1 ½ tsp Salt (Or salt to your liking)
5 Pimento berries (allspice)
3 Cloves garlic (Crushed )
1 Medium onion (Chopped)
3 Sprig of fresh thyme
2 Medium carrots (Chopped)

1 ½ tsp Freshly grated ginger
1 Small scotch bonnet pepper (seeds removed and findly chopped)
3 tbsp Cooking oil
Boiling water
1 lime/lemon (To wash the chicken)
1 tsp Vinegar (To wash the chicken)

CARIBBEAN CURRY SAUCE

This recipe is derived from Columbo, Jerk seasonings, and other Caribbean curries. This is a wonderful cooking sauce. You can marinate chicken or meat in it before sauteing, grilling, broiling or baking. Dribbled over stir-fried vegetables, it makes a great dish to eat over rice.

CURRY SAUCE

Curry Sauce image

This is a flavorful curry sauce from a recipe given to me by an Indian friend that's great with chickpeas or vegetables. I love to throw it in the slow cooker with frozen mixed veggies all day for a healthy Indian dinner. This sauce also freezes beautifully.

JAMAICAN CURRY POWDER

Jamaican Curry Powder image

An authentic Jamaican curry powder without hot pepper, which should be added separately to any dish. You can also use powdered versions of any of the ingredients, but for better flavor use whole seed. For authentic Jamaican flavor, you will usually add Scotch Bonnet or Habanero peppers to your recipes. However, if you want to add heat directly to the powder, add 2-4 tablespoons cayenne powder to the mix, depending on your taste.
