PAN-SEARED STEAK AND ONIONS

Usually cooked over an open fire in an iron skillet; this stove-top seared steak with bourbon-flavored onions is excellent eaten with sourdough bread. Sourdough, developed during the gold rush years, was made with a yeast started of flour mixed with water until it fermented and soured.

4 tablespoons (1/2 stick) butter
2 tablespoons olive oil
2 large onions, sliced
1 boneless sirloin steak (about 2 pounds)
Salt and pepper
1/2 cup bourbon

Steps:

  • In a large skillet, melt 2 tablespoons of the butter with 1 tablespoon of the olive oil over medium heat. Add the onions and cook, stirring occasionally, until golden, about 15 minutes. Transfer the onions to a bowl and set aside.
  • Generously season both sides of the steak with salt and pepper. Add the remaining 1 tablespoon of the oil to the skillet and fry the steak over medium heat, turning once, until browned, about 6 minutes per side for medium. Transfer the steak to a serving platter and cover to keep warm.
  • Add the bourbon to the skillet and, over medium heat, scrape up any bits that cling to the pan. Allow the liquor to simmer until reduced by half, about 1 minute. Add the onions and the remaining 2 tablespoons of butter and stir until the butter is melted. Reduce the heat and gently simmer until the onions are heated through, about 2 minutes. Season, to taste, with salt and pepper and stir in any juices that have run off from the steak.
  • To serve, cut the steak into 1/4-inch-thick slices and top with the onions.

1 large onion, halved and sliced
2 tablespoons butter
1/3 cup white wine or chicken broth
1 garlic clove, minced
1/2 teaspoon dried rosemary, crushed
1/4 teaspoon salt
1/4 teaspoon pepper
2 beef tenderloin steaks (1-1/2 to 2 inches thick and 8 ounces each)

Steps:

  • In a large skillet, cook onion in butter over medium heat for 15-20 minutes or until onion is golden brown, stirring frequently. Stir in wine and garlic. Bring to a boil. Reduce heat; simmer, uncovered, for 3-4 minutes or until liquid has evaporated., Meanwhile, combine the rosemary, salt and pepper; rub over steaks. Broil 4 in. from the heat for 7-9 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). Serve with caramelized onions.

3/4 pound lean boneless beef sirloin steak, trimmed and cut into thin strips
1 tablespoon canola oil
1-1/2 cups sliced onions
1 can (8 ounces) tomato sauce
1/2 cup beef broth
1 tablespoon chili sauce
1 teaspoon sugar
1/4 teaspoon salt
1/4 teaspoon pepper
1 package (9 ounces) frozen cut green beans, thawed
Hot cooked rice or yolk-free noodles, optional

Steps:

  • In a large nonstick skillet, brown steak in oil over medium heat. Remove and set aside. In the same skillet, saute onions in drippings until tender. Add the tomato sauce, broth, chili sauce, sugar, salt and pepper; cook and stir for 3 minutes., Add beans and beef. Cook and stir over medium heat until meat and beans are tender and sauce is slightly thickened. Serve over rice or noodles if desired.

1.5 pound(s) sirloin steak
1/2 cup(s) sour cream
1 teaspoon(s) worcestershire sauce
1 tablespoon(s) ketchup
1.5 cup(s) beef bouillon
1 cup(s) red onion, sliced
2 - garlic cloves, minced
1/2 cup(s) butter
1 teaspoon(s) dry mustard
1 teaspoon(s) paprika
1/4 teaspoon(s) pepper
1.5 teaspoon(s) salt
3 tablespoon(s) flour
- parsley for garnish

Steps:

  • Trim excess fat from meat.
  • Cut meat in thin strips.
  • Combine flour with salt, pepper, paprika and mustard.
  • Toss meat with seasoned flour.
  • Melt 1/3 of the butter in large heavy skillet.
  • Add garlic; saute until golden.
  • Remove; set aside.
  • Melt 1/3 more butter.
  • Saute onions for 5 to 6 minutes.
  • Remove; set aside.
  • Heat remaining butter.
  • Saute meat strips until browned; add bouillon and onions.
  • Stir to dissolve browned bits in bottom of skillet.
  • Simmer, uncovered, 15 to 20 minutes, until meat is tender and mixture is thickened, stirring occasionally.
  • Add tomato ketchup or paste, worcestershire sauce and sour cream.
  • Heat gently.
  • Serve over noodles or rice.
  • Sprinkle top with chives or parsley, if desired.

2 boneless New York strip steaks (each 1 inch thick; about 1 1/2 pounds total)
Kosher salt and freshly ground pepper
2 teaspoons dried oregano
1 1/2 teaspoons ground coriander
3 tablespoons extra-virgin olive oil
2 red, orange, or yellow bell peppers (stems, ribs, and seeds removed), thinly sliced lengthwise (3 cups)
1 large onion, halved and thinly sliced (3 cups)
2 basil sprigs, plus fresh leaves, sliced if large, for serving
1/4 cup white balsamic vinegar
1 can (6 ounces) tomato sauce (3/4 cup)
Steamed rice, for serving (optional)

Steps:

  • Pat steaks dry. Generously season with salt and pepper; sprinkle with oregano and coriander. Let stand 5 minutes.
  • Heat a large cast-iron skillet over high. Swirl in 1 tablespoon oil. Add steaks in a single layer. Cook, undisturbed, until a brown crust forms on bottoms, about 4 minutes. Flip and cook, undisturbed, until a crust forms on other sides and a thermometer inserted into thickest parts reads 125 degrees for medium-rare, about 3 minutes more. Transfer to a plate.
  • Reduce heat to medium; wipe any blackened bits from bottom of skillet with a paper towel. Add remaining 2 tablespoons oil, bell peppers, onion, and basil sprigs; season with salt and pepper. Cook, stirring occasionally, until vegetables are golden and tender, 18 to 20 minutes. Add vinegar; cook until reduced by half, about 30 seconds. Add tomato sauce, accumulated juices from steak, and 1/3 cup water. Simmer, stirring a few times, until reduced and thickened slightly, about 2 minutes. Remove and discard basil.
  • Thinly slice steak against the grain. Serve over rice, with braised vegetables and basil leaves.

2 tablespoons Thai sweet chili sauce (if you don't have Asian chili sauce, I am sure other chili sauce or even salsa will work)
1 1/2 tablespoons soy sauce
2 teaspoons balsamic vinegar
2 teaspoons gingerroot, grated
2 (10 ounce) New York strip steaks
1 1/2 tablespoons vegetable oil
2 bell peppers, cut into 1/2 inch thick strips (I used one red and 1 green)
4 green onions, chopped
1/2 cup cilantro, chopped

Steps:

  • Preheat oven to 375-degrees F.
  • In a large bowl or marinating dish whisk together marinade ingredients (chili sauce - ginger); add steaks, turn to coat. Let stand at room temperature for 15 minutes, turning occasionally.
  • In an oven-proof skillet (I used my heavy cast iron skillet), heat 1/2 tablespoon of the vegetable oil over medium high heat.
  • Scrape marinade off of steaks (reserving it in the bowl) and salt and pepper steaks. Add steaks to skillet and cook until browned (3-5 minutes). Turn steaks and transfer skillet to oven. Roast until cooked to desired doneness (5-10 minutes). Transfer steaks to a cutting board - let rest 10 minutes.
  • Meanwhile, in another skillet heat remaining oil (1 tablespoon) over medium high heat. Add onions and bell peppers and cook stirring until crisp-tender (3-5 minutes). Stir in green onions and remaining marinade. Bring to a boil and stir in cilantro.
  • Cut steaks in half cross-wise and divide among 4 plates, spooning vegetables over top of steaks.

Dad's minute steak with golden onions image

A special Father's Day treat

5 tbsp red wine
2 tbsp soy sauce
1 tbsp Dijon mustard
1 tsp light muscovado sugar
450g minute or sandwich steak , cut into strips
1 tbsp olive oil
1 large onion , thinly sliced
4 thick slices of bread (choose Dad's favourite, either white or brown)
50g garlic butter
watercress , to serve

Steps:

  • Mix the wine, soy sauce, mustard and sugar in a big bowl. Toss in the steak strips, season well with pepper and leave to sit and soak while you get everything else ready.
  • Pour the oil into a large frying pan and heat it up over a medium heat for a minute or so. Tip in the onion slices, turn the heat up to very high and cook for 3-4 minutes, stirring often to get the onions really golden brown. Take the onions out and keep them warm.
  • Lift the steak strips out of the marinade with a slotted spoon and stir fry them in the onion pan over a very high heat for 30 seconds (do it in two batches if it's easier). Pour in the marinade from the bowl and boil for a few seconds until it sticks to the meat but is still juicy. Season with salt and pepper and keep warm.
  • Toast the bread and then spread with the garlic butter and cut each slice in half. Overlap two pieces of toast on each plate, top with a spoonful of onions, then the steak and more onions. Put a little pile of watercress on each plate and serve straightaway.
