2 boneless skinless chicken breast halves (4 ounces each)
2 teaspoons olive oil
1/4 teaspoon garlic salt
1/4 teaspoon paprika
1/4 teaspoon pepper
1/8 teaspoon dried basil
1/8 teaspoon dried oregano
4 cups torn romaine
1 small tomato, thinly sliced
1/4 cup fat-free creamy Caesar salad dressing
Caesar salad croutons, optional

Steps:

  • Brush chicken with oil. Combine the garlic salt, paprika, pepper, basil and oregano; sprinkle over chicken. Grill, uncovered, over medium heat or broil 4 in. from the heat for 4-7 minutes on each side or until a thermometer reads 170°., Arrange romaine and tomato on plates. Cut chicken into strips; place over salads. Drizzle with dressing. Sprinkle with croutons if desired.

2 thick slices rustic white bread, cut into 1-inch cubes
1/4 cup extra-virgin olive oil
Coarse salt and ground pepper
1 garlic clove, minced
2 anchovy fillets, minced
1 large egg yolk or 1 tablespoon pasteurized egg yolk
1 1/2 teaspoons Dijon mustard
1 tablespoon fresh lemon juice
1 small head romaine lettuce, cored, outer leaves discarded, and heart cut into 1 1/2-inch pieces
2 tablespoons freshly grated Parmesan

Steps:

  • Preheat oven to 400 degrees. On a rimmed baking sheet, toss bread with 1 tablespoon oil and season with salt and pepper. Bake until golden brown, 10 to 12 minutes. Let croutons cool completely.
  • On a cutting board, combine garlic, anchovies, and 1/2 teaspoon salt. Using a large knife, drag the blade at an angle across mixture until a paste forms. Transfer to a large bowl and whisk in egg yolk, mustard, and lemon juice. Gradually whisk in 3 tablespoons oil. Season with pepper. Just before serving, add croutons and lettuce to dressing and toss; top with Parmesan.

1 pound boneless skinless chicken breasts, cut into 1-inch pieces
1/2 cup thawed nonalcoholic pina colada mix, divided
1 cup tangerine or mandarin orange segments
1 celery rib, chopped
2 tablespoons crushed pineapple
1 green onion, chopped
4 pitted ripe olives, sliced
2 tablespoons plus 2 teaspoons lemon juice
4 teaspoons mayonnaise
2 teaspoons grated Parmesan cheese
1 to 2 garlic cloves, minced
1/8 teaspoon salt
1/8 teaspoon pepper
4 cups torn romaine or iceberg lettuce

Steps:

  • Combine chicken and 1/4 cup pina colada mix. In a large skillet coated with cooking spray, cook and stir chicken mixture over medium heat until chicken is no longer pink. Remove from the heat; set aside., Combine the tangerines, celery, pineapple, onion and olives in a large bowl. In a small bowl, combine the lemon juice, mayonnaise, cheese, garlic, salt, pepper and the remaining pina colada mix., Add chicken and romaine to the tangerine mixture; drizzle with dressing and toss to coat.
