PIZZA CANDY CANE CRESCENT

Pizza Candy Cane Crescent image

Look again: this savory candy cane-shaped appetizer is filled with all the fixings of a pepperoni pizza. A sweet basil bow is the final touch.

Provided by Food Network Kitchen

Categories     appetizer

Time 25m

Yield 6 to 8 servings

Number Of Ingredients 6

One 8-ounce tube refrigerated rolled crescent dough
1/3 cup prepared pizza sauce, plus more for dipping
1/2 cup shredded mozzarella
24 slices pepperoni
2 tablespoons sesame seeds
2 large fresh basil leaves

Steps:

  • Preheat the oven to 400 degrees F. Unroll the crescent dough and separate the triangles along the perforated lines. Cut the triangles in half lengthwise so that you have 16 triangles.
  • Overlap 2 pieces of parchment to make a 24-inch-long piece. Arrange the crescent triangles lengthwise in a long row on top of the parchment, with the pointy ends upright and the flat ends overlapping just slightly (the row should be as long as the parchment paper). Gently press the overlapping pieces of dough together so to seal.
  • Spread the pizza sauce over the thickest part of the strip of dough (about 1 1/2-inches). Sprinkle the cheese over the sauce and top with a layer of pepperoni.
  • Fold the pointy ends of the dough over top of the pepperoni tucking them under the dough to enclose the filling. Gently curve the top end of the dough to the left to make a candy cane shape that is the length of the back of a baking sheet. Transfer the parchment onto the back of a baking sheet. Sprinkle the sesame seeds on top of the dough. Bake until the dough is golden brown and the cheese is melted, 8 to 10 minutes. Tuck the basil leaves into the candy cane to make a bow. Serve with more sauce for dipping.

Time 3h15m

Yield 6 servings

Number Of Ingredients 21

4 large eggs, separated
1/2 cup plus 1/3 cup granulated sugar
2 tablespoons red food coloring
1 teaspoon vanilla extract
2/3 cup all-purpose flour
1/4 cup cocoa powder
2 tablespoons powdered sugar
1/2 teaspoon baking powder
1/8 teaspoon baking soda
2 cups cream cheese
1/2 cup heavy cream
2 sheets gelatin, melted according to package instructions
1/2 teaspoon peppermint extract
1 cup powdered sugar, sifted
1/2 cup candy cane pieces
Powdered sugar, for dusting
White Chocolate and Peppermint Cream, recipe follows
Candy canes, for garnish
1 cup heavy cream
3/4 cup white chocolate chips
1 teaspoon peppermint extract

Steps:

  • For the red velvet cake: Line a half sheet pan with parchment paper and preheat the oven to 325 degrees F.
  • Place the egg whites in a bowl with 1/2 cup of the granulated sugar and whisk using an electric hand mixer until stiff peaks form, 8 to 10 minutes.
  • In a separate bowl, mix the egg yolks and remaining 1/3 cup granulated sugar. Add the food coloring, vanilla and 3 tablespoons water and mix. Combine the egg white mixture with the egg yolk mixture.
  • To a separate bowl, add the flour, cocoa powder, powdered sugar, baking powder and baking soda and mix. Sift the flour mixture onto the egg mixture, folding it in gently; avoid overmixing it. Fold until all the ingredients are just combined.
  • Spread the mixture onto the prepared half sheet pan, making it as level and even as possible. Bake until a cake tester inserted in the middle comes out clean, 15 to 20 minutes.
  • Once out of the oven, roll the cake with the aid of the parchment paper while it is still warm. Otherwise, it will break when it is cold. Store it in the refrigerator rolled until you are ready to frost and roll it again.
  • For the filling: Add the cream cheese, heavy cream, melted gelatin and peppermint extract to the bowl of a stand mixer and beat until soft peaks. Add the powdered sugar and candy cane pieces. Whip again to stiff peak stage. For a more stable filling, the mixture can be refrigerated for 24 hours; however, it can also be used right away.
  • Unroll the red velvet cake roll, keeping it on the parchment paper, and spread the filling on as evenly as possible. Roll it up, using the parchment paper to help you again. Freeze for 1 hour.
  • For the decorations: Cut the roll in half and trim the ends of both pieces so they are neat. Dust with powdered sugar, then decorate with the White Chocolate and Peppermint Cream and top with candy canes.
  • Add two-thirds of the cream to a small saucepan and place over medium-high heat. Heat until it begins to steam but does not boil, 2 to 3 minutes.
  • Place the white chocolate chips in a heatproof bowl and pour the hot cream on top. Allow to stand for a couple of minutes, then stir until smooth. Add the remaining cream and the peppermint extract and whisk to combine. Cover the mixture and place in the refrigerator to cool completely and for the flavors to infuse, about 2 hours.
  • Whisk with an electric hand mixer until soft peaks form, 4 to 5 minutes. Transfer to a piping bag and use to decorate the candy cane rolls.

  • Heat oven to 375°F. Line large cookie sheet with cooking parchment paper; spray generously with cooking spray. Unroll dough; separate into 8 triangles. Cut each triangle in half lengthwise. On cookie sheet, place crescent triangles lengthwise in long row, pointing same direction, with edges overlapping slightly on cookie sheet. Press overlapping edges together to help seal, but leave triangle points free.
  • In small bowl, beat cream cheese and 2 tablespoons of the granulated sugar with spoon until well blended. Spread cream cheese mixture in 2 1/2-inch wide strip lengthwise on widest part of dough, leaving 1/2-inch edge. In small bowl, toss raspberries and preserves; place on top of cream cheese layer.
  • Fold over tips of dough to enclose filling; pinch ends of dough on edge to attach. Gently picking up top end of dough, curve one end of strip to form top of cane. Brush dough with melted butter; sprinkle remaining 1 teaspoon granulated sugar over top.
  • Bake 16 to 20 minutes or until golden brown. Cool 5 minutes on cookie sheet. Use spatula to carefully help slide Danish from parchment to serving platter, loosening edges with spatula first, if needed. In small bowl, mix powdered sugar and 1/2 teaspoon of the milk until well blended. If too thick to drizzle, add additional drops of milk. Drizzle with fork over top. Serve warm.

  • Place yeast and sugar into stand mixer then add warm water and gently stir. Let sit until yeast has doubled, about 10 minutes. In a medium bowl, mix melted butter and warm milk. Add butter and milk mixture to yeast mixture with the dough hook attachment on low speed then add sugar and egg mixing until combined. In a large bowl, stir together the flour and salt. Add 2 cups of flour mixture to the mixer at a time scraping sides of bowl, continuing to add remaining flour until the dough starts to clean sides of mixing bowl. Kneed dough on low speed for 7 minutes. Place dough onto a floured counter and dived dough in half. Place one half of the dough back in the mixing bowl and add 6-8 drops of red food coloring. kneed dough until the dough is solid red (in my case pink :( ) and you see no streaks of red. Place dough into a large bowl that has been sprayed with cooking spray, spray another bowl and place the non-colored dough in this bowl. Cover each with a damp cloth and let rise in a war
  • Remove each dough from the bowl and place onto a floured counter top. With a floured rolling pin, roll each dough into an about 7×9.5 inch rectangle, about 1/4 inch in thickness. Spread softened butter over entire surface of each dough (half a stick each). In a medium mixing bowl, stir together the brown sugar, sugar and cinnamon. Sprinkle evenly over both buttered doughs. Using a pizza cutter or sharp knife carefully cut 14 1 inch wide strips from each dough. Working with one strip at a time fold the strip in half and pinch the edges to seal (you are trying to enclose the filling). Repeat with remaining strips. You should now have 12 white and 12 red ropes. If you want to make small candy canes cut each rope in half. Pinch the ends together to seal.
  • Take one red and white white rope and pinch the tops together. Twist one rope around the other and seal the ends together. Place on baking pan and shape the long twist into a candy cane. Repeat with remaining twist. Sprinkle the cinnamon sugar that fell onto the counter all over the candy canes.
