RESTAURANT STYLE SALSA



Restaurant Style Salsa image

Recipe video above. Just like what you get at your favourite restaurant and those jars sold alongside corn chips at the grocery store.... but it's better, healthier and cheaper! The fresh flavour is so, so good. Make it chunkier or smoother, to your taste.

Number Of Ingredients 11

1/4 cup chopped onion ((white, brown or yellow))
1 tbsp jalapeño pepper (, seeds removed, roughly chopped (fresh best, canned ok))
400g / 14 oz canned crushed tomato (, best quality)
4 oz / 120g canned diced green chiles ((Note 1))
1/4 cup (packed) cilantro/coriander (, roughly chopped)
1/2 tbsp+ lime juice
1 clove garlic (, minced)
1/2 tsp sugar
1/2 tsp salt
1/4 tsp black pepper
1/4 teaspoon ground cumin

Steps:

  • Place onion and jalapeno in the food processor first, then add remaining ingredients (start with 1/2 tbsp lime juice).
  • Blitz to desired consistency - I like mine pretty smooth because you get better flavour out of the onion etc.
  • Taste test with corn chip for salt and lime. Adjust if necessary.
  • Refrigerate 1 hour before serving with corn chips, or other dippers (see in post for suggestions).

From 365 Easy Mexican Recipes. This is a good side dish to grilled meats. I think pre-shredded carrots would work the best for a better texture.

1/2 small cabbage, finely shredded (2 cups)
1 medium carrot, finely shredded
1 tablespoon chopped parsley
1 tablespoon finely chopped pickled jalapeno pepper
1 tablespoon unseasoned rice vinegar
1 teaspoon sugar
1/2 teaspoon salt
1 tablespoon olive oil

Steps:

  • In a medium bowl, combine all ingredients.
  • Cover and refrigerate for at least 30 minutes.

4 cups shredded carrot, or about 4 large carrots shredded
½ cup medium tomato, about 2 tomatoes, finely diced
½ cup medium red onion, finely diced
2 tablespoons serrano pepper, minced
½ cup fresh cilantro, roughly chopped
1 large carrot, peeled and shredded
1 habanero pepper, seeded
2 fresno chilies, seeded
6 cloves garlic, peeled
¼ cup cilantro, chopped stems and leaves
1 teaspoon salt, plus more to taste
2 tablespoons grapeseed oil
½ cup distilled vinegar
¼ cup water

Steps:

  • Combine Macho Salsa ingredients and mix in a food processor. Salsa should be slightly chunky.
  • Combine all ingredients in a bowl and season to taste with salt.

  • Set oven rack to 1/3 top of oven and preheat oven to 425F (218C). Line a sheet pan with parchment paper.
  • Place the garlic cloves in a small piece of foil and add 2 tsp of olive oil. Wrap loosely and place on the sheet pan. Toss the carrot, and onion with two tsp of olive oil and arrange the veggies and peppers so that there is space between the veggies, as to not crowd them. Roast in the oven for 25 minutes turning the habaneros a few times so that all sides blister.
  • Decide if you want to keep the seeds and ribs of the habanero. If retaining the seeds and ribs, gently slice off the stem and add the peppers to the high speed blender (I use Vitamix) along with the remaining olive oil, garlic, carrot, onion, lime, salt, and vinegar. Add half the water and increase as needed as you begin to blend. If removing the ribs and seeds, after roasting and the peppers are cool enough to handle, use gloved hands to slice open the pepper and remove the seeds and ribs. Holding the peppers under running water makes this easier. Add the sugar now or test after salsa is purred to see if it's desired. Puree the mixture using the tamper to push the mixture into the blades. Stop and scrape down the container several times. Puree until a smooth texture is achieved. For a thinner puree, add more water, a few tablespoons at a time and blend until the desired consistency is reached.
  • Serve with corn chips and cooling veggies like celery, green bell pepper, jicama and cucumber.
