CANDIED SWEET POTATOES
A delicious, sweet version of candied sweet potatoes.

Steps:
- Preheat oven to 400 degrees F (200 degrees C). Grease a 9x13 inch baking dish.
- Bring a large pot of water to a boil. Add potatoes and boil until slightly underdone, about 15 minutes. Drain, cool and peel.
- In a large saucepan over medium heat, combine margarine, brown sugar, 2 cups marshmallows, cinnamon and nutmeg. Cook, stirring occasionally, until marshmallows are melted.
- Stir potatoes into marshmallow sauce. While stirring mash about half of the potatoes, and break the others into bite-sized chunks. Transfer to prepared dish.
- Bake in preheated oven for 15 minutes. Remove from oven and cover top evenly with remaining marshmallows. Return to oven and bake until marshmallows are golden brown.

- Preheat the oven to 350 degrees F (175 degrees C). Spray a casserole dish with nonstick cooking spray.
- Place sweet potatoes into the prepared dish. Layer apples on top, followed by pineapple with can juices.
- Bake in the preheated oven until potatoes are soft, 30 to 45 minutes.

CANDIED SWEET POTATOES
Steps:
- Peel and slice sweet potatoes. Put in a large pot of lightly salted water. Bring to a boil. Boil 5 minutes, drain and cool. Put sweet potatoes into a 2 quart casserole, dot with the butter. Mix sugar with next 8 ingredients and mix well. Sprinkle over sweet potatoes. Pour orange juice and lemon juice over sweet potatoes. Cover with the sliced oranges. Bake in a preheated 350-degree oven for 45 minutes to 1 hour.
CANDIED SWEET POTATOES, WITH EASY DIABETIC VERSION

- 1. Preheat oven to 350 degrees. Prepare a shallow casserole dish with non stick spray, set aside.
- 2. In a covered pan, steam the potatoes in a small amount of water, just until the skins can easily be removed. Peel and cut in halves or quarters; set aside.
- 3. To make the GLAZE : Combine the brown sugar, orange juice and butter in a saucepan and cook over medium heat for 5 to 8 minutes until clear. Place potatoes in a prepared (non stick spray) casserole dish, then pour glaze over all and bake at 350 degrees for 45 minutes. Baste Potatoes every 15 to 20 minutes.
- 4. HINT FOR SUGAR FREE VERSION: Skip the above glaze recipe and use any sugar free maple syrup found at your super market. Sprinkle potatoes with fresh squeezed orange juice and pour the syrup over the potatoes. Bake as you would the other.

- In a covered large saucepan, cook sweet potatoes in enough lightly salted boiling water to cover, for 25-30 minutes, or until very tender.
- Meanwhile, preheat oven to 350.
- Lightly coat a 1 1/2-2 quart oval baking dish, or a 2 quart square baking dish with non-stick cooking spray. Set aside.
- Drain sweet potatoes, and return to saucepan.
- Using an electric mixer or potato masher, mash sweet potatoes until smooth.
- Stir in 1/4 cup brown sugar or brown sugar substitute, eggs, nutmeg, and cinnamon.
- Add milk, and stir to combine.
- Pour into the prepared baking dish.
- In a small bowl, combine pecans, 1/4 cup brown sugar or brown sugar substitute, flour, and melted butter. Sprinkle over sweet potatoes.
- Bake uncovered, about 30 minutes, or until sweet potatoes are heated through, and topping is golden brown.
- Serve warm.

- Place the sweet potatoes in a Dutch oven and cover with water. - Combine butter, vanilla extract, and salt in a bowl. Mix brown sugar and white sugar together in another bowl.

When Fred Harvey opened his first Harvey House restaurant in 1876 on the railway line in Topeka, Kan., his idea was radical for the time: Railroad passengers would be fed good food in a pleasant environment. His concept was so successful that it spawned 84 restaurants, a Hollywood movie and an official cookbook. And it was in "The Harvey House Cookbook" that we found this excellent recipe for sweet potatoes candied with confectioners' sugar and butter. It is best served warm rather than piping hot, which makes it convenient for big meals like Thanksgiving. Bake it before you roast your turkey, then reheat it briefly just before serving.
