Provided by Food Network

Time 45m

Yield 6 Servings

Number Of Ingredients 15

1 Pound Lean Ground Beef
3/4 Cup Finely Chopped Onion
1/3 Cup Seasoned Dry Breadcrumbs
1/4 Cup Jack Daniels® Honey Smokehouse Barbecue Sauce
1 Egg, lightly beaten
2 Teaspoons Chili Powder
3/4 Teaspoon Salt
1 Package Ore-Ida® Steam n' Mash Cut Russet Potatoes
2/3 Cup Canned Evaporated Milk
1 Tablespoon Butter
1 Tablespoon Chopped Fresh Flat-Leaf Parsley
1 Teaspoon Garlic Powder
1 Cup Cooked Bacon Crumbles
1/4 Cup Canned Crispy Fried Onions
2/3 Cup Shredded Mexican-style Cheese Blend

Steps:

  • 1.Preheat oven to 375°F. Coat 9x9 baking dish with nonstick cooking spray. In a large bowl, combine beef, onion, breadcrumbs, Barbecue Sauce, egg, chili powder and salt until well mixed. Gently press into bottom of baking dish.
  • 2.Bake uncovered for 20 to 25 minutes, or until cooked through. Remove from oven and carefully pour off any excess fat if needed. Adjust oven temperature to broil and place oven rack 6 to 8 inches from heat source.
  • 3.Meanwhile, microwave Potatoes according to package instructions. In a large bowl, mix together hot Potatoes, milk, butter, parsley and garlic, and mash with a potato masher until smooth. For a smoother consistency, mix with an electric mixer to desired consistency. Stir in bacon and fried onions. Spread evenly on top of beef mixture and sprinkle with cheese.
  • 4.Broil for 3 to 5 minutes, or until cheese is lightly browned. Serve hot with additional Barbecue Sauce if desired.

COWBOY POTATOES

My family loves spicy food. This is my version of a recipe I found in a Marlboro Man Cookbook several years ago. It's been a keeper ever since.

Provided by Dawn Whitted

Categories     Potatoes

Time 50m

Number Of Ingredients 11

2 lb russet potatoes
1 large yellow onions, quartered and sliced
2 clove garlic, minced
1/2 c pickled jalepeno rings, sliced or diced
3 Tbsp pickled jalepeno juice
1 c bbq sauce, your favorite
Tbsp butter, unsalted
pinch salt and pepper
1 1/4 Tbsp grill seasoning blend, (montreal steak)
1 gallon baggie
heavy duty foil

Steps:

  • 1. Wash (5-6 medium) potatoes and remove any bad spots. Slice them into wedges the size of steak fries. cut onion in half then half again and slice.
  • 2. Combine potatoes, onion, minced garlic, jalepeno rings, jalepeno juice, BBQ sauce and grill seasoning in baggie. Let marinade for 30-40 minutes
  • 3. Tear a large (24x18) piece of heavy duty foil, spray with nonstick cooking spray, pour potato mixture onto foil and dollop butter all around potatoes, season to taste with salt and pepper.
  • 4. fold foil packet leaving a small air space for steam. place on campfire over hot coals or in preheated bbq grill cooking for 30-40 minutes turning halfway through cooking time. these are done when fork tender.

COWBOY POTATOES

My family's been making this tasty side dish for years, and I was surprised not to find something similar already here. Goes great with grilled meats, burgers, or sausages. Use any color of bell peppers you have, or a combo.

Categories     Potato

Time 25m

Yield 2 serving(s)

Number Of Ingredients 5

2 medium potatoes, scrubbed
2 tablespoons olive oil
1/4 cup onion, diced
1/4 cup bell pepper, diced
salt and pepper

Steps:

  • Peel potatoes, if desired (I like to leave the peel on) and cut into 1/2" dice.
  • Heat olive oil in large skillet (you can reduce the amount of oil if using a non-stick skillet). Add the potatoes, spreading into a single layer. Don't stir yet! Let them get golden brown on one side.
  • Stir the potatoes, and let them brown on another side. Stir again, adding the pepper and onion. Continue to cook until the onions and peppers are tender. If the potatoes are not done, reduce heat to low and cover the skillet until they're done.
  • Add salt and pepper to taste, and serve.

COWBOY MASHED POTATOES

Cowboy Mashed Potatoes image

These are soooo good! Do not be afraid of the jalapeno, they do not end up at all spicy. (in fact, I often add more then one!) You will never go back to boring mashed potatoes again! I got this recipe from allrecipes, and was shocked that it has not been posted here.
