quarter and core the green cabbage. Arrange quarters cut side down, so they sit flat and stable. Thinly slice them lengthwise for longer shreds (or crosswise for shorter shreds). Repeat with the purple cabbage. You should get about 16 total cups of shredded green and purple cabbage.
  • Add all the shredded cabbage and the shredded carrots to the bowl, season with salt and pepper, and toss until well combined. (Hands work best here.)
  • Transfer coleslaw to a serving bowl and serve immediately, or cover and refrigerate 3 hours ahead of time and up to overnight for the best texture, and serve chilled.
