OLD-FASHIONED APPLE PIE
The words "apple pie" conjure warmth, aroma, taste, and togetherness. This apple pie recipe is filled with Granny Smith apples and is tucked into a buttery pie crust. To make this apple pie recipe even sweeter, serve it with a scoop of vanilla ice cream.

Steps:
- Heat oven to 375 degrees. On a lightly floured surface, roll out pate brisee into two 1/8-inch-thick circles to a diameter slightly larger than that of an 11-inch plate. Press one pastry circle into the pie plate. Place the other circle on waxed paper, and cover with plastic wrap. Chill all pastry until firm, about 30 minutes.
- In a large bowl, combine apples, sugar, lemon zest and juice, spices, and flour. Toss well. Spoon apples into pie pan. Dot with butter, and cover with remaining pastry circle. Cut several steam vents across top. Seal by crimping edges as desired. Brush with beaten egg, and sprinkle with additional sugar.
- Bake until crust is brown and juices are bubbling, about 1 hour. Let cool on wire rack before serving.
OLD FASHIONED APPLE CIDER PIE
The cider in this pre-cooked filling gives it a tangy flavor.

Steps:
- 1. Combine cider and sugar in large, heavy sauce pan and bring to boil.
- 2. Add apples and cook uncovered until apples are tender (about 8 minutes)
- 3. Drain reserving syrup. If necessary, add enough cider to syrup to make 1 1/3 -1 1/2 cups.
- 4. Return apples and syrup to pan and return to heat. Blend together cornstarch and water and add to apple mixture along with cinnamon.
- 5. Cook, stirring constantly until mixture comes to a boil and thickens.
- 6. Spoon filling into pie shell and cover with upper pastry and flute edges. Brush crust with milk and sprinkle with sugar. Vent crust.
- 7. Bake at 350 for 50 minutes.

- Preheat oven to 425 degrees F (220 degrees C).
- In a bowl combine apples, sugar, flour, cinnamon, nutmeg and salt. Place mixture in a pastry-lined 9 inch pie plate. Dot with butter and adjust top crust that has been vented.
- Place in oven and bake at 425 degrees F (220 degrees C) for 10 minutes. Turn oven temperature down to 275-300 degrees F (135-150 degrees C) and bake 40-50 minutes or until crust is golden brown and apples are tender. Let cool and serve.

- Preheat oven to 350 degrees. Butter 9-inch pie plate. Lay 1 sheet phyllo dough on clean surface. Place slightly damp kitchen towel over remaining dough to keep from drying out. With pastry brush, lightly brush with melted butter. Lay another sheet phyllo on top of buttered sheet, lightly butter. Repeat until all 8 layers are buttered, using 6 tablespoons of the butter. Place phyllo dough into the prepared pan, pressing it along bottom and sides. Trim the edges. Sprinkle walnuts over bottom of crust. In medium bowl beat together maple sugar, maple syrup, jelly, remaining 8 tablespoons butter, and eggs. Pour egg mixture over walnuts. Bake 40 to 45 minutes, or until filling is set. Serve chilled.

- 1. Prepare a pie tin according to the pie dough directions, lining the bottom of the tin.
- 2. Place the apples and cider in a pot and bring to a simmer. Simmer until the apples are soft and plump, about 20 minutes.
- 3. Preheat the oven to 400 F.
- 4. Add the sugar, cinnamon and nutmeg. stir to combine, and continue cooking for 10 more minutes. The apples should absorb most of the liquid. Pour the apples into the pie shell. Dot with pieces of the butter.
- 5. Roll out the second crust. Cut into lattice strips, either plain or with a ruffled edge. Weave the strips over the apple filling to form a lattice.
- 6. Bake for 25-30 minutes until golden brown.

- Prepare the Crust: Using your fingers, mix together flour, butter, and salt in a large bowl until butter is well incorporated. - Prepare the Filling: Preheat oven to 425°F with oven rack in lowest position. Stir together apples, sugar, flour, cinnamon, and salt in a large bowl until apples are evenly coated. Spoon mixture into prepared piecrust; sprinkle mixture with butter.
- Unwrap remaining chilled pie dough disk, and place on a lightly floured work surface. Let stand at room temperature until slightly softened, about 5 minutes. Sprinkle with flour; roll into a 12-inch circle. Cut into 12 (3/4-inch-wide) strips. (Discard remaining dough scraps, or use for another purpose.) Arrange strips in a lattice design over Filling; trim strips as needed to meet the bottom Crust overhang. Fold dough edges under, and crimp using your fingers or a fork.
