CARAMEL APPLESAUCE

This applesauce is delicious served with our Potato Latkes.

Yield Makes 2 cups

Number Of Ingredients 7

2 Granny Smith apples, peeled, cored, and sliced into eighths
2 McIntosh apples, peeled, cored, and sliced into eighths
Juice of 1 lemon
3 tablespoons unsalted butter
1/3 cup sugar
1 teaspoon ground cinnamon
Pinch of salt

Steps:

  • In a large bowl, toss all the apples with lemon juice, and set aside.
  • Melt butter in a large skillet set over medium-high heat. Sprinkle sugar over melted butter; cook until sugar begins to brown. Add apples; cook until they turn golden brown, about 8 minutes. Stir in cinnamon and salt; remove skillet from heat.
  • Place apple mixture in the bowl of a food processor; process until smooth. Store in an airtight container, refrigerated, up to 3 days. Serve warm or at room temperature.

This is based on Martha Stewart's recipe. I like to make this in my 12" cast iron skillet for an old-fashioned, homey feel.

Number Of Ingredients 6

4 apples (combination of Granny Smith, McIntosh, Fuji, any good baking apple)
1 lemon, juice of
3 tablespoons unsalted butter
1/3 cup sugar
1 teaspoon ground cinnamon
1 pinch salt

Steps:

  • Peel, core and slice the apples into eights. Aim to keep the slices all about the same size so they cook at the same rate.
  • In a large bowl, toss all the apple slices with the lemon juice and set aside.
  • Melt butter in a large skilled over medium-high heat. Sprinkle sugar over melted butter and cook until sugar begins to brown.
  • Add apples. Cover with lid, if desired, and cook until they turn golden brown and are soft, about 8 minutes. Stir in cinnamon and salt; remove skillet from heat.
  • Place apple mixture in the bowl of a food processor; process to desired smoothness. Store in an airtight container in the refrigerator up to 3 days.
  • Serve warm or at room temperature.

1 1/2 cups sugar
1 vanilla bean, split and scraped
6 tablespoons lemon juice

Steps:

  • Peel and core the apples and cut into them into half-inch chunks. Combine with the remaining ingredients, including pod of vanilla bean, and cook over high heat until the apples are tender and caramelized, 5 to 10 minutes. Cool; remove vanilla bean pod and use as directed.

1/3 cup golden raisin
3 tablespoons cognac (brandy or apple juice)
2 lbs pink lady apples (or other soft cooking apple)
1/2-2/3 cup sugar (depending on tartness of apples)
1/4 cup orange juice
2 tablespoons unsalted butter, divided
1 tablespoon grated orange peel
2 teaspoons pumpkin pie spice
1 dash salt
3/4 cup pecan halves, toasted and coarsely chopped

Steps:

  • Soak raisins in cognac (brandy or apple juice) in a small bowl.
  • Peel and coarsely chop apples (yeild a generous 6 cups).
  • Bring all ingredients (except 1 Tbs butter, raisins and pecans) to a boil in a large saucepan.
  • Reduce heat to medium-low and simmer 3 minutes stirring occasionally.
  • Cover and cook over medium-low heat 20-25 minutes or until apples are very soft, stirring occasionally.
  • Increase heat to medium.
  • Add remaining 1 Tbs butter.
  • Cook uncovered 5-8 minutes or until apples are light brown and caramelized, stirring frequently.
  • Stir in raisins and pecans, cook 1 minute.
  • Serve warm or cool completely; cover and store in refrigerator.

I got this recipe from a magazine many years ago. The tubs of caramel sauce made for dipping your apples into are expensive (at least for this mom) and this was a homemade version. Our family loves it.

14 ounces sweetened condensed milk
1/2 cup corn syrup
1/2 cup water
1 tablespoon. butter
1/2 teaspoon vanilla

Steps:

  • Combine sugar, sweetened condensed milk, and corn syrup and cook until sugar is thoroughly dissolved and cooked. Add water and cook until bubbly. Add butter and vanilla and cook 5 more minutes. Be careful not to burn the sugar.

Spicy-tart and thoroughly warming, these apples are a fabulous addition to crepes or homemade ice cream. They're equally at home as an unexpected garnish for mildly spicy grilled chicken or a tropical menu from Martinique. Cook's note: For a delicious "cheater" dessert, fill a store-bought tart shell with these apples. With the homemade goodness of the apples and apple cider reduction sauce, nobody will guess your secret!

3 tablespoons butter
5 spicy-sweet crisp apples (Jonagold, Crispin, Honeycrisp)
1 tablespoon granulated sugar
2 tablespoons granulated sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon lemon zest
1/3 cup apple cider
1/2 teaspoon cornstarch, as needed

Steps:

  • Melt the butter in a large skillet over medium heat.
  • Add the apples to the pan and sprinkle with 1 tablespoon sugar.
  • Sauté the apples, stirring frequently, for 6-8 minutes, until they just start to turn tender.
  • Sprinkle the apples with the remaining sugar, cinnamon, and lemon zest.
  • Toss the mixture gently and cook over medium heat for an additional 2 minutes, until the sugar begins to caramelize and the apples are crisp-tender.
  • Transfer the apples from the skillet to a serving bowl with a slotted spoon.
  • Turn the heat to high and add the apple cider to the skillet, scraping up any browned bits.
  • Reduce the heat slightly and allow the cider and the pan juices to simmer for 1-3 minutes, until the sauce has reduced and thickened slightly.
  • If you desire a thicker sauce, dissolve the cornstarch in a teaspoon of water, stir it into the sauce, and allow it to thicken for a moment.

1 cup heavy cream
1/2 cup apple juice
1 star anise
1 (1-inch) piece fresh ginger, peeled and chopped
4 cloves
2 cinnamon sticks
1/8 teaspoon freshly grated nutmeg
1 1/2 cups sugar
1 tablespoon apple cider vinegar
1 tablespoon apple schnapps

Steps:

  • 1. Combine the cream, apple juice, star anise, ginger, cloves, cinnamon sticks, and nutmeg in a small saucepan and bring to a simmer. Remove from the heat and let steep for at least 20 minutes. Strain the mixture into a clean small saucepan and place back over low heat while you make the caramel.
  • 2. Combine the sugar, 1/2 cup water, and the vinegar in a medium saucepan over high heat and cook without stirring until a deep amber color, 8 to 10 minutes. Slowly and carefully whisk in the warm cream mixture a little at a time, and continue whisking until smooth. Add the apple schnapps and cook for 30 seconds longer. Transfer to a bowl and keep warm. The sauce can be made 2 days in advance and refrigerated. Reheat over low heat before serving.
