RESTAURANT-QUALITY FRIED CATFISH



Restaurant-Quality Fried Catfish image

Catfish fried in a tasty cornmeal batter, served with homemade tartar sauce.

Number Of Ingredients 14

4 fillets catfish (a little over a pound, total)
1½ cups oil (vegetable, canola or peanut (you may need more or less; depends on how deep your skillet is))
2 cups cornmeal (yellow, not self-rising)
1 cup buttermilk
1 tablespoon cayenne pepper ((red pepper, ground))
1 teaspoon salt
1 teaspoon black pepper
1 cup mayonnaise
2½ tablespoons relish (, (dill or sweet); squeezed in a paper towel)
¼ teaspoon onion powder
¼ teaspoon garlic powder
¼ teaspoon sugar
¼ teaspoon salt
1 teaspoon vinegar (or lemon)

Steps:

  • Pat fillets with paper towel
  • Place fish in a large baking dish or plastic storage bag, pour in buttermilk; coat well; allow to sit for 10-minutes in refrigerator
  • Meanwhile, make tartar sauce; After the tartar sauce is made, coat and cook the fish
  • In a large bowl, add cornmeal, salt, pepper and cayenne; stir with fork till blended
  • Using a cast-iron, or heavy bottom skillet, pour oil into skillet and heat to medium;
  • While oil is heating, take a fillet directly from the buttermilk and place it in the cornmeal; pat the cornmeal on the fillet; coat it all over, twice; repeat with remaining fillets
  • Check your skillet; the oil needs to be around 312 - 350ºF; you can sprinkle a few pieces of cornmeal in the oil to see if it sizzles; if it does sizzle, the oil is ready
  • Cooking in batches of two fillets, place them in the hot oil; DO NOT MOVE THE FILLETS until they've cooked for 2 1/2 - 3 minutes on one side
  • After 2 1/2 -3 minutes, use tongs and flip the fish over and cook for an additional 3 minutes
  • Use a thermometer to measure internal temperature; it should be 145ºF
  • Remove fillets from oil and place on a paper towel
  • Repeat until all fillets are cooked and drained
  • Plate fillets and serve with lemon and tartar sauce
  • In a small bowl, combine all ingredients; refrigerate until ready to serve

4 6-ounce catfish fillets
Kosher salt and freshly ground pepper
All-purpose flour, for dredging
2 tablespoons unsalted butter
3 tablespoons extra-virgin olive oil
2 cloves garlic, finely chopped
1/2 cup dry white wine
1 lemon (1/2 zested and juiced, 1/2 cut into wedges)
3 cups mixed salad greens
2 tablespoons capers, drained and rinsed
1/2 cup fresh parsley leaves

Steps:

  • Pat the fish dry and season with salt and pepper. Put the flour in a shallow bowl. Dredge the fish in the flour, shaking off the excess. Heat 1 tablespoon each butter and olive oil in a large nonstick skillet over medium-high heat. Add the fish and cook, turning once, until opaque, about 3 minutes per side. Transfer to a plate and cover with foil. Add the garlic to the skillet and cook, stirring, until just golden, about 30 seconds. Remove from the heat and add the wine, lemon zest and lemon juice. Return to the heat and cook, stirring, until the wine is slightly reduced, about 2 minutes. Season with salt and pepper. Meanwhile, toss the greens with 1 tablespoon olive oil, and salt and pepper to taste. Divide the fish among plates. Add the remaining 1 tablespoon butter to the sauce in the skillet and stir until melted. Pour the butter sauce over the fish. Wipe out the skillet. Heat the remaining 1 tablespoon olive oil in the skillet over high heat. Add the capers and parsley and fry until crisp, about 1 minute; sprinkle over the fish. Serve with the salad and lemon wedges.

6 tablespoons lemon juice
1/4 cup butter, melted
2 teaspoons Worcestershire sauce
4 catfish fillets (about 5 ounces each)
1/2 teaspoon salt
1/2 teaspoon lemon-pepper seasoning

Steps:

  • In a large resealable plastic bag, combine the lemon juice, butter and Worcestershire sauce. Add the fish; seal bag and turn to coat. Cover and refrigerate for 30 minutes, turning occasionally., Drain and discard marinade. Sprinkle fish with salt and lemon-pepper. Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Grill, fish, covered, over medium heat or broil 4 in. from the heat for 4-6 minutes on each side or until fish flakes easily with a fork.

1 cup buttermilk
4 catfish fillets
1 cup cornmeal
1/2 cup flour
1 1/2 teaspoons freshly ground sea salt or 1 1/2 teaspoons kosher salt
2 tablespoons coarsely ground black pepper
vegetable oil (for frying)

Steps:

  • Place buttermilk in a 2-quart baking dish; place fillets in buttermilk and allow to marinate for 15 minutes.
  • Place oil in a 12 incg cast iron skillet to a depth of about 2 inches. Heat until oil registers 375 degrees F. on an instant-read thermometer.
  • In a large, zipper-lock food storage bag, mix remaining ingredients by zipping them inside bag and shaking until well blended. Remove fillets from buttermilk; allow excess liquid to drain.PPlace fillets in bag and shake gently until completely coated.
  • Gently shake off excess coating mixture and carefully place into hot oil. Fry until golden brown, about 5 minutes on each side. Drain on paper towels and serve.

CATFISH AND PEPPERS EN PAPILLOTE

1/2 cup balsamic vinegar
2 tablespoons lemon juice
1 teaspoon finely chopped fresh thyme
1/4 teaspoon finely minced garlic
Kosher salt and freshly cracked black pepper

Steps:

  • Preheat the oven to 350 degrees F.
  • For the marinade: Combine the balsamic vinegar, lemon juice, thyme and garlic in a small mixing bowl. Season with salt and pepper. Set aside until ready for use.
  • For the peppers: Heat the oil in a medium saute pan over medium-high heat. Once hot, add the onions and saute until translucent, about 3 minutes. Add the peppers and continue to cook to just get a little color on the vegetables, about 2 minutes. Season with salt and pepper and saute until just fragrant, about 30 seconds. Remove from the heat and reserve.
  • For the catfish: Take four 12- by 12-inch sheets of parchment paper and place on a clean work surface. Working with one packet at a time, begin by folding a piece of parchment paper in half to make a crease down the middle. Open it back up and spoon about 1/3 cup of sauteed peppers and onions onto the middle of the parchment paper. Place a fillet of fish on top. Drizzle 2 tablespoons of the marinade over the top and sprinkle with salt, pepper and a pinch of paprika for color. Fold the parchment back over the fish to enclose. Working from one corner and around the fish to the other corner, make small folds that overlap one another so the packet gets tightly sealed. Continue to fold crease over crease until the packet is sealed. Tuck the last fold under the packet to hold in place.
  • Repeat with all four packets, and then place on a sheet tray and into the oven. Bake until the packets puff up completely, 10 to 12 minutes.
  • To serve: Open the parchment packet tops with scissors and garnish with parsley, scallions and lemon wheels.

1 tablespoon sea salt
3 large cloves garlic, minced
2 (8 ounce) fillets catfish
2 tablespoons lemon pepper seasoning (such as McCormick®)
2 tablespoons garlic and herb seasoning blend (such as Mrs. Dash®)
1 ½ teaspoons Creole seasoning (such as Tony Chachere's®)
1 lemon, thinly sliced
¼ cup shredded carrot
2 tablespoons chopped fresh parsley
1 lemon, quartered

Steps:

  • Pour the juice of 5 lemons into a glass bowl; whisk in the sea salt and garlic. Add the catfish fillets, cover, and marinate in the refrigerator 1 to 4 hours.
  • Preheat the oven's broiler for 400 degrees F (205 degrees C) and set the oven rack to the lowest position.
  • Remove the catfish fillets from the marinade, and shake off excess; discard the remaining marinade. Place the fillets on a broiling pan; sprinkle with the lemon pepper seasoning, garlic and herb seasoning, and Creole seasoning. Arrange the lemon slices over the fillets.
  • Broil in the preheated oven until the fish flakes easily with a fork, 12 to 15 minutes. You may wish to turn the broiler on fully for the last few minutes if you like the edges of the fish blackened. Sprinkle the fillets with shredded carrot and parsley to garnish. Serve with lemon wedges on the side.

2 (3 ounce) fillets catfish
1 teaspoon brown sugar

Steps:

  • Melt butter with olive oil in a large skillet over medium heat. Cook and stir green onions, garlic, parsley, salt, and pepper in the hot oil until vegetables are softened, about 2 minutes. Stir lemon juice and 1/4 cup brown sugar into green onion mixture, stirring constantly until sugar is dissolved, about 2 minutes more.

½ cup buttermilk
½ cup water
salt and pepper, to taste
1 pound catfish fillets, cut in strips
1 ½ cups fine cornmeal
½ cup all-purpose flour
1 teaspoon seafood seasoning, such as Old Bay™
1 quart vegetable oil for deep frying

Steps:

  • In a small bowl, mix buttermilk, water, salt, and pepper. Pour mixture into a flat pan large enough to hold the fillets. Spread fish in one layer over bottom of pan, turning to coat each side, and set aside to marinate.
  • In a 2 gallon resealable plastic bag, combine the cornmeal, flour, and seafood seasoning. Add fish to mixture, a few fillets at a time, and tumble gently to coat evenly.
  • Heat oil in deep fryer to 365 degrees F (185 degrees C).
  • Deep fry fillets until golden brown, about 3 minutes. Avoid overcrowding so fillets have room to brown properly. Fish should be slightly crisp outside, and moist and flaky inside. Drain on paper towels.
