CURRIED CAULIFLOWER AND CHICKPEA DUMP DINNER



Curried Cauliflower and Chickpea Dump Dinner image

Skip cooking a big pot of rice and throw the ingredients into a casserole dish instead for an easy dump-dinner meal. The basmati rice and chickpeas absorb all the delicious flavors of ginger, garlic, curry powder and coconut milk. Finish with a quick drizzle of yogurt along with fresh cilantro leaves and lime wedges for a simple and complete meal.

Nonstick cooking spray
2 cups low-sodium vegetable broth
One 13.5-ounce can unsweetened coconut milk
4 cloves garlic, finely grated
1 tablespoon finely grated peeled fresh ginger (from a 1- to 2-inch piece)
1 serrano chile pepper, stemmed and finely chopped (remove seeds for less heat)
2 1/2 teaspoons curry powder, preferably Madras
Kosher salt
Two 15.5-ounce cans chickpeas, drained and rinsed
2 cups lightly packed baby spinach, roughly chopped
1 1/2 cups basmati rice
1/2 medium head cauliflower, cut into small florets (about 3 heaping cups)
1/2 small red onion, thinly sliced
Cilantro leaves, plain whole-milk yogurt and lime wedges, for serving

Steps:

  • Preheat the oven to 425 degrees F. Spray a 9-by-13-inch baking dish with nonstick spray.
  • Whisk the vegetable broth, coconut milk, garlic, ginger, serrano, curry powder and 2 teaspoons salt together in a medium bowl until combined. Add the chickpeas and spinach and stir to coat.
  • Spread the rice evenly in the bottom of the prepared dish. Pour in the coconut-milk mixture, distributing the chickpeas and spinach evenly over the rice. Scatter the cauliflower and onion over the top, making sure to go all the way to the edge of the pan (it's okay if the cauliflower is not completely submerged in liquid).
  • Cover tightly with foil and bake until the vegetables have softened but are still vibrant, about 25 minutes. Remove the foil and bake until the cauliflower is charred in spots and the rice is cooked through, 20 to 25 minutes more. Let sit for 5 minutes to allow the rice to absorb more of the moisture. Serve topped with cilantro, a drizzle of yogurt and lime wedges for squeezing.

1 tablespoon ground coriander
1 tablespoon ground turmeric
1 teaspoon cumin seeds
1 teaspoon fennel seeds
1/4 teaspoon cayenne pepper
1/4 cup vegetable oil
1 tablespoon grated fresh ginger
1 head cauliflower, cut into florets
One 19-ounce can chickpeas, drained
1/2 sweet onion, sliced
Kosher salt and freshly cracked black pepper

Juice of 1/2 lime

Steps:

  • Preheat the oven to 400 degrees F.
  • Toast the coriander, turmeric, cumin seeds, fennel seeds and cayenne in a dry skillet over high heat until fragrant, 2 to 3 minutes. Pour the oil into a large mixing bowl, and then add the toasted spices. Add the ginger, cauliflower, chickpeas and onions, and toss to coat everything evenly. Place on a sheet tray and season with salt and pepper. Roast in the oven until browned and the cauliflower is tender, 30 to 35 minutes. Serve with cilantro sprigs and finish with a squeeze of the fresh lime juice.

2 teaspoons of yellow curry powder
1 medium yellow onion, cut in half and then sliced across the grain (about 1 1/2 cups sliced onion)
1-inch piece of ginger root, peeled and grated (1 teaspoon grated)
1 1/2 cups cooked chickpeas (garbanzo beans) (a 15-ounce can, rinsed and drained)
1 head cauliflower, cored, florets separated (see How to Cut and Core Cauliflower )
1 15-ounce can of whole, peeled tomatoes
1 teaspoon Kosher salt
1/8 teaspoon freshly ground black pepper
1 bay leaf
1/2 cup water
1/2 cup (packed) roughly chopped cilantro (leaves and young stems)
2 teaspoons minced fresh mint leaves

Spiced Chickpeas With Cauliflower and Roasted Lemon image

In this hearty, meatless main course, chickpeas and potatoes are coated in a tomato-tinged spice paste and roasted until crunchy and browned. At the same time and in the same oven, cauliflower and tomatoes are cooked along with thinly sliced lemons until soft and caramelized. Just before serving, everything is tossed altogether and drizzled with an herbed, garlicky yogurt sauce. It's a complete and satisfying meal that's perfect for vegetable lovers. Meyer lemons work particularly well here because they are milder and sweeter than regular lemons. But use whichever you can find.

1 lemon, preferably a Meyer lemon, thinly sliced and seeded
1 (2 1/4-pound) head of cauliflower, cut into bite-size pieces (about 8 cups)
1 1/2 cups cherry tomatoes, halved
2 jalapeños, seeded and thinly sliced
1/2 cup extra-virgin olive oil, plus more as needed
1 teaspoon cumin seeds
1 teaspoon tomato paste
1/2 teaspoon Tabasco or other hot sauce
3/4 teaspoon ground turmeric
1/2 teaspoon ground cumin
1/4 teaspoon ground coriander
1 (14- to 16-ounce) can chickpeas, drained and blotted dry
1 pound baby or fingerling potatoes, cut into quarters
2 rosemary sprigs
3/4 cup plain whole-milk yogurt (or substitute soy, nut or coconut milk yogurt)
1/4 cup chopped fresh dill or mint, plus more for garnish
1/4 cup chopped fresh basil, plus more for garnish
1/4 cup chopped parsley, plus more for garnish
1 large garlic clove, finely grated or minced
Fresh lemon juice, as needed

Steps:

  • Position racks in the top and bottom thirds of oven and heat to 425 degrees. Bring a small pot of heavily salted water to a boil. Add lemon slices and simmer until softened, about 5 minutes. Drain, pat dry with a clean kitchen towel and cut slices into quarters.
  • On a rimmed sheet pan, toss cauliflower, tomatoes and jalapeños with 1/4 cup oil and 1/2 teaspoon salt. Fold in lemon slices. Place pan on bottom rack of oven and roast, tossing every 10 minutes, until well-browned, about 35 to 45 minutes.
  • In a small bowl, stir together 1/4 cup oil, cumin seeds, tomato paste, Tabasco, ground turmeric, cumin and coriander.
  • On a separate rimmed sheet pan, toss together chickpeas, potatoes, spice-oil mixture and salt to taste. Top with rosemary sprigs. Roast on top rack until potatoes are golden, 30 to 40 minutes, tossing mixture halfway through. Remove pan and toss with more salt to taste.
  • While everything is roasting, make the sauce: In a small bowl, whisk together yogurt, dill, basil, parsley, garlic, 1/2 teaspoon salt and a squeeze of lemon juice. Taste and add more salt or lemon if needed.
  • To serve, toss roasted chickpeas and potatoes with cauliflower mixture. Drizzle with more oil, yogurt sauce and herbs.

2 tbsp vegetable oil
1 onion , chopped
100g cashews
200g basmati rice
400g cauliflower , cut into small florets
425g jar curry sauce (we used Loyd Grossman's Dopiaza)
400g can chickpeas , rinsed and drained
handful coriander leaves, roughly chopped

Steps:

  • Heat the oil in a large pan, add the onion and fry until lightly coloured. Add the cashews and fry until golden. Stir in the rice until coated in the oil. Add the cauliflower and 600ml water, season, then bring to the boil. Cover, then gently cook for 12-15 mins until the rice and cauliflower are tender.
  • Meanwhile, heat the curry sauce and chickpeas together, then simmer for 5 mins. Spoon the rice into 4 shallow bowls and spoon the curry on the side. Scatter over the coriander and serve.

2 large onions , sliced
1 tbsp curry paste of your choice
200g basmati rice
350g cauliflower florets
400g can chickpeas , rinsed and drained
500ml vegetable stock
50g toasted flaked almonds
handful chopped coriander

Steps:

  • Heat the oil in a large, non-stick pan and add the onions. Cook over a medium heat for 5 mins until starting to turn golden. Stir in the curry paste and cook for 1 min. Add the rice, cauliflower and chickpeas, stirring to coat in the paste.
  • Pour in the stock and stir. Cover and simmer for 10-15 mins until the rice and cauliflower are tender and all the liquid has been absorbed. Stir in the almonds and coriander, then serve.

300g basmati rice
1 red onion , finely sliced
2 lemons , 1 juiced, 1 cut into wedges
2 tsp sugar
4 tbsp harissa
1 garlic clove , crushed
1 tbsp olive oil
1 large or 2 medium cauliflower , broken into large florets, stalk chopped, large leaves roughly chopped
pinch of saffron
2 bay leaves
700ml hot vegan vegetable stock
100g sultanas
100g flaked almonds , toasted until golden brown
½ small bunch of dill , chopped, plus extra to serve
400g can chickpeas , drained and rinsed
50g pomegranate seeds (optional)

Steps:

  • Wash the rice really well, then leave to soak in cold water for 1 hr. Put the onion in a small bowl and toss with the lemon juice, the sugar and a pinch of salt. Leave to pickle while you make the pilaf.
  • Heat the oven to 200C/180C fan/gas 6. Whisk 2 tbsp harissa, the garlic and oil in a large bowl, then add the cauliflower and toss to coat in the sauce. Season, then tip into a roasting tin and roast for 30 mins until tender and golden.
  • Meanwhile, mix the saffron, bay leaves, stock and 2 tbsp harissa in a pan over a very low heat to keep warm while the cauli roasts.
  • Remove the cauli from the oven, tip into a dish and squeeze over the juice from one of the lemon wedges. Drain the rice and tip into the roasting tin. Pour over the infused stock, and mix well. Stir in the sultanas, half the almonds, the dill, chickpeas, and half the cauliflower. Cover the tin with a double layer of foil, sealing well, then bake for 30 mins until the rice is tender and stock is absorbed.
  • Fluff up the rice with a fork, then fold in the remaining cauliflower (this creates a contrast of cauli textures). Scatter over the extra dill, the remaining almonds, the pomegranate seeds, if using, the pickled red onions and remaining lemon wedges to squeeze over.
