NON-TRADITIONAL PASSOVER CARROT CAKE

Non-Traditional Passover Carrot Cake image

A version of carrot cake for the Passover seder or anytime. Filled with goodies (raisins, chopped nuts, coconut, and spices) held together with almond flour and a bit of matzo cake meal, it's aromatic and not too sweet.

Provided by Laura

Number Of Ingredients 17

1 -3/4 cup almond flour
1/2 cup pecans or walnuts, coarsely chopped
1 cup granulated sugar
1/4 cup matzo cake meal
1 teaspoon cinnamon
1/2 teaspoon ground nutmeg, preferably freshly ground
1 pinch Kosher or sea salt (Not pictured in photo above (sorry))
4 ounces margarine or butter (1 stick or 8 tablespoons)
2 egg yolks (Recipe uses 6 egg whites, so using the yolks from those leaves 4 extra yolks (for flan?))
1 teaspoon vanilla
1/2 teaspoon almond extract
1 lemon, zested and 1-2 tablespoons of juice reserved
1 pound carrots, coarsely grated (About 6 carrots)
1 cup raisins, soaked for a few minutes in a small amount of hot water or juice
1/2 cup unsweetened coconut
6 whites from 6 large eggs
1/4 cup confectioners sugar

Steps:

  • Preheat the oven to 350 degrees F. Grease a 9-inch round cake pan with 1 -1/2 to 2-inch sides, place a piece of parchment on the bottom (cut to fit) and grease the parchment.
  • Lightly toast the almond flour and the chopped nuts in the oven (in separate pans), stirring occasionally for about 10 minutes.
  • Put the almond flour in a medium-sized bowl and stir in 1/4 cup of the granulated sugar, the matzo cake meal, cinnamon, nutmeg, and a pinch of salt. Set aside.
  • In a large bowl, beat the margarine or butter and the remaining 3/4 cup of granulated sugar for several minutes with an electric hand or stand mixer until they are light and fluffy. Then add the egg yolks, vanilla, almond extract, and the lemon zest, beating all those ingredients into the margarine or butter and sugar mixture until well combined.
  • Add to that mixture the dry (almond flour mixture) ingredients.
  • Mix in the shredded carrots, raisins, coconut, and chopped nuts. The batter is stiff and combining these ingredients is best done with a rubber or silicone spatula, rather than by continuing to use the mixer.
  • In another large bowl, beat the egg whites until they are just stiff. At the end, drizzle in 1 tablespoon of lemon juice.
  • Gently mix in 2 large dollops of the egg whites into the batter. Then fold the rest of the egg whites in, just until the ingredients are combined. Do not be concerned if bits of the egg white remain visible; combining ingredients without deflating the egg whites means that the batter will not look totally uniform.
  • Spoon the batter into the prepared pan, and smooth the top. Bake the cake for 50-60 minutes, until a cake tester comes out clean.
  • Cool the cake in the pan on a wire rack and run a knife around the edge of the pan before inverting the pan on a platter.

Provided by Food Network Kitchen

Time 1h

Yield 8 to 10 servings

Number Of Ingredients 14

Cooking spray
2 cups almond flour
1/2 cup kosher potato starch
1 teaspoon finely grated orange zest
1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon kosher salt
2 cups shredded carrots (3 to 4 large carrots)
2 large eggs plus 3 egg whites
1 1/4 cups granulated sugar
1 cup confectioners' sugar
1 tablespoon plus 2 teaspoons fresh orange juice
1 vanilla bean, split lengthwise and seeds scraped (optional)
Pinch of kosher salt

Steps:

  • Make the cake: Preheat the oven to 375 degrees F. Coat a 10-inch Bundt pan with cooking spray.
  • Whisk the almond flour, potato starch, orange zest, cinnamon, ginger and salt in a large bowl; stir in the carrots.
  • Combine the whole eggs and 1 cup granulated sugar in another large bowl. Beat with a mixer on medium-high speed until pale and thick, about 3 minutes. Gently fold in the carrot mixture.
  • Put the egg whites in another large bowl and beat with a mixer on medium-high speed until just foamy. Gradually add the remaining 1/4 cup granulated sugar and beat until stiff, glossy peaks form, 6 to 8 more minutes.
  • Gently fold the beaten egg white mixture into the carrot mixture in 3 additions until just combined. Scrape the batter into the prepared pan. Bake until the cake springs back when pressed and a toothpick inserted into the center comes out clean, 25 to 30 minutes. Transfer to a rack and let cool completely in the pan, then invert onto a platter.
  • Make the glaze: Whisk the confectioners' sugar, orange juice, vanilla seeds and salt in a bowl. Drizzle over the cake and let set slightly before serving.

Categories     World Cuisine Recipes     European     Swiss

Time 2h10m

Yield 10

Number Of Ingredients 14

1 teaspoon butter
4 eggs, separated
1 cup white sugar
2 ¼ cups peeled and grated carrots
2 ¼ cups ground almonds
1 lemon, zested and juiced
½ cup all-purpose flour
1 teaspoon baking powder
1 pinch salt
5 ounces marzipan
1 drop green gel food coloring, or as needed
1 drop orange gel food coloring, or as needed
1 cup confectioners' sugar
1 tablespoon fresh lemon juice, or more to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 9-inch springform pan.
  • Beat egg yolks and sugar together in a large bowl with an electric mixer until fluffy. Beat in carrots, almonds, lemon juice, and lemon zest.
  • Mix flour, baking powder, and salt together in a bowl and add to the batter. Stir well to combine.
  • Beat egg whites in a glass, metal, or ceramic bowl until stiff peaks form. Fold into the cake batter with a spatula. Pour batter into the prepared springform pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 40 to 50 minutes. Cool on a wire rack for 5 minutes. Run a table knife around the edges to loosen. Remove carefully and place on a serving plate or cooling rack. Let cool, about 30 minutes.
  • Knead marzipan until soft and pliable. Pinch off 1/5 and add a little green food coloring using a toothpick. Knead until marzipan is uniformly green. Color the remaining marzipan orange using the same method. Shape orange marzipan into 12 little carrots and make tiny indentations on top with a paring knife. Shape the green marzipan into little leaves. Stick 2 leaves to the top of each carrot with a little water.
  • Combine confectioners' sugar and enough lemon juice to make a thick icing. Coat cake with the icing. Place marzipan carrots on top around the edges in such a way that each piece of cake has a marzipan carrot. Let icing dry before slicing and serving.

CARROT ALMOND CAKE

Carrot Almond Cake image

I took a cooking class recently from Marcella Hazan's son, Giuliano Hazan. This was the dessert we made in class. It's the best carrot cake I've ever had and contains no flour. It keeps well in the refrigerator for a week!

Provided by Grace Lynn

Categories     Dessert

Time 1h20m

Yield 1 cake, 8-12 serving(s)

Number Of Ingredients 12

9 ounces shelled unblanched almonds
1 cup granulated sugar
2 tablespoons granulated sugar
9 ounces carrots, peeled
4 ounces dry ladyfingers
2 1/2 teaspoons baking powder
1 tablespoon amaretto liqueur
1 pinch salt
4 large eggs, separated
2 teaspoons butter, for greasing the pan
1 tablespoon flour, for dusting the pan
1 cup heavy cream, whipped with 1 teaspoon of sugar

Steps:

  • Preheat oven to 350 degrees.
  • Put the almonds and sugar in a food processor and chop as finely as possible. Transfer to a large mixing bowl. Break up the ladyfingers into pieces, about an inch long, place them in the food processor and grind to a powder. Add to the almonds and sugar in the mixing bowl. Cut the carrots into pieces about an inch long, and chop in the food processor as finely as possible. Add to the bowl, mixing them well with the other ingredients.
  • Add the baking powder, salt, and the Amaretto liqueur and mix well. Add the egg yolks, mixing them in until they are well distributed with the other ingredients.
  • Whip the egg whites with an electric mixer or by hand until they form stiff peaks. Take a couple of tablespoons of the beaten egg whites and mix them with the ingredients in the bowl to soften the mixture a bit. Pour the rest of the egg whites onto the mixture and carefully fold them in with a rubber spatula.
  • Grease the bottom and sides of a 10 inch springform pan with the butter and dust it with flour. Pour the batter into the pan, then shake the pan a bit until the batter is evenly distributed.
  • Place the pan in the upper level of the preheated oven and bake for 50-60 minutes, or until a toothpick comes out dry when inserted into the cake.
  • When the cake is cool, cut it into 8 to 12 pieces and serve with a dollop of whipped cream.
