QUICK CARAMELIZED APPLE TART

Steps:
- Preheat the oven to 425 degrees F. On a floured work surface, roll the puff pastry into a 12-inch square, about 1/8 inch thick. Invert a 10-inch ovenproof nonstick skillet over the pastry. Using the skillet as a guide, cut a 10-inch round of pastry. Transfer to a plate and chill in the refrigerator while you prepare the apples.
- Heat the same skillet over medium heat. Melt the butter and then sprinkle over the sugar and add the apples on top. Once the sugar begins to melt, adjust the heat so the juices bubble rapidly. Cook, stirring, until the apples are tender and juices are light golden brown, 10 to 12 minutes. Remove from the heat.
- Using a fork, nudge the apples into 2 concentric circles (it doesn't have to be perfect) in the skillet. Top with the chilled pastry round and tuck the edges in. Gently prick the pastry in 4 or 5 places with a fork. Bake for 10 minutes at 425 degrees F, until the pastry is puffed and light golden. Reduce the oven temperature to 375 degrees F and bake until the pastry is a deep golden brown, 10 to 12 minutes more. Remove from the oven and let sit 10 minutes.
- To unmold, place a serving plate over the skillet and quickly but carefully flip the pan. The tart will unmold onto the plate, and if a few apple slices stick to the pan, return them to the tart. Let cool at least 20 minutes before serving to allow the syrup to sink into the tart. Serve slightly warm or at room temperature.
CARAMELIZED APPLE TART

Steps:
- Preheat oven to 425 degrees. On a floured work surface, roll out pie dough to a 1/8-inch thickness (or unfold store-bought dough). Invert a 9-inch plate on top of dough; trim dough around plate with a sharp paring knife to form a round (discard scraps, or save for another use). Refrigerate until needed.
- Assemble the tart in a 10-inch cast-iron skillet. Press softened butter evenly into the bottom of the skillet, then sprinkle with the sugar. Arrange apple wedges in a circle around edge, then fill in the center with remaining wedges. Place skillet over medium heat, and cook until sugar mixture is light amber in color and bubbly, 8 to 10 minutes (syrup might brown unevenly).
- Transfer to oven; cook until apples have softened, about 30 minutes. Carefully place dough round on top; bake until golden brown, about 15 minutes more.
- Let cool, about 20 minutes. Run a knife around edge of skillet; invert tart onto a serving platter. Replace any apples that may have stuck to bottom of skillet; drizzle with any remaining pan juices. Serve warm or at room temperature.
CARAMEL APPLE TART
Steps:
- Prepare the pie crust according to package instructions. Roll the dough out between 2 pieces of waxed paper to 1/4-inch thickness. Invert a heavy bottom 10-inch nonstick skillet over the dough, trace the outside edge of the pan and trim the excess. Put the pie dough on a sheet tray, cover it in plastic wrap and refrigerate.
- Preheat oven to 375 degrees F.
- Slice each apple in 2 and place the halves in a bowl of water with a bit of lemon juice to keep them from browning. In a small bowl, combine the sugar with 2 teaspoons of pumpkin pie spice and the salt.
- Put the same skillet used to measure out the pie crust, over medium-high heat, and add the butter. Sprinkle 3/4 of the sugar mixture over the melted butter. Arrange the apple halves flat side down in the pan. Sprinkle the remaining sugar over the apples. Cook until the caramel syrup turns a deep golden brown color, about 15 minutes. Carefully arrange the chilled pie crust over the top of the cooked apples and use a spatula to tuck in the edges.
- Put the skillet in the oven and bake until the crust is cooked and is slightly brown in color, about 15 to 20 minutes. Remove the skillet from the oven and let it stand for around 5 minutes, then invert the pie onto a serving platter.
- In a medium bowl, using a hand mixer on medium speed, whip the heavy cream with the confectioners' sugar and the remaining 1/2 teaspoon of pumpkin pie spice until soft peaks form. Serve the warm tart on individual plates with a dollop of whipped cream.
CARAMELIZED APPLE TART

- FOR CRUST: Whisk flour, sugar, and salt in a large bowl. Add butter and yolks. Using fingertips, rub butter and yolks into flour mixture until coarse meal forms. Gently knead crust in bowl until ball forms, about 4 minutes. Flatten ball into disk. Wrap in plastic and refrigerate 1 hour. (Can be made 1 day ahead, keep refrigerated). FOR FILLING: Preheat oven to 350. Scatter butter cubes over bottom of 12-inch ovenproof skillet. Sprinkle sugar over. Arrange apple halves, cut side up over sugar (there will be some halves left over). Cut remaining apple halves into thin slices; tuck enough apple slices between apple halves to fill in aps. Heat skillet over med heat until sugar and buter melt. Cook, shifting pan often for even cooking, until sugar syrup is deep amber, tucking in more apples slices as more gaps form, about 45 minutes. Cool until bubbling stops, about 10 minutes. Roll out crust on floured surface to 12-inch round. Place crust atop hot apples. Bake until crust is golden brown, about 35 minutes. Transfer to rack and cool at room temp. Heat skillet over med-high heat 3minutes to loosen apple filling. Place large plate over skillet. Using oven mitts, hold plate and skillet together and invert, shaking gently to release tart onto plate. Rearrange any apples that may have becaome dislodged. Cut tart into wedges; serve with vanilla ice cream.
CARAMELIZED APPLE TART BY FIASCHETTERIA TOSCANA
As the cover feature of Bon Appetit's Best of the Year for 2005, this classic recipe was liked best for its taste, simplicity and rustic approach. The whole thing is cooked in a 12-inch skillet started on stove top and then finished in the oven. In Bon Appetit's words, "After everything else we tasted it was something that we could actually sink our teeth into." I second that emotion.

- To make crust, whisk flour, 1/2 cup sugar, and salt in large bowl. Add 1/2 cup chilled butter cubes and egg yolks. Using fingertips, rub butter and yolks into flour mixture until coarse meal forms. Gently knead crust in bowl until ball forms, about 4 minutes. Flatten ball into disk. Wrap in plastic and 1 hour. (Crust can be made 1 day ahead and kept refrigerated.).

CARAMEL CUSTARD APPLE TART
Apples take centre-stage in this autumnal tart, while the custard adds a rich, creamy texture

- Heat oven to 220C/fan 200C/gas 6. Roll the pastry on a lightly floured surface until just thicker than a £1 coin. Use to line a 23cm deep tart tin, allowing the spare pastry to hang over the edges. Line the tart with greaseproof paper and baking beans, then bake for 15 min until golden around the edges. Remove the beans and continue to cook for 5 mins until the base in golden brown. Remove the tart from the oven and leave to cool. Reduce the oven temperature to 160C/ fan 14C/gas 3.
- Meanwhile, tip the sugar into a large frying pan over a high heat. Cook the sugar until it dissolves, bubbles and caramelises. Carefully tip the apple wedges into the caramel and toss until coated. Splash in the brandy, if using, then cook the apples for 2-3 mins until just starting soften and the caramel has dissolved in the apple juices.
- Turn off the heat and remove the apples to a bowl. Pour the cream into the pan then, holding a sieve over the pan, strain in any juices from the apples. Gradually whisk the caramel sauce into the beaten yolks. Arrange the apples over the base of the tart, pour over the custard, then bake for 40 mins until the custard is just set. Leave the tart to cool, then use a knife to cut away the spare pastry and neaten the edges.
