PINE NUT CARDAMOM SCONES

1/2 cup milk
1 large egg
3 tablespoons light brown sugar
1 teaspoon vanilla extract
2 1/4 cups cake flour (not self-rising)
1/2 teaspoon salt
1 tablespoon double-acting baking powder
1/2 teaspoon baking soda
2 teaspoons ground cardamom
1/4 teaspoon cinnamon
1/4 teaspoon freshly grated nutmeg
2 teaspoons freshly grated lemon zest
3/4 stick (6 tablespoons) cold unsalted butter, cut into bits
1/3 cup pine nuts, toasted lightly
an egg wash made by beating 1 large egg with 2 tablespoons milk
granulated sugar for sprinkling the scones

Steps:

  • In a bowl whisk together the milk, the egg, the brown sugar, and the vanilla until the mixture is combined well. In another bowl stir together the flour, the salt, the baking powder, the baking soda, the cardamom, the cinnamon, the nutmeg, and the zest and blend in the butter until the mixture resembles coarse meal. Stir in the milk mixture and three fourths of the pine nuts with a fork until the mixture just forms a sticky but manageable dough. Knead the dough gently on a lightly floured surface for 30 seconds, pat it into a 3/4-inch-thick round, and with a 2 1/2-inch fluted cutter cut it into rounds. On an ungreased baking sheet press the remaining pine nuts lightly into the scones, brush the scones with the egg wash, and sprinkle them with the granulated sugar. Bake the scones in the middle of a preheated 400°F. oven for 15 to 18 minutes, or until they are golden.

2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
3/4 teaspoon ground cardamom
1/4 teaspoon salt
3/4 cup sour cream
1 large egg
1/4 cup sugar
1 teaspoon lemon peel, grated
1/2 cup unsalted butter, cold, cut into chunks
3/4 cup prune, finely cut

Steps:

  • Preheat oven to 375 F.
  • Put flour, soda, powder, salt and cardamom into large bowl, mix well.
  • In another bowl, beat together sour cream, egg, lemon peel and sugar.
  • Cut butter into flour mixture until it resembles coarse sand.
  • Add prunes to flour/butter and toss to distribute evenly.
  • Add sour cream mixture and stir with a spoon until a sticky dough forms.
  • Drop by 1/3 cupfuls of dough 2 inches apart on an ungreased cookie sheet.
  • Bake 20 to 25 minutes, until golden brown.
  • Cool, loosely covered with a dish towel, on a wire rack.

2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
2 tablespoons sugar
1/2 cup butter, chilled and cut into small pieces
1/2 cup dried blueberries
1/2 cup low-fat milk, plus more if needed
coarse sugar, for topping

Steps:

  • Preheat oven to 400°F Line a baking sheet with parchment paper.
  • In a medium bowl, whisk together flour, baking powder, salt and sugar. Add cut up butter and toss to coat. Using your finger tips, rub the butter into the flour mixture until it resembles very coarse sand. A few large bits are ok, but try not to have any pieces larger than an average pea.
  • Stir in dried blueberries. Add about 2/3 of the milk and stir. Add remaining milk gradually until the mixture comes together into a slightly sticky ball. Divide dough in eight even pieces and place on a parchment-lined baking sheet. Sprinkle with a bit of coarse sugar, if desired.
  • Bake for 16-19 minutes, until scones are a light golden color. A toothpick should come out clean, but color is a reliable indicator for these.

3 cups flour
2 teaspoons baking powder
1 cup sugar
1/4 teaspoon salt
3/4 cup butter or 3/4 cup margarine
1 egg, well beaten plus
milk, to make 1 cup
1 cup dried cranberries (my favorite) or 1 cup mini chocolate chip (my favorite)

Steps:

  • Preheat oven to 450. Grease or spray a large cookie sheet.
  • Stir together dry ingredients including the sugar. Cut butter into flour mixture. Add raisins (or whatever you use), stir to mix well.
  • Beat egg in measuring cup. Add milk to make 1 cup. Stir into flour.
  • Drop roughly tablespoon size scoops on cookie sheet. Bake for 10-12 minutes.
  • (You can knead 15-20 times and roll out and cut if you wish -- but I prefer the ease of the drop method.).

225g self-raising flour , plus extra for dusting
¼ tsp salt
50g butter , very cold, diced
100g prunes
40g chopped flaked almonds
a few drops of vanilla extract
150ml buttermilk (or milk)
beaten egg

Steps:

  • Heat oven to 220C/200C fan/gas 7. Put the flour, salt and butter in a food processor and pulse until you can't feel any lumps of butter (or rub in any remaining lumps with your fingers).
  • Halve and stone 100g prunes and add them to the pulsed dry flour mixture along with 40g chopped flaked almonds. Add a few drops vanilla extract to the buttermilk before combining with the flour mixture.
  • Use a knife to quickly combine everything together to form a dough - stop when it has just combined and don't overmix it.
  • Tip the dough onto a floured surface and lightly bring it together with your hands a couple of times. Press out gently until about 4cm thick, then stamp out 6-7cm roundsor cut into squares or triangles (pat the dough into a neat rectangle first to ensure straight edges). Re-shape any trimmings until all the dough is used. Brush the tops with a beaten egg before baking. Spread out on a lightly floured baking sheet and bake for 10-12 mins or until well risen and golden.
