I made a favorite recipe lighter by making my own cookie crust. I used less fat and sugar, and part whole wheat pastry flour. I also used a combination of fat-free and low-fat cream cheese as well as fat-free caramel sauce. My family doesn't notice the difference. -Tari Ambler, Shorewood, Illinois

1/4 cup butter, softened
1/4 cup sugar
1/4 cup packed brown sugar
1 large egg
2 tablespoons canola oil
1 tablespoon light corn syrup
1 teaspoon vanilla extract
1 cup whole wheat pastry flour
3/4 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1/4 teaspoon ground cinnamon
TOPPING:
1 package (8 ounces) fat-free cream cheese
1/4 cup packed brown sugar
1/2 teaspoon ground cinnamon
1/2 teaspoon vanilla extract
3 medium tart apples, thinly sliced
1/4 cup fat-free caramel ice cream topping
1/4 cup chopped unsalted dry roasted peanuts

Steps:

  • In a large bowl, cream butter and sugars until light and fluffy. Beat in the egg, oil, corn syrup and vanilla. Combine the flours, baking powder, salt and cinnamon; gradually add to creamed mixture and mix well., Press dough onto a 14-in. pizza pan coated with cooking spray. Bake at 350° for 12-15 minutes or until lightly browned. Cool on a wire rack., In a small bowl, beat the cream cheese, brown sugar, cinnamon and vanilla until smooth. Spread over crust. Arrange apples over the top. Drizzle with caramel topping; sprinkle with peanuts. Serve immediately.,

1/2 cup plus 2 tablespoons packed brown sugar
1/3 cup corn syrup
2 tablespoons butter or margarine
1/3 cup whipping cream
1 teaspoon rum extract or vanilla
2 medium cooking apples, thinly sliced
1 tablespoon lemon juice
1/2 cup granulated sugar
2 teaspoons ground cinnamon
1 teaspoon ground nutmeg
1 package (3 oz) cream cheese, softened
1 egg
1 teaspoon vanilla
1 package (17.3 oz) frozen puff pastry, thawed
1 cup chopped nuts, toasted

Steps:

  • Heat oven to 400°F. Line 2 cookie sheets with foil or cooking parchment paper. In 1-quart saucepan, heat brown sugar, corn syrup and butter to boiling over medium heat, stirring occasionally. Cook 5 to 7 minutes, stirring constantly, until thickened; remove from heat. Cool about 30 minutes. Stir in whipping cream and rum extract.
  • In medium bowl, mix apples and lemon juice. Stir in granulated sugar, cinnamon and nutmeg.
  • In small bowl, beat cream cheese with electric mixer on medium speed until fluffy. Beat in egg and vanilla on medium speed until blended.
  • Roll each sheet of pastry into 10-inch square on foil-lined cookie sheet. Cut each pastry square into 10-inch circle. Place scraps in center; roll into pastry.
  • Spread half of cream cheese mixture over each pastry round. Arrange apple slices on cream cheese. Sprinkle with nuts. Drizzle about 1/4 cup caramel syrup over each pizza.
  • Bake 25 to 30 minutes or until puffy and golden brown. Pour remaining caramel syrup over hot pizzas. Serve warm.

Add sugar, then beat on medium speed until fluffy and light in color. Beat in egg and vanilla. Scrape down the sides as needed. In a medium bowl, whisk together flour, salt, baking powder, baking soda, and cinnamon. With the mixer running on low speed, slowly add dry ingredients to wet ingredients. Once completely combined, cover dough tightly and chill in the refrigerator for 30 minutes and up to 1 day. Without chilling, cookie dough will spread over sides of pan.
  • Meanwhile, preheat oven to 300°F (149°C). Toast the walnuts for 10 minutes on a lined baking sheet. Set aside to cool.
  • Turn oven up to 350°F (177°C). Generously grease a 12-inch pizza pan. Remove chilled cookie dough from refrigerator and press onto pan to form a flat circle. Leave a 2-inch space from the edge. Bake for 18-20 minutes or until edges are very lightly browned. Allow crust to cool completely before decorating.

  • For the cookie, beat butter and sugar until light and fluffy. Add egg to combine and then molasses. (Tip: spray your measuring cup with non-stick spray before measuring your molasses, it will help it slide right out!)
  • With mixer off, add in flour, baking soda, cinnamon, ginger, cloves, and salt. Give those ingredients a little whisk together and then turn your mixer on and mix until everything is well incorporated.
  • I suggest chilling dough for about 30 minutes to make it easier to roll out. Scrape dough onto a piece of parchment, or a silicone baking mat, or a piece of plastic wrap. Form into a ball and press into a circle. Place another sheet of parchment or plastic over the dough and then roll into a circle about 10-ish inches in diameter. If desired, sprinkle coarse sugar around the outside inch of your dough and lightly press in. Chill your circle for 30-60 minutes.
  • Preheat oven to 350 degrees. Place dough circle on jumbo baking sheet or large pizza pan. It will spread a couple inches larger as it bakes. Bake for about 15 minutes and then keep an eye on it! All ovens are different and you will want to pull your dough out when it looks set around the edges but just a tad under-done in the center.
