Ever wonder what to do with that can of corned beef in your pantry? Try this oldie but goody from my aunts collection. Always well received. Great as a sandwich spread too! Serve it up at your next get together and watch it disappear. :)

1 c canned corn beef, broken apart
3/4 c shredded cheddar cheese
1 c each - mayonnaise & sour cream
1/2 medium onion, chopped fine
1 Tbsp dill weed - fresh or dried
1/2 tsp season salt

Steps:

  • 1. Combine everything in a medium bowl, until well blended. Cover and chill until serving. I sprinkle the top with dill weed. Serve with assorted party bread or bagel chips.

  • Combine all ingredients. Chill until serving time.

2 cups mayonnaise
2 cups sour cream
1 medium onion, finely chopped
2 tablespoons dill weed
1 teaspoon seasoned salt
2 cups diced cooked corned beef
Onion bagels, split and cut into wedges or snack rye bread

Steps:

  • In a large bowl, combine the mayonnaise, sour cream, onion, dill, seasoned salt and corned beef. Cover and refrigerate until serving. Serve with bagel wedges or rye bread.

2 cups sour cream
2 cups mayonnaise
1/3 cup minced fresh parsley
2 tablespoons finely chopped onion

Assorted crackers or vegetables

Steps:

  • Crumble corned beef into a large bowl. In a small bowl, combine the sour cream, mayonnaise, parsley, onion, dill and seasoned salt. Pour over beef; toss to coat. Serve with crackers or vegetables.

4 large carrots, peeled and cut into matchstick pieces
10 baby red potatoes, quartered
1 onion, peeled and cut into bite-sized pieces
4 cups water
1 (4 pound) corned beef brisket with spice packet
6 ounces beer
½ head cabbage, coarsely chopped

Steps:

  • Place the carrots, potatoes, and onion into the bottom of a slow cooker, pour in the water, and place the brisket on top of the vegetables. Pour the beer over the brisket. Sprinkle on the spices from the packet, cover, and set the cooker on High.
  • Cook the brisket for about 8 hours. An hour before serving, stir in the cabbage and cook for 1 more hour.
